EGGLESS BANANA BREAD
My family's favorite banana bread. We never have eggs around, so this recipe makes it easy to enjoy this tasty treat just about any time.

Steps:
- Preheat the oven to 350 degrees.
- Mix the first five (dry) ingredients together in a large mixing bowl.
- In a separate bowl, mash the bananas well.
- Stir the butter or margarine, vanilla extract and applesauce into the bananas.
- Add the banana mixture into the mixing bowl with the dry ingredients.
- Mix gently by hand, just enough to form a thick, clumpy batter. If the mixture seems too dry, add more mashed banana or applesauce to adjust the consistency.
- Fold in chocolate chips and/or walnuts, if using.
- Pour batter into greased loaf pan and bake for 45 minutes or until the bread is a deep golden brown and a knife inserted in the center comes out clean.
QUICK AND EASY EGGLESS BANANA BREAD
This eggless banana bread recipe uses milk/buttermilk as substitute. You can also use soy milk if you like. This egg free banana bread is very quick, fuss free yet nutritious, and makes a simple and wonderful snack for the family. It can be eaten plain or added with fruits, nuts, seeds and chocolate chips. Just add 1/2 cup of the nuts, etc to the mixture last, just before pouring the mixture into the loaf pan. Enjoy!

- 1. Preheat oven to 350ºF/180ºC.
- 2. In a mixing bowl, combine mashed bananas with butter.
- 3. Add in milk, vanilla, and mix.
- 4. Add in sugar, baking soda, salt, and mix.
- 5. Add flour last and mix until just combined.
- 6. Pour mixture into a greased and floured bread loaf pan.
- 7. Bake for 1 hour or until a wooden pick comes out clean.
- 8. Allow to cool before removing from pan.

EGG-FREE BANANA BREAD
Primarily a vegetarian, I like to bake cakes and breads without using eggs and am always on the look out for good eggless recipes. During one of my Googling sessions, I stumbled upon an egg-free banana bread/cake recipe. However, when I tried it out the bread came out hard and sank badly. So I improvised and here's my banana bread recipe for those of you who can't eat or don't like to eat eggs. I hope you enjoy it!

Steps:
- Peel and mash bananas well. Set aside.
- Sift all the dry ingredients together at least 2 times.
- Add oil, vanilla, sugar to the mashed bananas and mix well.
- Add the banana mixture to the flour mix.
- Slowly add milk to make a batter of thick consistency.
- Add nuts at this point. Mix together gently.
- Pour banana bread batter in a greased loaf pan and bake in a preheated oven at 150 deg.C for 35-40 mins or until toothpick comes out clean from the center.
- Cool for 5-10 minutes in the loaf pan, remove to a cooling rack to cool properly and serve slices.
VEGAN BANANA BREAD

- Heat oven to 200C/180C fan/gas 6. Mash 3 large black peeled bananas with a fork, then mix well with 75g vegetable or sunflower oil and 100g brown sugar.
- Add 225g plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon or mixed spice, and combine well. Add 50g dried fruit or nuts, if using.
- Bake in an oiled, lined 2lb loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
- Bake for another 20 minutes, or until a skewer comes out clean.
- Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.

BEST BANANA BREAD - NO EGG, NO MILK, GLUTEN FREE
This is very easy to make, contains no egg or milk. I use gluten free all purpose flour and it comes out totally fabulous! The recipe is adjusted from 'My favourite Banana Bread Recipe - it has No Eggs' I found on the web! The recipe is only enough for a petite loaf pan (about 5x3 inches). Double the recipe for a standard size pan.

- Lightly grease an petite loaf pan.

- Preheat oven to 350°. In a large bowl, whisk the first 5 ingredients. In another bowl, whisk the bananas, yogurt, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips. , Fill 12 greased or foil-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 15-20 minutes. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
