This is a cake my mom used to make when I was growing up. It's very moist and delicious all by itself, but even yummier with a dollop of whipped cream!

2 cups sugar
1 1/2 teaspoons baking soda
1/4 teaspoon baking powder
1 1/2 teaspoons salt
3/4 teaspoon cinnamon
1/2 teaspoon clove
1/2 teaspoon allspice
1/2 cup vegetable oil
1/2 cup water
1 1/2 cups unsweetened applesauce
2 eggs

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 9x13 baking dish.
  • Combine all ingredients; pour in prepared pan.
  • Bake 60-65 minutes or until done.

1 cup (2 sticks) unsalted butter, plus more for pan
2 1/4 cups super fine sugar
2 large eggs
2 1/2 cups unsweetened applesauce, preferably homemade
1 3/4 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon ground ginger
Pinch of salt
2 teaspoons baking powder
1 teaspoon pure vanilla extract
2 tablespoons Calvados or brandy
6 ounces bittersweet chocolate, chopped into 1/2-inch pieces
1 tablespoon confectioners' sugar
Cider Glaze, Apple Chips, and Crystallized Ginger
2 cups whipped cream (optional)

Steps:

  • Heat oven to 325 degrees. Brush a 9 1/2-inch kugel-hopf ring mold or Bundt pan with soft butter. Coat with 1/4 cup superfine sugar; tap out excess sugar; set mold aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the butter and remaining 2 cups superfine sugar. Beat on medium speed, scraping down the sides with a rubber spatula, until mixture is light and fluffy, about 5 minutes. Add the eggs, and beat 2 to 3 minutes more. Fold in the applesauce, being careful not to overmix.
  • In a large bawl, sift together the flour, cocoa powder, cinnamon, nutmeg, ginger, salt, and baking powder.
  • Fold the flour mixture into applesauce mixture. Add the vanilla, Calvados, and chocolate pieces; mix until just combined. Pour batter into prepared pan; use a rubber spatula to clean bowl and smooth top.
  • Bake until cake pulls away from sides of pan and is springy to the touch or until a cake tester inserted into center comes out clean, about 2 hours. Transfer to a wire tack to cool slightly; turn out cake; let cool completely.
  • Sift confectioners' sugar over cooled cake. Pour cider glaze over top of cake, allowing to drip down sides. Garnish with apple chips and crystallized ginger. Serve cake with whipped cream, if desired.

Steps:

  • Preheat oven to 350 degrees. Coat a 10-inch angel-food-cake pan with cooking spray; set aside. Make crumb topping: Stir together 4 tablespoons butter, the dark-brown sugar, oats, 3/4 teaspoon cinnamon, and 1/4 teaspoon salt until smooth. Stir in 1/2 cup pecans; set aside.
  • Make batter: Sift flour, baking soda, nutmeg, cloves, and remaining 2 teaspoons cinnamon and 3/4 teaspoon salt; set aside. Put remaining 8 tablespoons (1 stick) butter, the granulated sugar, and light-brown sugar in the bowl of an electric mixer fitted with the paddle attachment. Cream on medium speed until smooth, about 3 minutes. Mix in the eggs, one at a time. Reduce speed to low; mix in applesauce and then flour mixture. Stir in remaining cup nuts by hand.
  • Pour batter into oiled pan; sprinkle reserved crumb topping over batter. Lay apples on top, tucking some into batter.
  • Bake until a cake tester inserted near center comes out clean, about 1 hour and 10 minutes. Let cool in pan on a wire rack.

Steps:

  • Preheat oven to 375 degrees F ( 195 degrees C ). Grease cookie sheets.
  • In a large bowl, cream the shortening, sugar, and egg. Stir in the applesauce. Sift together the flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Then mix in the raisins and nuts.
  • Drop by teaspoonfuls onto the prepared cookie sheets. Bake 10 to 12 minutes in the preheated oven. Remove to cool on wire racks.

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

1/2 cup unsalted butter, room temperature
2 cups brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups flour
2 teaspoons baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon nutmeg
2 cups applesauce
1/2 cup raisins
1 cup chopped walnuts
Powdered sugar, optional

Steps:

  • Preheat oven to 350 degrees F.
  • In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
  • In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
