I got this recipe off of the back of a generic butterscotch chip wrapper. I added some ingredients (I don't like plain butterscotch cookies) and they turned out really good!

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup softened butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1 1/2 cups uncooked quick oats
1 1/2 cups butterscotch chips
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350.
  • Grease a 9x13 inch cake pan.
  • Combine flour, baking soda, baking powder, and salt in a small bowl.
  • Set aside.
  • In a large bowl, combine butter, sugars, and eggs.
  • Beat until creamy.
  • Blend in four mixture and oats.
  • Pour in 3/4 cups of butterscotch chips and 3/4 cups chocolate chips.
  • Spread batter into cake pan.
  • Sprinkle remaining chocolate chips on top.
  • Bake for about 30 minutes, or until golden brown.
  • Let cool and cut into bars.

1 (1 lb) can crushed pineapple
1/2 cup sugar
1 tablespoon cornstarch
1 dash salt
1 tablespoon butter
2 teaspoons grated orange peel
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups brown sugar (firmly packed)
2 cups uncooked quick-cooking oats
1 cup butter

Steps:

  • FILLING: Pour pineapple into saucepan; boil rapidly for 10 minutes to reduce syrup. Blend sugar, cornstarch and salt well; stir into hot pineapple. Cook, stirring constantly until clear and thickened. Remove from heat, stir in butter and orange peel; cool.
  • Prepare Oat Crumbles; spoon HALF into a 9 x 13 x 2 inch pan; pack down firmly. Cover evenly with pineapple mixture. Sprinkle remaining Oat Crumbles over top; press down lightly. Bake in a preheated 375°F oven 20 to 25 minutes until lightly browned. Cool before cutting. Makes about 2 1/2 dozens bars 1 1/2 x 2 inches.
  • OAT CRUMBLES: Sift 2 cups all purpose flour with 1 teaspoon baking powder and 1/2 teaspoon salt. Add 1 1/2 cups brown sugar (firmly packed), 2 cups uncooked quick cooking oats, and 1 cup butter; blend until crumbly.

1/2 C. Butter
1 C. Brown Sugar (firmly packed)
2 C. Quick Oats
1 t. Baking Powder
1 t. Vanilla
1/4 t. Salt
1/2 C. Chocolate Chips (Semi-Sweet)

Steps:

  • In a medium size saucepan melt Butter and Sugar stirring in Oats, Baking Powder, Vanilla and Salt. Then blend Thoroughly. Turn into the (prepared) buttered pan, spreading evenly over the bottom. Bake 20 to 25 minutes or until edges are brown. Sprinkle Chocolate Chips on top shortly after you take it out of the oven. And when they melt, spread evenly over the top. Cut into squares when cooled.

1 cup brown sugar
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups flour
3 cups old fashioned oats
2 cups butterscotch chips

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together butter, brown sugar and sugar until fluffy.
  • Add eggs and vanilla and mix until combined.
  • Mix in cinnamon, salt, baking soda, flour and oatmeal and mix until well combined.
  • Fold in butterscotch chips.
  • Spray a half baking sheet (18"x13"x1") with nonstick cooking spray and spread dough in pan.
  • Dough will be sticky, so use a rubber spatula and spread as evenly as possible.
  • Bake for 20-22 minutes, or until the edges are golden brown.
  • Let cool and cut into bars.

2 sticks unsalted butter, at room temperature, cut into pea-sized pieces, plus more for pan
2 cups all-purpose flour
1 1/2 cups old fashioned rolled oats
3/4 cup firmly packed brown sugar
1 teaspoon ground cinnamon
1 (11-ounce) bag butterscotch chips
1 (8-ounce) package cream cheese, at room temperature
1 (14-ounce) can sweetened condensed milk
1 lemon, zested and juiced
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Drape a 9 by 13-inch pan with overlapping pieces of aluminum foil, creating handles for easy removal. Butter the paper, and reserve.
  • In a food processor add the flour, oats and brown sugar and pulse to combine. Add the 2 sticks of butter, the cinnamon and the butterscotch chips. Pulse, pulse, pulse until the mixture forms clumps when pressed between your fingers. Transfer the mixture to a large bowl. Press half of the mixture into the bottom of the prepared pan in an even layer, reserve the other half. Bake in the preheated oven just until slightly golden and set, about 12 to 15 minutes. Remove from the oven and cool completely.
  • Beat together the cream cheese, condensed milk, lemon zest and juice and vanilla in an electric stand mixer fitted with a paddle, or with an electric hand mixer until no lumps of cream cheese remain. Spread evenly over the baked and cooled oatmeal mixture. Sprinkle the remaining half of the oatmeal mixture over the cream cheese. Bake until the top is golden, about 40 minutes.
  • Cool and chill before cutting. Run a knife around the edge of the pan, and using the foil handles, transfer the bars to a cutting board. Cut into 2-inch squares with a sharp knife and serve.
  • Call yourself a superstar!!!
  • Cook's Note: For a delicious and healthy variation of this recipe, try replacing the butterscotch chips with tasty dried cranberries.

This was one of my mom's recipes, and one of the most popular dessert/cookie/snacks she made. It's ultra-simple and just about impossible to mess up unless you just flat-out burn it to a crisp.

1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
2 egg yolks
1 cup flour
1 cup instant oats
1 (12 ounce) package chocolate chips
1 cup chopped nuts (optional)

Steps:

  • Cream butter and sugars.
  • Add vanilla and egg yolks and beat until light and fluffy.
  • Add flour and oats and blend well.
  • Spread in a greased 7"x11" pan and bake at 325 for 25 minutes or until the top is just starting to brown.
  • Meanwhile, melt the chocolate chips, ideally in the top of a double boiler.
  • Remove the pan from the oven, let sit for five minutes, and spread melted chocolate on top. Sprinkle with nuts.
  • Let cool until chocolate is completely set, then cut into squares and stand back.

3 cups regular oatmeal, uncooked
1 (12 ounce) package butterscotch chips

Steps:

  • Preheat oven to 350°F.

  • Combine flour, soda, salt and cinnamon.
  • In a large mixing bowl cream butter, then add sugar and mix until fluffy.
  • Add eggs and vanilla and beat well.
  • Gradually add flour mixture.
  • Stir in oatmeal and the butterscotch chips.
  • Spread in prepared pan and bake for 22 to 28 minutes.
  • If they seem to be getting to brown on the edges, and are still quite gooey in the center lower the oven temp to 325°F for the last 10 minutes or so.
