Scandinavian Shrimp Salad image

An entree that transports you to Stockholm; shrimp with hard-boiled eggs, cornichons, fennel, soft buttery lettuce, and boiled baby potatoes. Bonus: Use the same pan to cook the shrimp and the potatoes.

12 ounces baby potatoes, halved (quartered, if large)
Kosher salt and freshly ground pepper
1/4 cup cornichons, sliced lengthwise, plus 2 tablespoons pickling liquid
1 teaspoon Dijon mustard
Pinch of sugar
1/3 cup extra-virgin olive oil
1 small fennel bulb, thinly sliced, plus 1/4 cup chopped fronds
1 pound large shrimp, peeled and deveined
1 head butter lettuce (8 ounces), leaves separated
4 hard-cooked eggs, halved

Steps:

  • Place potatoes in a medium saucepan; add enough water to cover by 1 inch. Add 2 tablespoons salt. Bring to a boil, then reduce heat to medium-high and cook until potatoes are easily pierced with the tip of a knife, 15 to 20 minutes. Meanwhile, whisk together pickling liquid, mustard, and sugar. Whisk in oil; season with salt and pepper. Stir in fennel fronds. Transfer potatoes to a bowl with a slotted spoon, and toss with 2 tablespoons dressing.
  • Return water to a boil; add shrimp. Remove from heat and let stand, stirring occasionally, until shrimp are bright pink and opaque, 2 to 3 minutes. With a slotted spoon, transfer to an ice-water bath until cool. Drain well. Toss lettuce and sliced fennel with 2 tablespoons dressing; arrange on a platter. Top with potatoes, shrimp, cornichons, and eggs. Drizzle with remaining dressing; serve.

1/3 cup mayonnaise
1/4 cup chopped fresh dill
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
1 pound cooked peeled medium-size shrimp
1 cup thinly sliced halved English hothouse cucumber
1/3 cup sliced cornichons (gherkins)
8 butter lettuce leaves

Steps:

  • Whisk mayonnaise, chopped dill, Dijon mustard, and lemon juice in medium bowl. Add shrimp, cucumber, and cornichons and toss to coat. Season generously with salt and pepper.
  • Nestle 2 lettuce leaves on each of 4 plates. Mound shrimp salad in leaves, dividing equally, and serve.

4 flour tortillas (or sandwich wraps)
1 onion, sliced (or roasted onion flakes.)
1 tomatoes
iceberg lettuce, sliced (or torn)
mustard
ketchup
butter (for frying)
1/3 cup mayonnaise
2/3 cup sweet cucumber relish
5 tablespoons creme fraiche
5 tablespoons mayonnaise
400 g shrimp, cooked and hand peeled
2 teaspoons Dijon mustard
2 teaspoons ketchup
2 teaspoons paprika
2 1/4 lbs potatoes
3/4 cup milk
1 ounce butter
2 teaspoons salt
1 teaspoon white pepper
1 teaspoon caster sugar
1/4 teaspoon nutmeg

Steps:

  • Mix together the mayonnaise dressing or the shrimp dressing.
  • Boil the potatoes until tender. Mash, mixing in the other ingredients for the mashed potatoes.
  • Fry the hotdogs in the butter.
  • To assemble: Put two spoons of the mashed potatoes on tortilla. Add shrimp salad or the mayonnaise dressing, as well as lettuce and onions. Top with a hot dog, ketchup and mustard. Roll it together.

1 cup peeled and deveined cooked shrimp (100-150 per pound)
4 hard-boiled large eggs, sliced
1 small cucumber, chopped
1 small red onion, thinly sliced

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely., For dressing, in a small bowl, combine mayonnaise, sugar, dill, mustard, salt and pepper. In a large bowl, combine shrimp, eggs, cucumber and macaroni. Add dressing; gently toss to coat. Refrigerate until serving. Top with red onions and additional dill if desired.

1 pound peeled, deveined medium shrimp
1/2 cup thinly sliced red onion
3 tablespoons fresh lemon juice, plus 2 teaspoons grated lemon zest
2 tablespoons rinsed capers
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 cup thinly sliced English cucumber
2 packed tablespoons chopped fresh dill
1/2 cup Neufchatel
4 slices pumpernickel sandwich bread, lightly toasted
4 hard-cooked eggs, sliced

Steps:

  • Add shrimp to a pot of salted boiling water. Return just to a boil, then transfer shrimp to an ice-water bath. Drain well; slice in half lengthwise.
  • Soak onion in cold water 10 minutes; drain.
  • Whisk together lemon juice and zest, capers, and oil. Season with salt and pepper. Toss with shrimp, onion, cucumber, and dill to combine.
  • Spread 2 tablespoons Neufchatel onto each bread slice; top with sliced egg and shrimp mixture.

  • If your shrimps are uncooked and unpeeled,proceed to cook them and peel them. I have used cooked han-peeled shrimps in brine, so mine came lightly salted and ready to use.
  • Combine the mayonnaise, creme fraiche, lemon juice, sriracha, 3 tbsp chopped dill and a pinch of salt in a bowl. Stir in the fish roe. Add this mixture to your shrimps and mix to combine.
  • Set a skillet on medium heat and melt half of the butter. Place the bread slices in the skillet and toast them on both sides for 2-3 minutes. Increase heat if necessary. Use remaining butter before adding the rest of the slices.
  • Let the toasted bread cool for a couple of minutes, then top with shrimp salad. Decorate with extra dill and a small lemon slice.
