SCANDINAVIAN CUCUMBERS
My mom used to make this in the summertime with cucumbers fresh from her garden. It became a family favorite. I use my mandoline to slice the veggies very thin. I hope you enjoy this cool summertime salad as much as we do! Cooking time is chilling time.

DANISH CUCUMBER SALAD - AGURKESALAT

Steps:
- Wash and peel cucumbers. Cut cucumbers into very thin slices and place in medium bowl, salt lightly, and let stand for 15 minutes.
- Pour off all liquid from cucumbers. In a small bowl mix together the water, vinegar, sugar and pepper. Thinly sliced vidalia or walla walla onions can be placed in the salad also according to taste and this is optional. Pour mixture over the cucumbers and place in the refrigerator for one hour or until chilled. Drain off liquid again or serve with a slotted spoon.

SWEDISH PRESSED CUCUMBER SALAD
Steps:
- Place the cucumber slices in a colander and sprinkle with the salt. Cover with a plate and place something heavy on top to press them (a large can works well). Chill for 1 hour. Pour off the juices and put the cucumbers in a bowl. Combine the vinegar and sugar and pour over the top. Add pepper to taste. Chill for 1 hour.
