Grilled Sweet Potatoes with Scallions image

Scallions and a healthy dose of fresh thyme make these grilled sweet potatoes particularly savory.

3 sweet potatoes
3 tablespoons olive oil
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
Salt and black pepper
2 tablespoons butter
2 scallions, thinly sliced

Steps:

  • Heat grill to medium. Peel sweet potatoes, and cut lengthwise into 1/2-inch-thick slices. Toss potatoes in a large bowl with oil, thyme, and cayenne pepper; season with salt and black pepper.
  • Grill potatoes, turning frequently, until tender when pierced with the tip of a paring knife, 20 to 30 minutes.
  • Return grilled potatoes to bowl; add butter, and break potatoes into large pieces with the side of a spoon. Toss in scallions, and serve.

4 large sweet potatoes
8 scallions
2/3 cup extra-virgin olive oil
2 teaspoons dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon balsamic vinegar
1 teaspoon honey
Kosher salt and freshly ground pepper
1/4 cup roughly chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F. Bake thepotatoes until they can be just piercedwith a knife, about 45 minutes. Cut intolarge chunks.
  • Preheat a grill to high. Brush the potatoes and scallions with 1/3 cup olive oil and arrange on the grill. Grill the potatoes until just tender, about 5 minutes per side. Grill the scallions until softened and marked,about 1 minute per side. Remove the scallions and potatoes from the grill; cut the scallions into small pieces.
  • In a large bowl, whisk the remaining 1/3 cup olive oil, the mustard, vinegars and honey; season with salt and pepper. Add the potatoes, scallions and parsley and toss until the potatoes are well coated.

MISO-SCALLION ROASTED SWEET POTATOES RECIPE

Savory and salty miso adds a backbone of deep flavor to these incredibly sweet roasted sweet potatoes.

3 pounds (1.4kg) sweet potatoes, peeled and cut into 1/2-inch chunks
4 tablespoons (60ml) vegetable or canola oil, divided
Kosher salt and freshly ground black pepper
2 tablespoons (30ml) miso (we used white miso during testing, but you can use any type)
1 tablespoon (15ml) mirin
1/2 tablespoon (8g) sugar
2 tablespoons (30ml) water
2 scallions, white and light-green parts only, thinly sliced
Shichimi togarashi, for garnish (optional; see note)

Steps:

  • Place sweet potatoes in a large saucepan and cover with cold water. Heat water to 160°F (70°C) as registered on an instant-read thermometer. Cover and set aside for 1 hour.
  • Adjust oven racks to upper-middle and lower-middle positions and preheat oven to 400°F (200°C). Drain sweet potatoes and transfer to a large bowl. Toss with 3 tablespoons (45ml) oil and season to taste with salt and pepper. Spread sweet potatoes on 2 rimmed baking sheets and roast until bottom sides are browned, about 30 minutes. Carefully flip potatoes with a thin spatula and roast until second side is browned and potatoes are tender, about 20 minutes longer. Keep potatoes warm.
  • When ready to serve, in a large mixing bowl, whisk together miso, mirin, sugar, water, and remaining 1 tablespoon (15ml) oil until smooth. Add potatoes and gently toss to coat. Fold in scallions and transfer to a serving bowl. Sprinkle with shichimi togarashi, if using, and serve.

4 sweet potatoes, about the same size
8 scallions, root end trimmed
2 cups sour cream
1/4 cup finely chopped fresh flat-leaf parsley
2 tablespoons Ranch Rub, recipe follows
1 teaspoon celery seeds
Kosher salt and freshly ground black pepper
1/2 cup buttermilk powder (found in the baking aisle)
1 tablespoon dried parsley
2 teaspoons dried chives
2 teaspoons dried dill
2 teaspoons garlic powder
1 teaspoon onion flakes
1 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Pierce the sweet potatoes multiple times with a paring knife or a fork. Place the potatoes along the outer edges of the indirect heat side of the grill. Cover the grill and bake until the potatoes are completely tender, about 1 hour. (If the potatoes are ready before you are ready to serve them, you can wrap them in aluminum foil and they will stay hot for up to 1 hour.)
  • Meanwhile, make the dip: Cook the scallions over direct heat, turning once, until charred on both sides, 2 to 3 minutes. When cool enough to handle, finely slice and add to a bowl. Mix in the sour cream, parsley, Ranch Rub and celery seeds. Set aside until ready to serve.
  • To serve: Split the sweet potatoes down the middle with a knife and spoon some of the ranch sour cream over, letting it melt down into the potato. Season with additional salt and pepper if desired.
  • (Alternatively, you can bake the potatoes in a 400 degrees F oven for 1 hour.)
  • Combine all the ingredients in a medium bowl and mix well. Makes about 3/4 cup.

2 sweet potatoes, halved lengthwise
2 teaspoons olive oil
2 tablespoons coconut oil
¼ cup diced sweet onion
1 tablespoon minced fresh ginger root
1 tablespoon white (shiro) miso
1 tablespoon soy sauce
2 tablespoons brown sugar
1 scallion, sliced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with foil and spray with cooking spray.
  • Brush cut sides of sweet potatoes with olive oil. Lay cut side-down onto the baking sheet. Brush skins with olive oil.
  • Roast in the preheated oven until cooked through, about 35 minutes.
  • Meanwhile, prepare miso-scallion butter. Warm coconut oil in a small saucepan over medium heat. Add onion and ginger and cook for 3 to 4 minutes. Remove from heat and add miso, pressing miso against the saucepan with the back of a spoon to soften. Add soy sauce, brown sugar, and scallion.
  • Heat over low, stirring constantly, until sugar is completely melted and mixture is warmed through, about 3 minutes. Do not boil.
  • Remove sweet potatoes from the oven and flip over. Cut a slit into the sweet potato flesh and spoon miso butter over the top.

3 sweet potatoes (medium or large)
3 -4 tablespoons butter (split)
1 -2 tablespoon olive oil
1/3 cup milk
salt (I start with 1t)
pepper
sugar (a touch, if needed) or maple syrup (a touch, if needed)
1 cup thinly sliced onion
1 -2 garlic clove, minced
1 shallot, sliced (optional)
2 tablespoons balsamic vinegar
6 slices cooked bacon, crumbled
1/2 cup asiago cheese, grated
2 green onions, chopped

Steps:

  • Cook sweet potatoes at 450 for about 1 hour or until soft.
  • While potatoes are baking, CARAMELIZE ONIONS:.
  • Stirring occasionally, sautee onions, shallot and garlic in 1-2T butter and 1-2T olive oil over medium low heat for about 10-15 minutes or until onions are very soft. (Don't let the garlic burn or it will be very bitter.).
  • Add balsamic vinegar and scrape up any bits that may have formed from caramelized onions.
  • Set aside.
  • Carefully peel and mash baked sweet potatoes(we use a whisk).
  • After tasting, Add 2 tablespoons butter, milk, salt, pepper and sugar.
  • Taste and adjust ingredients.
  • Place sweet potatoes in an 8x8 casserole or a loaf pan and top with balsamic onions.
  • Bake, covered, at 350 for 15-20 minutes. (Increase bake time if casserole is coming from the fridge).
  • Top with crumbled bacon and asiago and bake uncovered for an additional 5-10 minutes.
  • Top with green onions and serve.
