TUNA PATTIES

Tuna Patties image

Simple dinner idea. We serve this with a veggie (usually broccoli or spinach) and either mac & cheese or fried potatoes. You can use cracker crumbs instead of breadcrumbs. It's just to soak up some moisture. The patties can be made earlier and set in the fridge. I've never frozen them, so you'll need to do your own experimentation for that! You can cook these in a George Foreman grill, or in a skillet or frying pan. We like them fried!

Provided by Angel Stowe

Categories     One Dish Meal

Time 30m

Yield 6-8 patties, 3-4 serving(s)

Number Of Ingredients 6

2 (5 -6 ounce) cans tuna in water, well drained (NOT oil)
1 egg
1/2 cup breadcrumbs
1/4 cup onion, cut as small as preferred
salt & pepper
oil, & butter to cook in (optional)

Steps:

  • Mix all ingredients.
  • Use more or less breadcrumbs, as needed, to soak up the moisture from the tuna and egg until it is the consistency of a "patty" (I'm sorry I can not explain this better!).
  • Make into patties 1/2 inch thick.
  • Sprinkle both sides of patties with pepper, and pat it inches.
  • Warm up oil and butter in a pan over medium heat, enough so it's hot enough to cook but not burn. You know how your own burners work.
  • Fry until golden brown, and flip to cook the other side.

EASY TUNA PATTIES

Easy Tuna Patties image

We love the texture of the canned albacore tuna the best for this recipe. Try to avoid the canned tunas which are very mushy. The amount of egg will vary depending on the dryness of your tuna and the absorption of the bread crumbs or panko. If you are unsure, start with 2 eggs, and if the mixture seems too dry to easily form into patties, add a 3rd egg.For keto, use crushed pork rinds or almond flour instead of panko and regular bread crumbs.

Provided by Diane

Categories     Side Dish     Snack

Time 30m

Number Of Ingredients 14

3 cans albacore tuna (, (5 ounce-142g cans) drained)
2-3 large eggs (*see note above)
zest of 1 medium lemon
1 Tablespoon lemon juice
1/2 cup panko ( or regular bread crumbs (keto version with crushed pork rinds or almond flour))
3 Tablespoons grated parmesan cheese
1 stalk celery (, finely chopped)
3 Tablespoons minced onion
1/2 teaspoon garlic powder
1/2 teaspoon dried herbs ((oregano, dill, basil, thyme or any combo))
1/4 teaspoon Kosher salt (, or to taste)
fresh cracked black pepper
2 Tablespoons Olive oil (, for frying (or more if needed))
(optional for serving) tarter sauce, mayo, ranch, lemon slices

Steps:

  • In a bowl, combine the eggs, lemon zest, lemon juice, panko or bread crumbs, parmesan cheese, celery, onion, garlic powder, dried herbs, salt and pepper. Stir the mixture to make sure everything is combined. Gently fold in the tuna until just combined.
  • Shape the tuna mixture into patties about 2-inches (5cm) wide x 1/2-inch thick (1.25cm). If patties are too soft to handle, chill them for at about 1 hour or until firm. This will make them easier to handle during frying.
  • Heat oil in skillet over medium heat. Fry both sides of the tuna patties until they are golden brown, about 5 minutes per side.Serve with sauces and/or lemon slices.

  • Potato Chips and French Fries. These are classic side dishes that pair well with tuna patties. However, you should offer a healthier version of fries or chips if you serve them with your tuna patties.
  • Corn on the Cob. Many people have a love/hate relationship with corn, especially when it comes to corn on the cob. Some people find that it is too sweet, while others may crave this sweetness.
  • Rice Pilaf. Rice pilaf is another classic side dish to serve with tuna patties, especially if you want something heavy to eat. Rice pilaf is typically made with white rice, butter, oil, and plenty of spices.
  • Spicy Coleslaw. This side dish is gaining in popularity when you can find it on restaurant menus or in grocery stores. This is partly because spicy coleslaw is an excellent way to add flavor to your tuna patties without having too much fat.
  • Hush Puppies. Hushpuppies are also a popular side dish that tastes delicious along with your tuna patties. What makes them so good is the tasty blend of ingredients, including cornmeal and spices.
  • Baked Beans and Barbecue Sauce. Baked beans and barbecue sauce make excellent side dishes when paired with tuna patties. This is because both ingredients go well with savory dishes, such as sandwiches and burgers.
  • Potatoes Au Gratin. Another classic side dish to serve with tuna patties is potatoes au gratin, made with thyme, garlic, cream cheese, butter or heavy cream, and Parmesan.
