SPAGHETTI WITH SAVOY CABBAGE AND BREADCRUMBS



Spaghetti with Savoy Cabbage and Breadcrumbs image

The butter does a nice job of coaxing the sweetness from the cabbage. Serve a platter of this pasta family-style, with grated cheese; top with poached or fried eggs; or scatter with crumbled bacon.

Coarse salt and freshly ground pepper
8 ounces spaghetti or angel hair pasta
5 tablespoons unsalted butter
1 garlic clove, very thinly sliced or minced
1/2 cup fresh (not dried) breadcrumbs (from a rustic loaf)
9 cups thinly sliced Savoy cabbage (from 1 medium head)
1/2 cup water
3 tablespoons heavy cream
1/4 cup finely grated Parmesan cheese (1 ounce), plus more for garnish

Steps:

  • Bring a pot of salted water to a boil. Cook pasta until al dente, about 11 minutes. Drain, reserving 1/2 cup cooking liquid.
  • Meanwhile, melt 2 tablespoons butter in a medium skillet over medium heat. Cook garlic until fragrant, about 1 minute. Stir in breadcrumbs. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring, until breadcrumbs are golden brown, 4 to 5 minutes.
  • Melt remaining 3 tablespoons butter in a large high-sided skillet over medium-high heat. Add cabbage, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss to coat. Cook, stirring, until slightly wilted, 3 to 4 minutes. Add 1/2 cup water. Cook, covered, until tender, about 4 minutes. Uncover, and let any water in the skillet evaporate. Stir in cream. Cook until sauce is reduced and thick enough to coat cabbage, about 1 minute. Season with salt and pepper.
  • Add pasta and reserved 1/2 cup cooking liquid to cabbage. Cook for 1 minute. Stir in cheese. Transfer to a platter. Sprinkle breadcrumb mixture over top, and garnish with more cheese.

12 ounces rigatoni
2 tablespoons extra-virgin olive oil
4 ounces Canadian bacon, chopped
1 small onion, sliced
1/2 head Savoy cabbage, roughly chopped (about 10 cups)
Freshly ground pepper
1/4 cup chopped fresh parsley
4 ounces fontina cheese, cut into small cubes
1/2 cup grated Parmesan cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Add the Canadian bacon and cook until the edges begin to crisp, about 2 minutes. Add the onion and cabbage, season with 1/2 teaspoon salt and a few grinds of pepper and toss to coat. Cook until the vegetables begin to brown and soften, about 3 minutes. Remove 1 cup cooking water from the pasta pot and add to the skillet; bring to a simmer and cook until the cabbage is just tender and the sauce is reduced by about half, 8 to 10 minutes.
  • Drain the pasta, reserving 1 cup cooking water. Add the pasta and 1/2 cup of the reserved cooking water to the skillet and increase the heat to high; toss to coat, adding more cooking water if the pasta is too dry (it should be very saucy). Stir in the parsley and remove from the heat. Sprinkle with the fontina and parmesan and toss.

12 ounces perciatelli or spaghetti
1/3 cup olive oil
1 teaspoon or more of garlic paste
1 pound savoy cabbage, thinly sliced
1/2 teaspoon red pepper flakes
3/4 cup chicken broth
1 cup ricotta cheese
1 cup grated parmesan cheese
1/4 cup chopped italian parsley

Steps:

  • Bring salted water to a boil and cook pasta for 10 minutes or until al dente or according to package directions. Meanwhile heat oil in a large skillet. Add garlic paste, cabbage, and red pepper and saute for a moment to coat the cabbage. Add the broth. Cover and simmer until vegetables are tender, about 10 minutes. While this is cooking whisk ricotta and Parmesan cheese together Drain pasta, reserving some of cooking liquid to whisk into ricotta cheese mixture to loosen it. Add cooked cabbage, and cheeses to pasta and toss. Garnish with parsley.

1/2 teaspoon vegetable oil
3 (6- to 8-oz) confit duck legs
2 large onions, halved lengthwise, then sliced (1/4 inch thick; 4 cups)
1 teaspoon salt
1 (1 1/2-lb) piece Savoy cabbage, cored and cut into 2-inch pieces (8 cups)
1/4 cup dry white wine
1 1/2 cups reduced-sodium chicken broth (12 fl oz)
1 lb dried campanelle (bell-shaped pasta) or garganelli
1 tablespoon unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
1/2 teaspoon black pepper

Steps:

  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then sear duck legs, starting skin sides down and turning over once, until skin is golden and some of fat is rendered, 6 to 8 minutes total. Transfer to a cutting board, reserving skillet. When duck legs are cool enough to handle, remove skin and scrape off and reserve any visible fat, then cut skin into roughly 1/4-inch pieces. Return skin and fat to skillet and cook over moderate heat, stirring occasionally and pressing down on larger pieces, until fat is rendered and cracklings are golden and crisp, about 5 minutes. Transfer cracklings with a slotted spoon to paper towels to drain.
  • While cracklings cook, pull duck meat from legs into roughly 1/4-inch-thick strips, discarding bones and any gristle.
  • Reserve 2 tablespoons fat in skillet, discarding remainder, then cook onions with 1/2 teaspoon salt over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. Add cabbage and 1/2 teaspoon salt and cook, stirring and turning occasionally with tongs, until cabbage is slightly wilted, about 5 minutes. Add wine and cook, stirring, until evaporated, about 2 minutes. Add chicken broth and simmer, covered, stirring occasionally, until cabbage is very tender, 25 to 30 minutes.
  • While cabbage simmers, cook pasta in a 6- to 8-quart pot of boiling salted water until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • Transfer cabbage mixture to pasta pot along with butter and shredded duck and cook over moderate heat, stirring, until butter is melted and duck is heated through. Stir in pasta, parsley, and pepper until combined. (If pasta looks dry, stir in some of cooking water.) Season with salt and serve cracklings on the side (for sprinkling over pasta).

Steps:

  • Steam or boil the cabbage for 3-4 mins until just tender, then drain well. If doing ahead of time, cool under running water and chill until ready to stir-fry.
  • Heat the oil in a wok or large frying pan. Add the garlic and seeds and cook for 1 min until beginning to turn golden. Toss in the cabbage and stir-fry over the highest heat for 3-4 mins. Season with a little sea salt and serve.

400g linguine or spaghetti
1 small Savoy cabbage , cut into 1cm-wide slices
4 tbsp olive oil
5 garlic cloves , thickly sliced
50g can anchovy in olive oil
large pinch crushed chilli flakes
1-2 tbsp olive oil
50g fresh white breadcrumb
4 tbsp finely chopped parsley
2 tbsp freshly grated pecorino or Parmesan

Steps:

  • Cook the linguine in a large pan of boiling, salted water following pack instructions, adding the cabbage for the final 4 mins of cooking time.
  • Meanwhile, heat the oil in a very small saucepan and gently cook the garlic. As soon as it starts to turn golden, lift out with a fork and set aside - it's very important that the garlic does not brown or it will spoil the flavour of the oil.
  • Add the anchovies and their oil, and cook for 1-2 mins, mashing with a fork. Add about 150ml of hot water (take a ladle or two from the pasta pan) and simmer very gently until the pasta is ready.
  • To make the crumbs, heat the oil in a large pan and cook the bread and parsley, stirring frequently, for 5 mins until crisp and golden. Mix in the cheese.
  • Drain the pasta quite lightly and return to the pan. Add the anchovy sauce, garlic, chilli and plenty of black pepper. Toss well to combine, then divide between bowls, scatter with the hot crumbs and serve.

2 large handfuls fresh chunky breadcrumbs
3 tbsp olive oil
3 garlic cloves , finely chopped
200g short pasta , such as twists, farfalle or penne
1 medium onion , chopped
125ml white wine
zest ½ lemon
140g crème fraîche
½ small head Savoy cabbage , very thinly sliced

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a bowl, mix the breadcrumbs with half the oil and 1 garlic clove, and season well. Spread out on a large baking tray and bake for 8 mins, until crisp and golden. Remove and set aside.
  • Cook the pasta in a large pan of boiling water until al dente. Meanwhile, pour the remaining oil into a frying pan, add the onion and remaining garlic, season and cook for about 4 mins until golden, then add the wine and lemon zest. Reduce for a few mins, then add the crème fraîche. Remove from heat but keep warm.
  • Add the cabbage to the pasta water for the last 3 mins of cooking time. Drain and return to the pan, add the creamy sauce to the pasta and toss together. Divide between 2 bowls and top with the crumbs.

1 teaspoon olive oil
2 -3 cloves garlic, slivered
1/2 onion, sliced
2 small zucchini, chopped
6 roma tomatoes, chopped
fresh cracked pepper
salt, to taste
1/2 cup fresh basil leaf, cut or torn (to taste)

Steps:

  • Heat oil in a skillet over medium-high heat.
  • Stir-fry garlic for 1 minute.
  • Remove garlic and drain on paper towels.
  • Add onion to the hot pan and cook until it softens, then add zucchini.
  • Cook and stir 4-5 minutes, then add in the tomatoes.
  • Cook together until juicies and ingredients have blended together, about 5 minutes, stirring often.
  • Add in salt, pepper, basil and reserved garlic.
  • Serve over hot cooked pasta.

1 tablespoon oil
1 medium onion, chopped
4 garlic cloves, minced
2 medium carrots, diced
4 cups savoy cabbage, shredded
1 tablespoon fresh thyme
3/4 teaspoon salt
2 1/2 cups broth
1/3 cup fresh flat-leaf parsley, chopped
2 teaspoons balsamic vinegar
1/2 teaspoon pepper
1 cup Fontina cheese, shredded

Steps:

  • Bring large pot of lightly salted water to a boil for cooking the pasta.
  • Meanwhile, measure out 1/4 cup beans and mash with a fork in small bowl; set mashed and whole beans aside.
  • In large nonstick skillet, heat oil over medium-high heat. Add onion and cook, stirring often, until softened, 2 to 3 minutes. Add garlic, carrots, cabbage, thyme and salt and cook, stirring, until cabbage has wilted, 3 to 4 minutes.
  • Stir in broth and reserved mashed and whole beans; bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until cabbage is tender, 15 to 20 minutes. Stir in parsley, vinegar and pepper.
  • Shortly before sauce is ready, add pasta to boiling water. Cook, stirring often, until just tender, 8 to 10 minutes. Drain well and place in large serving bowl. Add cabbage mixture and cheese and toss to coat. Serve immediately.
