Our simple savoury pancake recipe is great with a sprinkling of strong cheddar and chunks of ham for an easy supper or weekend brunch

Number Of Ingredients 6

200g plain flour
2 large eggs , beaten
500ml milk
oil , for frying
130g ham , cut into small chunks
150g cheddar cheese, grated

Steps:

  • Using electric beaters or a hand whisk, combine the flour, eggs and milk with a big pinch of salt in a large bowl.
  • Heat a 20cm crêpe pan until very hot, then pour a little oil into the pan. Swirl the pan so the oil creates an even covering. Ladle a spoonful of the pancake mixture into the pan and tip the pan so the mixture fills the pan in an even layer. Cook for 30 seconds, then flip and scatter with some cheese and ham, and cook until the cheese is melting. Add a crack of black pepper and fold. Keep on a plate covered with foil in a warm oven while you make the remaining pancakes.

1 1/2 cup (375 mL) all-purpose or whole-wheat flour, sifted
2 Tbsp. (30 mL) sugar
3 egg
2 cups (500 mL) milk
2 Tbsp. (30 mL) melted butter

Steps:

  • Mix all the ingredients for the sauce in a small saucepan and heat until the butter and the juice are melted. Keep warm.In a bowl, mix the remaining ingredients and whisk well.Pour approximately 1/2 cup (125 mL) of the batter in a Silipro non-stick skillet.Cook on medium heat for approximately 1 min.Flip the pancake and cook for 30 sec. more.Repeat 8 times.Serve pancakes with sauce.

How do you make pancakes nice and fluffy but still really moist? Add mashed potatoes! The orange maple syrup combines the flavours of orange, apricot and maple, to create a sweet, flavourful thin sauce. Do not skip beating the egg whites, as this is what makes the pancakes fluffy.------ Recipe created by me for RSC #9!

2 eggs, yolk and white separated
3/4 cup white potato, cooked and mashed to form 3/4 cup unflavoured
mashed potatoes
1 1/4 cups skim milk
1/2 teaspoon vanilla
1 1/3 cups flour
1 teaspoon cinnamon
2 1/2 tablespoons brown sugar
2 1/2 teaspoons baking powder
3/4 cup orange juice
1/4 teaspoon orange zest
6 dried apricots, finely chopped
1 pinch cinnamon
3 tablespoons pancake syrup
3 tablespoons water
1 1/2 teaspoons Splenda sugar substitute or 1 1/2 teaspoons sugar
1/3 teaspoon brown sugar (optional)

Steps:

  • For the MASHED POTATO: peel and dice two medium-small white potatoes.
  • Place in a medium saucepan on high heat and add enough water to cover.
  • Once potatoes are boiling reduce heat and simmer for 15 minutes or till potatoes are done.
  • Mash potatoes with potato masher and enough milk to make them creamy.
  • For the ORANGE MAPLE SYRUP: place chopped apricots, orange zest, orange juice, and pinch cinnamon in a small saucepan, heat on medium heat till boiling.
  • Turn off heat, add Splenda, brown sugar, and water and let stand for 15 minutes so apricots can continue to soften.
  • In a food processor or blender, blend apricot orange juice mixture till as smooth as you can get it.
  • Stir in pancake syrup. Serve warm.
  • For the PANCAKES: Separate two eggs, place the yolks in a large bowl and the whites in a medium bowl.
  • Beat the egg whites with a hand mixer until white, fluffy and stiff, set aside.
  • Add ¾ cup mashed potato to the egg yolks and whisk with a wire whisk till smooth.
  • Add milk and vanilla, and whisk till smooth.
  • Add flour, cinnamon, brown sugar and baking powder to the wet ingredients, stir until just mixed.
  • Fold in beaten egg whites.
  • On a greased or cooking sprayed griddle or pan, cook pancakes using ¼ cup per pancake (batter will be quite thick); cook until bubbles start to appear and flip.

1 cup fresh or frozen cranberries
2/3 cup orange juice
1/2 cup sugar

PANCAKES:
2 cups biscuit/baking mix
2 tablespoons sugar
2 teaspoons baking powder

1 large egg yolk
1 cup evaporated milk
2 tablespoons orange juice
1 teaspoon grated orange zest

Orange zest strips, optional

Steps:

  • In a small saucepan, bring the cranberries, orange juice and sugar to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Cool slightly. With a slotted spoon, remove 1/4 cup cranberries; set aside., In a blender, process cranberry mixture until smooth. Transfer to a small bowl; stir in maple syrup and reserved cranberries. Keep warm., In a large bowl, combine the biscuit mix, sugar and baking powder. In another bowl, whisk the eggs, egg yolk, milk, orange juice and zest. Stir into dry ingredients just until blended. Fold in chopped cranberries., Drop batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until second side is golden brown. Serve with syrup. Garnish with orange zest strips if desired.

Sweetened with pure maple syrup instead of refined sugar, this easy homemade cranberry sauce recipe is a healthier spin on the favorite Thanksgiving condiment. We love the subtle seasonal flavors that the orange and cinnamon impart.

3 cups fresh or frozen cranberries
1/3 cup pure maple syrup + more if needed
1 tablespoon orange zest
1/2 cup fresh orange juice
1/2 cup water
Cinnamon stick

Steps:

  • Rinse the cranberries. Discard any mushy or underripe berries and stems.
  • Place a medium-sized saucepan over medium heat and add the cranberries, 1/3 cup pure maple syrup, orange zest, orange juice, water, and cinnamon stick. Cook, stirring occasionally, until the mixture comes to a boil. Continue boiling over medium heat until the berries burst and break down, forming a sauce, 15-20 minutes.
  • Taste for sweetness. If it's too tart, add more syrup - a tablespoon at a time - until the sauce tastes sweet enough for you.
  • Remove from the heat and let cool. Spoon into your serving container to serve or store in an airtight container, refrigerated, for 3-4 days. You can also freeze your cranberry sauce for up to 2 months - I do this every Thanksgiving! Just place the sauce in an airtight container or zipper freezer bag and transfer to the freezer. Move to the fridge to thaw about 24-48 hours before the big meal.

3/4 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon grated orange rind
1 egg whites or 1/4 cup egg substitute
1 1/2 tablespoons honey
2 tablespoons nonfat milk
1/4 cup orange juice, plus
2 tablespoons orange juice
1 teaspoon canola oil
3/4 cup part-skim ricotta cheese
1 1/2 teaspoons cornstarch
1 tablespoon grated orange rind
1/2 cup orange juice
2 -4 tablespoons honey
1 teaspoon butter
1 small fresh orange, divided into sections

Steps:

  • For the sauce, mix the cornstarch, orange rind, orange juice and honey in a small saucepan.
  • Bring the mixture to a boil over medium heat, stirring constantly until thickened.
  • Remove from heat and stir in the butter until melted.
  • Add orange sections to the sauce just before serving.
  • For the pancakes, combine the flour, baking powder and orange rind.
  • In a seperate bowl, stir together the egg white or egg substitute, honey, milk, orange juice and oil.
  • Stir wet ingredients into the dry just until moistened.
  • On a well seasoned griddle that has been sprayed with non-stick cooking spray bake 3 pancakes; using 1/3 of pancake mixture for each.
  • To assemble, spread 1/2 the ricotta cheese on top of first and second pancake topping with small amount of warm orange syrup.
  • Top stack with final pancake and pour remaining warm sauce over all.
  • Cut into fourths and serve.

CRANBERRY-ORANGE-MAPLE SAUCE

1 cup white sugar
1 1/2 cups water
1 12-ounce bag fresh cranberries
Grated rind of one orange
Juice of one orange
1/4 cup maple syrup
1 tablespoon coarsely chopped candied ginger

Steps:

  • Mix sugar with water and bring to boil. Simmer over moderately high heat for about 5 minutes, or until liquid becomes slightly syrupy.
  • Add cranberries and simmer an additional 5 minutes, or until berries begin to pop. Add orange rind, juice, maple syrup and ginger and simmer another 2 to 3 minutes.
  • Pour sauce into hot, sterilized jars. Sauce will keep in refrigerator two to three weeks. It may be frozen for longer storage.
