SAVORY CHEESE MUFFINS WITH BACON AND CHIVES
A delicious savory muffin - great for breakfast on the go, or serve with soup or salad. You can also substitute minced ham for the bacon, if you like. Note to World Tour participants - this recipe is typical of the fresh cheese and farm fresh ingredients found in Wisconsin - the MidWestern U.S. region.

Steps:
- Cook bacon until crisp.
- Cool and crumble.
- Set aside.
- Preheat oven to 350.
- Prepare muffin tin by spraying with vegetable oil spray.
- Melt butter over medium heat in a small skillet.
- Remove from heat and add chives.
- Cool to room temperature.
- In a medium bowl combine eggs and milk using a whisk.
- Add butter/chive mixture, cheese and crumbled bacon.
- In a small bowl, combine flour, baking powder, salt and sugar.
- Stir to mix.
- Add to egg mixture, stirring only until blended thorougly.
- Spoon mixture into prepared muffin cups, filling about 2/3 full.
- (An ice cream scooper is a great tool for this purpose.) Bake 20- 25 minutes, or until muffin tops just begin to brown.
- Remove from oven and remove muffins from tin.
- Cool them on a wire rack.

SAVORY BACON, CHEDDAR AND SCALLION MUFFINS

Steps:
- Preheat the oven to 350 degrees F. Generously grease a 12-cup muffin pan or a giant 6-cup muffin pan with butter.
- Cook the bacon in a medium skillet over medium heat, stirring occasionally, until browned and crisp, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
- Heat the 1 tablespoon butter in a large skillet over medium-high heat. Add the scallions and cook until slightly wilted, 2 to 3 minutes. Remove from heat and set aside.
- Whisk the egg, broth, milk, olive oil, sugar, mustard and salt in a large bowl. Gently stir in the flour and baking powder until evenly combined.
- Fold in the cheese, cooked scallions and cooked bacon.
- Divide the mixture among the muffin cups and bake until the muffins puff up, are golden around the edges and a toothpick inserted into the center comes out clean, about 20 minutes for a 12-cup muffin pan or 25 to 27 minutes for a giant 6-cup muffin pan.
- Let the muffins cool 5 minutes in the pan, then invert onto a wire a rack before serving.

- Heat oven to 350°F.
- Whisk pancake mix, water and 1/2 cup syrup just until blended. (Batter should still be slightly lumpy.)
- Spoon into 12 muffin pan cups sprayed with cooking spray; place on rimmed baking sheet.
- Top with Singles pieces, then bacon and eggs. (Muffin cups will be full.)
- Bake 16 to 18 min. or until centers are set and edges are lightly browned.

SAVOURY BACON AND EGG MUFFINS
Steps:
- Preheat oven at 200 deg C. Grease or line your muffin tins.
- Boil eggs for 7-10 minutes. Place eggs in cold water until cool enough to handle. Peel and cut into 2 crosswise.
- Place chopped bacon in a frying pan and fry until crisp, drain on kitchen napkin and set aside.
- Chop mostly the green part of the spring onions and set aside.
- In a bowl, mix together flour, baking powder, baking soda and sugar.
- In another bowl, beat together milk, salt, yoghurt, vegetable oil and one egg.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over mix the batter or the muffins will be tough. Lumps are ok.
- Fill your muffin tins 3/4 way up and push half a boiled into each, cover the top with some more batter.
- Brush the top with melted butter.
- Place in the oven and bake for 20 minutes until it is golden and a skewer inserted into it comes out clean.
- Bring out and place on a cooling rack, leave to rest for 5 minutes. Remove from tin.
- Serve your savoury bacon and egg muffins warm or cold with a drink e.g Iced tea, zobo drink, carrot/orange drink or coffee or Pap (akamu, ogi,).

- Heat the oven to 200C/180C fan/gas 4. Brush half the oil in an 8-hole muffin tin. Heat the remaining oil in a frying pan and add the broccoli, pepper and spring onions. Fry for 5 mins. Set aside to cool.
- Whisk the eggs with the milk, smoked paprika and half the cheese in a bowl. Add the cooked veg. Pour the egg mixture into the muffin holes and top each with the remaining cheese and a few chives, if you like. Bake for 15-17 mins or until golden brown and cooked through.
