ITALIAN STYLE RICE SALAD



Italian Style Rice Salad image

Healthy, tasty Italian styled Rice Salad. Vegetarian friendly as it is or you can add cooked pancetta, tuna or mozzarella in the last step to make it more of a main meal? Great served up as side dish or served up as a sharing BBQ salad.

Number Of Ingredients 21

200 grams Long Grain Rice (1 cup) (uncooked) (makes 600 grams (3 cups) once cookedCan use basmati rice instead)
310 mls Cold water ( 1 ¼ cup)
5 tbsp Olive oil
½ lemon (juice)
1 tbsp Italian Seasoning/ Dried Herbs (mix of Oregano, Thyme, Basil, Parsley, Sage, Red Pepper flakes)
2 tsp garlic puree (or 4 cloves minced)
8 Sundried Tomatoes (Chopped)
1 Orange Pepper (Diced)
½ Cucumber (Diced)
1 Red Onion (Diced)
100 gram Cherry or Plum Tomatoes (¾ cup) (quartered)
100 g Sweetcorn (¾ cup) (we used tinned)
60 g Green or/and Black Olives (½ cup)
4 tbsp Pine Nuts
3 tbsp Fresh Basil (chopped)
2 tbsp Fresh Parsley (chopped)
130 gram Cooked Diced Pancetta (fry in the Oil from sundried tomato jar )
or
1 tin Tuna (drained)
or
200 g Mozzarella (Balls or chopped )

Steps:

  • Cook rice before to give time for it to cool off. Follow instructions in notes below to make sure you cook the rice correctly. If adding Pancetta, cook that off in the sundried tomato oil and allow time to cool.
  • Make the dressing by mixing all the Italian Dressing ingredients together.
  • Put cooked rice in a mixing bowl and add all the chopped Italian Salad ingredients. Pour the dressing over and mix all in together.
  • Serve up in a large bowl or large plate with more fresh herbs.

I've always loved chilled rice salads in the summertime.I've combined the ingredients that I like to make it sweet, savory and crunchy. This goes great with grilled fish or meat kabobs.

2 1/2 c wild and long grain rice cooked
2/3 c chopped red onion
2/3 c chopped celery
1/2 c dried cranberries and golden raisins (combined)
1/2 c glazed pecan pieces
2/3 c fruity vinegrette (i use "naturally fresh pomagranite and mixed berry vinegrette)

Steps:

  • 1. Combine all ingredients making sure to evenly distribute.
  • 2. Chill for at least two hours before serving.
  • 3. Optional: Can also top salad with blue cheese crumbles

This is my favourite salad for potlucks and barbecues. Don't be turned off by the unusual combination of ingredients - the different flavours and textures make for a delicious, unique, and beautiful salad. The original recipe called for chicken, but I use cashews for a vegetarian dish that's great as a side or main. Almonds, sunflower seeds, or shrimp for those who eat seafood may also be added. This tastes even better on day 2, when the flavours have mingled and mellowed.

1 (6 ounce) box Uncle Bens wild rice, with seasonings (instead, I use 3/4-1 cup of mixed brown and wild rice and add a vegetarian bouillon cube while cook)
3 -4 green onions, sliced (with some of the green leafy part)
3 stalks celery, sliced
1 green pepper, chopped
1 bunch broccoli, separated into small floret pieces
1 cup fresh mushrooms, sliced
cashews
1/2 cup vegetable oil
3 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon curry powder (or more)

Steps:

  • Cook the rice according to product directions.
  • Prepare the dressing.
  • Mix the rice and vegetables together. Add the dressing and stir gently.
  • Refrigerate to allow the salad to marinate, stirring 2-3 times. I generally allow several hours for this step and never marinate for less than 1 hour.

This easy basic recipe for rice salad comes from Mark Bittman's How to Cook Everything Vegetarian. Turning it into an side dish for Japanese, Mexican, or Indian dinners is as simple as following one of the many variations.

3 to 4 cups cooked rice, cooled
1/4 cup chopped scallion
1 small or 1/2 large red or yellow bell pepper, cored, seeded, and chopped
1/2 cup chopped celery
1/2 cup chopped carrot
1/4 to 1/2 cup Vinaigrette, made with extra virgin olive oil and red wine vinegar, plus more as needed
1/2 cup chopped fresh parsley
Salt and freshly ground black pepper

Steps:

  • Put the rice and all the vegetables in a large bowl. Drizzle with vinaigrette and use two big forks to combine, fluffing the rice and tossing gently to separate the grains.
  • Stir in the parsley, taste, and adjust the seasoning or moisten with a little more dressing. Serve at room temperature or refrigerate for up to a day, bringing the salad back to room temperature before serving.
  • Variations:
  • Rice Salad, Japanese Style: Use brown or white short-grain rice. Halve the amount of celery and carrot and finely chop them or shred them on a grater. Add 1 cup cubed firm tofu (preferably baked). Instead of the vinaigrette, toss with 1/4 cup or so of Simple Miso Dipping Sauce (made by whisking together 6 tablespoons miso paste, 3/4 cup warm water or sake, 1 teaspoon sugar, 1 tablespoon mirin or honey, 1 tablespoon rice vinegar plus more to taste, and salt to taste). Instead of the parsley, crumble 2 sheets of nori over the rice salad and sprinkle with 2 tablespoons black or white sesame seeds.
  • Rice Salad, Mexican Style: Long-grain or medium-grain, white or brown, all work well here. When blending the vinaigrette, add 1 tablespoon chili powder and 2 tablespoons Mexican crema or mayonnaise. Instead of celery and carrot, add 1 cup chopped fresh tomato. Substitute chopped fresh cilantro for the parsley and, at the same time, add 2 chopped hard-cooked eggs and chopped jalapeño chiles if you like. Serve with lime wedges.
  • Rice Salad, Indian Style: Use brown or white basmati rice. When making the vinaigrette, use rice wine vinegar, replace the oil with coconut milk, and add 1 tablespoon curry powder, or more to taste. Instead of the bell pepper, celery, and carrot, add 1/2 cup each cubed cooked potato, cooked cauliflower florets, and green peas (cooked frozen are fine). Substitute cilantro for the parsley.
  • Citrus Rice Salad: Use any rice. Instead of red wine vinegar, make the vinaigrette with freshly squeezed citrus juice-choose from lemon, lime, orange, blood orange, tangerine, pink grapefruit, or a combination. Whatever you use, add 2 tablespoons of the grated zest and 1 tablespoon of sugar or honey to the blender. Do not include the scallion or the vegetables. (You might want to use a little less dressing.) Instead of the parsley, use mint if you like. A handful of chopped almonds or pecans make a nice addition.
  • Tomato Rice Salad: Use any kind of brown or white rice. When making the vinaigrette, eliminate the vinegar and add 1 medium tomato to the blender. Instead of the scallion and other vegetables, add 2 cups chopped fresh tomato (a mixture of heirloom varieties is nice).Instead of the parsley, use chopped fresh basil or mint, or 1/4 cup chopped fresh chives, chervil, dill, or about a tablespoon of fresh thyme leaves.

1 tablespoon butter
1 teaspoon chicken or 1/2 vegetable bouillon cube
1 cup uncooked long grain rice
2 tablespoons reduced-sodium soy sauce
1 teaspoon dried minced onion
1/2 teaspoon onion powder
1/4 teaspoon dried basil
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme

Steps:

  • In a large saucepan, combine the water, butter and bouillon. Bring to a boil. Add remaining ingredients. Reduce heat; cover and simmer for about 15 minutes or until liquid is absorbed and rice is tender.

1 onion
3 mushrooms
1/2 red pepper
1 tomato
1 x 10ml spoon oil
150g long grain rice
1 x 5ml spoon vegetable stock powder or cube
550ml boiling water
50g peas
1 x 10ml spoon curry powder
Chopping board
Knife
Sauce pan
Wooden Spoon
Measuring Spoon
Weighing Scales
Kettle
Measuring Jug

Steps:

  • Prepare the vegetables:
  • 1. Peel and chop the onion
  • 2. Slice the mushrooms
  • 3. Deseed and dice the red pepper
  • 4. Chop the tomato
  • Fry the onion in oil until soft.
  • Add the mushrooms and red pepper and cook for a further 2 minutes.
  • Stir in the rice.
  • Mix the stock powder with the water.
  • Add the stock, peas and curry powder to the rice mixture.
  • Simmer for 15 minutes, until the rice is tender.
  • Serve the rice in a bowl and sprinkle the chopped tomato on top.

200g basmati rice
1 tbsp sunflower oil
1 large onion , peeled and chopped
2 garlic cloves , peeled and sliced
1 thumb-sized piece of ginger , peeled and chopped
2 whole cloves
1 cinnamon stick
2 cardamom pods , cracked
1 ½ tsp medium curry powder
50g frozen pea
50g frozen sweetcorn
50g flaked almond (optional)
375ml stock (1 stock cube dissolved in 375ml boiling water)

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Rinse and soak the rice for 10 mins. Heat a large, ovenproof saucepan. Add the oil, then the onion, garlic and ginger. Cook on a low heat until the onion is soft. Add the cloves, cinnamon and cardamom pods and cook for a further 2 mins on a low heat. Add the curry powder and cook for a further 2 mins, then stir.
  • Drain the rice and add it to the saucepan. Stir so that the rice is coated in the oil and spices. Add the peas, sweetcorn and half the flaked almonds, if using. Pour over the stock and stir.
  • Cover the pan with a lid or with a sheet of foil, then cook in the oven for 15-20 mins. Remove from the oven, scatter with the remaining almonds, if using, and serve.
