Savory Oatmeal with a Basted Egg image

Yield Makes 1 hearty breakfast

Number Of Ingredients 5

1/2 cup steel-cut (not rolled) oats
1 egg
1 tablespoon olive oil
2 tablespoons shredded Emmentaler or Gruyère cheese
Salt and freshly ground pepper

Steps:

  • » In a small saucepan, bring 1 1/2 cups of water with a pinch of salt to a boil and stream in the oats. Reduce the heat to medium-low and simmer until the oats are soft, 30 to 45 minutes. Baste the egg while the oats are cooking.
  • » Remove the pan from the heat and stir in the olive oil and cheese. Top with the egg and season to taste with salt and pepper. Eat immediately.

I love savory oatmeal in the mornings. This recipe is from Quaker Oats. It calls for quick or old-fashioned oats, but I like steel-cut best.

1/2 cup quaker quick oats or 1/2 cup old fashioned oats
1 whole egg
2 slices turkey bacon, strips
3 tablespoons shaved parmesan cheese
1 tablespoon sliced scallion
1 tablespoon French-fried onions

Steps:

  • Prepare oatmeal as usual and set aside. Coat a small nonstick pan with cooking spray and turn on medium heat. Add bacon, cook until browned, and then remove. In the same pan, cook egg until the white is set and the yolk is still runny (about 3-4 minutes). Top oatmeal with the egg, bacon, parmesan cheese, scallions, fried onions, and salt & pepper.

  • Place oats and water in a microwave-safe bowl. Line microwave dish with paper towels to catch any spills. Microwave at a high setting (but not the highest, about 8/10 power setting) at one-minute intervals for a total of 3 minutes. (See note 1) If you want a softer texture, continue microwaving at 30-second intervals. Give the oats a little stir between intervals. When the oatmeal is done, stir in shredded cheese, a small pinch of salt, and pepper.
  • Heat a nonstick pan with 1/2 teaspoon of coconut oil over medium-high heat. Add vegetables and cook for 2 to 3 minutes, until they soften. Spoon vegetables over cooked oats. Reduce heat to medium.
