PARMESAN AND THYME CRACKERS

1/4 pound (1 stick) unsalted butter
3 ounces grated Parmesan
1 1/4 cups all-purpose flour
1/4 teaspoon kosher salt
1 teaspoon chopped fresh thyme leaves
1/2 teaspoon freshly ground black pepper

Steps:

  • Place the butter in the bowl of an electric mixer fitted with a paddle attachment and mix until creamy. Add the Parmesan, flour, salt, thyme and pepper and combine.
  • Dump the dough on a lightly floured board and roll into a 13-inch long log. Wrap the log in plastic wrap and place in the freezer for 30 minutes to harden.
  • Meanwhile, preheat the oven to 350 degrees F.
  • Cut the log crosswise into 1/4 to 1/2-inch thick slices. Place the slices on a sheet pan and bake for 22 minutes.

1 1/2 c. all-purpose flour
2 tbsp. Nonfat dry milk
1 tsp. fine salt
1 stick unsalted butter
1 1/2 c. coarsely grated cheese
Walnut-Parmesan Crackers
1/2 c. finely chopped walnuts
Gouda Crackers with Poppy and Sesame Seeds
2 tbsp. poppy seeds
1 tbsp. sesame seeds
1 tbsp. Kosher salt
1/2 tbsp. garlic powder
1/2 tbsp. onion powder
Chili-Cheddar Cornmeal Crackers
1/4 c. white cornmeal
2 tsp. chili powder

Steps:

  • In the bowl of a food processor, pulse flour, dry milk, and salt. Add butter and pulse until mixture resembles wet sand. Add cheese and pulse until combined. Drizzle in 4 to 6 tablespoons ice water, pulsing just until dough begins to come together.
  • Roll dough into an 8-inch-long log. Divide dough into 2 equal-size logs, wrap both tightly in plastic wrap, and refrigerate for at least 3 hours.
  • Preheat oven to 325 degrees F. Meanwhile, remove and unwrap 1 log. Using a wire cheese cutter, slice log into thirty 1/8-inch-thick rounds. Transfer to 2 parchment-lined baking pans (preferably insulated), spacing rounds about 1 inch apart.
  • Bake until golden brown, 10 to 12 minutes, rotating pans halfway through. Transfer crackers to a wire rack to cool completely.
  • Repeat Steps 3 and 4 with remaining log. To package, line the compartments of 4 boxes with parchment. Divide 1 batch among the boxes, placing 15 crackers in one compartment of each box. Repeat with batches of other variations.
  • Assemble ingredients for basic cracker recipe. In Step 1, select Parmesan for cheese. Follow directions for basic cracker recipe above, but after Step 2, place finely chopped walnuts in a shallow bowl. In Step 3, lightly press 1 side of each round into walnuts before transferring, nut side up, to baking pans.

Follow directions for basic cracker recipe above, but after Step 2, in a shallow bowl, combine poppy seeds, sesame seeds, kosher salt, garlic powder, and onion powder. In Step 3, lightly press 1 side of each round into seed-spice mixture before transferring, seed side up, to baking pans.
  • Assemble ingredients for basic cracker recipe. In Step 1, add white cornmeal and powder to dry ingredients, and select Cheddar for cheese. Follow directions for basic cracker recipe above.

  • In a large bowl, mix the wholemeal flour, semolina and salt together with the sesame, flax and ground pumpkin seeds.
  • In separate bowl, whisk 210ml/7¼fl oz water with the honey and oil. Stir in to the dry ingredients and mix to a medium-firm dough.
  • Knead the dough for five minutes. Return to the bowl, cover and set aside for 20 minutes.
  • Preheat oven to 180C/375F/Gas 4. Line 2-3 baking trays with non-stick parchment.
  • Using a ruler and a sharp knife or pizza cutter, cut the dough into rectangles or diamonds, of approximately 5x15cm/2x6in. Place on to the prepared trays close together, but not touching.
  • Spray the crackers with water. At this point you can add a topping if you wish (more ground seeds or spices). You can reknead any left-over scraps, but they will not be as successful as first kneading.
  • Bake the crackers for 15-18 minutes. Turn the oven off, open the door for 30 seconds and close again. Leave the trays in the residual heat of the oven for 10-15 minutes for extra crispness.
