This EASY Oven Roasted Corn with chive butter sauce is a quick way to serve a classic side dish all year long. Ready in only 30 minutes!

Ingredients

6 ears sweet corn
6 tablespoons unsalted butter (, melted)
3 tablespoons fresh chives (, chopped)
1/2 teaspoon fine sea salt
1/4 teaspoon ground black pepper

Steps:

Preheat the oven to 350 degrees and prepare a baking sheet with nonstick aluminum foil.
Remove the husks and silk from the corn.
Combine the melted butter, chives, salt and pepper.
Brush the mixture over the corn and place evenly apart on the prepared baking sheet.
Bake for 30 minutes, turning halfway through cooking time.
Remove and serve, adding more chive butter, if desired.

Ingredients

1/2 cup unsalted butter, plus
3 tablespoons unsalted butter, softened, divided
4 cups whole kernel corn, frozen or 4 cups corn on the cob
1/2 cup chopped yellow onion
3 tablespoons adams bbq seasoning
1 poblano pepper, seeded and diced
salt & pepper

Steps:

In a large skillet melt 1/2 cup butter over medium-low heat. Add corn and yellow onion, cooking until corn is golden and beginning to brown.
Add seasoning, poblano pepper and salt and black pepper to taste. Cook for approximately 3 minutes or until poblano pepper is soft. Add remaining 3 tablespoons butter, stirring until melted.

We love to use this savory butter on fresh corn on the cob, but it is also yummy on many fresh vegetables.

1/2 cup butter, softened
1 tablespoon minced chives
1 tablespoon minced fresh dill
1 tablespoon minced fresh parsley
1/2 teaspoon dried thyme
1/4 teaspoon salt
Dash garlic powder
Dash cayenne pepper
Hot cooked corn on the cob

Steps:

In a small bowl, combine the first eight ingredients. Serve with corn. Refrigerate leftovers up to 1 week or freeze up to 3 months.
