A wonderful rhubarb dessert that always bring requests for the recipe. Easy and quick to make. Serve with whipped cream or ice cream.

1 cup water
1 cup sugar
3 tablespoons butter
2 cups all-purpose flour
3 teaspoons baking powder
¼ teaspoon salt
½ cup butter
¾ cup milk
3 cups finely chopped rhubarb
½ teaspoon ground cinnamon
1 cup sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan.
  • Bring water to a boil in a small saucepan. Dissolve 1 cup sugar in boiling water, then add 3 tablespoons butter. Remove from heat, and set syrup aside to cool.
  • In a large bowl, whisk together flour, baking powder, and salt. Cut in 1/2 cup butter. Stir in milk; mix lightly. Roll out on a floured surface into a rectangle shape about 12 inches long.
  • In another bowl, combine rhubarb, cinnamon, and 1 cup sugar. Spread evenly over roll, leaving a 1/2 inch edge. Roll dough tightly lengthwise, and seal the seam. Cut into twelve 1 inch sections. Arrange rolls in prepared pan. Pour syrup over rolls.
  • Bake in preheated oven for 40 minutes, or until lightly browned.

3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup butter or 1/2 cup margarine
3/4 cup milk
3 cups chopped rhubarb
1 cup sugar
1 teaspoon cinnamon
1 cup sugar
1 cup warm water
1 cup brown sugar
3 tablespoons margarine, melted

Steps:

  • For Dough: Mix flour, baking powder, salt and 1/2 c butter or margarine. Stir in milk.
  • Roll out dough to approximately 10x15 rectangle.
  • For Filling: Mix rhubarb, 1 c sugar and cinnamon. Spread over dough. Roll up from long side like cinnamon rolls. Seal edge. Cut into 1 inch sections. Put cut side down in a 9x13 pan.
  • For Syrup: Mix sugar, water, brown sugar and margarine. Pour over rolls.
  • Bake at 350 degrees for 40 minutes.
  • Serve warm with vanilla ice cream!

For the turnover dough:
12 tablespoons (2 sticks) cold unsalted butter, cut into pieces
2 ounces cream cheese
2 1/2 cups all-purpose flour, plus additional for work surface
1 teaspoon fine sea salt
2 teaspoons sugar
1 tablespoon apple cider vinegar
For the rhubarb turnovers:
4 cups (1/2-inch-diced) rhubarb (5 to 6 stalks)
Pinch kosher salt
1/8 teaspoon freshly grated nutmeg
1 cup turbinado sugar, plus more for topping
1 large egg
Lemon Buttermilk Ice, optional

Steps:

  • To prepare dough:
  • Place the cut butter in the freezer to chill. Meanwhile, in a mixing bowl, combine the flour, salt, and sugar. Get some ice water ready. Add the chilled butter and cream cheese to the mixing bowl and, with both hands, rub the fat between your fingers through the flour until the texture resembles coarse meal, with some pea-size chunks remaining. Drizzle vinegar and 1 tablespoon ice water into the flour mixture and mix with a large spoon or spatula until the dough just comes together. On a floured surface, turn out the dough and pat gently into a disk. Lightly coat the top surface with flour, cover the disk in plastic wrap, and refrigerate for a minimum of 1 hour before rolling out.
  • To make the turnovers:
  • In a wide skillet, combine the rhubarb, salt, and nutmeg. Stir in 1 cup sugar and let rest for 10 minutes. Turn the burner on to medium heat and cook the rhubarb until the juices are released, about 5 minutes. Remove the rhubarb from the pan with a slotted spoon, transfer to a plate, and cool in the refrigerator. Continue to cook the remaining liquid until reduced to a syrupy glaze. Let the glaze cool. Return the strained, cooled rhubarb to the cooled glaze and toss to coat. Return the rhubarb mixture to the refrigerator.
  • Remove the turnover dough from refrigerator. On a clean, floured surface, roll out the dough to 1/8-inch thick. Using a small plate, bowl, or saucer as a guide, cut out 6-inch circles of dough. Lay each circle on parchment paper, stack the circles, and refrigerate to keep the dough cold.
  • Heat the oven to 350°F. In a small bowl, whisk the egg with 1 tablespoon water; set aside. Remove the dough circles from the refrigerator and transfer them to a parchment-lined cookie sheet or baking sheet. Spoon 1/4 cup of the rhubarb mixture onto one half of each dough circle, leaving 1/2 inch of space around the edge. Fold the dough over the rhubarb so the edges meet, and crimp the edges with a fork. Brush the top of the turnover with the egg wash and sprinkle with turbinado sugar. Cut thin slits in the top of the dough over the rhubarb with the tip of a paring knife to let steam escape.
  • Bake on the middle rack of the oven until the dough is crisp and golden brown, 30 to 40 minutes. If desired, serve each turnover with 1/2 cup Lemon Buttermilk Ice.

1 cup white sugar
½ cup cranberry juice
¼ cup water
3 cups coarsely chopped rhubarb
2 ½ cups dry biscuit mix
2 tablespoons brown sugar
½ teaspoon ground nutmeg

1 tablespoon vegetable oil
½ cup milk
3 tablespoons softened butter
2 cups finely chopped rhubarb
¼ cup brown sugar
2 tablespoons white sugar
2 tablespoons white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Generously grease a 9x9-inch baking dish.
  • Bring 1 cup of sugar with the cranberry juice and water to a boil in a saucepan and let boil for 1 minute, stirring constantly. Remove the cranberry juice mixture from the heat and set aside.
  • Sprinkle 3 cups of coarsely-chopped rhubarb into the bottom of the prepared dish.
  • Mix the biscuit mix, 2 tablespoons of brown sugar, the nutmeg, and cinnamon together in a bow; stir in vegetable oil and milk to make a soft dough. Roll the dough out on a floured surface into a square about 10 inches on each side; spread butter over the dough. Sprinkle 2 cups of finely chopped rhubarb over the butter; sprinkle the rhubarb with 1/4 cup of brown sugar and 2 tablespoons of white sugar. Roll the dough up jellyroll style, gently press the seam down, and cut the roll into 9 slices. Arrange the slices over the rhubarb in the baking dish. Pour the reserved cranberry syrup over the slices; sprinkle with the last 2 tablespoons of sugar.
  • Bake in the preheated oven until the biscuit topping is golden brown and the rhubarb is bubbling, 25 to 30 minutes.

1-1/2 cups sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1-1/2 cups water
1/3 cup butter
1 teaspoon vanilla extract
Red food coloring, optional
DOUGH:
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
2-1/2 tablespoons cold butter
3/4 cup 2% milk
FILLING:
2 tablespoons butter, softened
2 cups finely chopped fresh or frozen rhubarb
1/2 cup sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a saucepan, combine sugar, flour, cinnamon and salt. Stir in water; add butter. Bring to a boil; cook and stir 1 minute. Remove from heat. Add vanilla and, if desired, enough food coloring to tint sauce a deep pink. Set sauce aside. , For dough, in a medium bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Add milk and mix quickly. (Do not overmix.) Gather dough into a ball and roll out on a floured surface into a 12x9-in. rectangle. Spread with softened butter; arrange rhubarb on top. , Combine sugar and cinnamon; sprinkle over rhubarb. Roll up from a long side and place on a cutting board, seam side down. Cut roll into 12 slices. Arrange slices cut side up in a greased 13x9-in. baking dish. Pour sauce over. Bake at 350° for 35-40 minutes or until golden brown.

This is based on a recipe from a copy my daughter has of the cookbook "Amish Cooking" compiled by a committee of Amish Women, published by Herald Press. In the book, it is known as "Sarah Schwartz's Rhubarb Rolls" but it makes such deliciously gooey rolls that the new name is more apt!

1 teaspoon salt
2 teaspoons baking powder
3 tablespoons cold shortening
1 cup sweet milk
3/4 cup granulated sugar
2 dashes nutmeg

1/2 cup butter, softened
2 cups finely chopped rhubarb
1 cup hot water
1 tablespoon butter
1 cup sugar
4 teaspoons flour
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, sift together the flour, salt, and baking powder.
  • Using a pastry knife or forks, cut the shortening into the flour mixture, then add the milk and mix well.
  • In a small bowl, combine the sugar, nutmeg, and cinnamon; set aside.
  • Roll the dough out on a lightly floured board to 1/4 inch thick, spread generously with the softened butter, then spread with the chopped rhubarb and sprinkle over the sugar mixture.
  • Roll up the dough like a jellyroll or cinnamon rolls, and cut into 1 1/2 to 2 inch pieces.
  • In a saucepan over medium heat, combine the hot water, butter, sugar, flour, and salt, and bring to a boil; let boil for 3 minutes to make a sweet sauce, then remove from heat and set aside.
  • Butter a 9x9-inch pan, then place the dough roll slices in the pan; pour the sauce over and around the slices.
  • Bake at 350 degrees F for about 12 to 15 minutes or until light brown.
  • Notes: you can substitute diced apples for the rhubarb.

6 cups chopped fresh or frozen rhubarb
2-3/4 cups sugar, divided
2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
4 large eggs
1 teaspoon lemon extract
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Confectioners' sugar

Steps:

  • In a large saucepan, combine the rhubarb, 2 cups sugar, cinnamon, allspice and cloves. Bring to a boil. Reduce heat; cook, uncovered, over medium heat until thickened, stirring occasionally. Cool completely., Line a greased 15x10x1-in. baking pan with waxed paper. Grease the paper; set aside. In a large bowl, beat eggs for 3 minutes. Gradually add remaining sugar; beat for 2 minutes or until mixture becomes thick and lemon-colored. Stir in extract. Combine dry ingredients; fold into egg mixture. 1/2 cup granulated sugar
1 teaspoon unflavored gelatin
1 tablespoon cold water
For cake
4 large eggs, separated
1/2 cup granulated sugar
2 teaspoons freshly grated lemon zest
1 teaspoon vanilla
1/4 teaspoon salt
1/4 cup all-purpose flour
1/4 cup cornstarch
confectioners' sugar
For lemon syrup
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1 tablespoon water
For lemon glaze
1/2 cup confectioners' sugar
1 tablespoon fresh lemon juice

Steps:

  • Make filling:
  • In a heavy saucepan cook rhubarb with sugar over moderate heat, stirring often, 20 to 25 minutes, or until rhubarb is a thick purée (about 1 1/2 cups). In a small bowl sprinkle gelatin over water and let soften 1 minute. Add gelatin to rhubarb and stir over low heat 1 minute, or until gelatin is dissolved. Transfer filling to a metal bowl set in a bowl of ice and cold water and stir occasionally until cooled and thickened.
  • Make cake:
  • Preheat oven to 350°F. Line the bottom of a greased jelly-roll pan, 15 1/2 by 10 1/2 by 1 inch, with foil. Grease foil and dust with flour, knocking out excess.
  • In a bowl with an electric mixer beat egg yolks, 1/4 cup of the granulated sugar, zest, and vanilla until thick and pale and mixture forms a ribbon when beaters are lifted.
  • In a large bowl with cleaned beaters beat egg whites with salt until they hold soft peaks. Beat in the remaining 1/4 cup granulated sugar gradually and beat whites until they hold stiff peaks.
  • Stir one third of whites into yolk mixture to lighten it and fold in remaining whites gently but thoroughly. Sift flour and cornstarch over batter and fold in until batter is just combined.
  • Spread batter evenly in prepared pan and bake in middle of oven 6 to 9 minutes, or until cake is lightly colored and springs back when pressed lightly.
  • Dust a kitchen towel generously with confectioners' sugar and invert cake onto it. Remove foil carefully from cake. Starting with a long side, roll up cake loosely and gently in the towel and cool 30 minutes.
  • Make lemon syrup:
  • In a very small saucepan bring all ingredients to simmer, stirring until sugar is dissolved. Keep syrup warm.
  • Assemble cake:
  • Unroll cake carefully and brush with half of the warm syrup. Spread cake with filling and reroll cake carefully. Transfer cake to a platter, seam side down, and brush with remaining syrup. Chill roll, covered loosely, at least 2 hours or overnight.
  • Make lemon glaze:
  • In a small bowl stir together sugar and lemon juice to make a pourable glaze.
  • Transfer glaze to a small resealable plastic bag and snip one corner to make a small hole. Trim ends of cake diagonally and squeeze glaze decoratively over cake.
  • Serve cake, sliced crosswise, with White Chocolate Toasted Almond Semifreddo.

  • Combine sliced rhubarb, sugar, lemon juice, and cornstarch in a medium saucepan. Cook over medium heat, stirring constantly, until the rhubarb completely breaks down and the mixture turns into a jam-like consistency, about 10 minutes. You may have to crush some pieces of rhubarb with your spoon.
  • Turn out the risen dough onto a lightly floured counter or surface. Roll it out to about an 18x12 inch rectangle (it will probably be more oval than rectangle and that's ok). Spread 1 cup of the rhubarb filling over the dough, leaving a 1 inch border around the edges.
