Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking pan with vegetable oil.
  • Place mackerel fillets in the baking pan; season with salt and pepper.
  • Mix butter, lemon juice, and paprika together in a bowl. Pour over mackerel fillets.
  • Bake in the preheated oven until mackerel flakes easily with a fork, 20 to 25 minutes.

4 x 150- 180g / 5 - 6 oz fish fillets (, about 1.5cm / 1/2" thick, skinless and boneless (Note 1))
50g / 4 tbsp unsalted butter
1/4 cup cream, heavy / thickened ((See Note 2 for sub options))
1 - 2 garlic cloves (, minced)
1 tbsp Dijon mustard
1 1/2 tbsp lemon juice
Salt & pepper
1 1/2 tbsp eschallots (French onion) (, finely chopped (Note 3))
Fresh parsley and lemon slices (, to serve)

Steps:

  • Preheat oven to 200°C / 390°F (all oven types).
  • Place fish in a baking dish - ensure the fish isn't crammed in too snugly. See video or photos in post. Sprinkle both sides of fish with salt and pepper.
  • Place butter, cream, garlic, mustard, lemon juice, salt and pepper in a microwave proof jug or bowl. Microwave in 2 x 30 sec bursts, stirring in between, until melted and smooth.
  • Sprinkle fish with shallots, then pour over sauce.
  • Bake for 10 - 12 minutes, or until fish is just cooked. Remove from oven and transfer fish to serving plates. Spoon over sauce, and garnish with parsley and lemon wedges if using.

2 pounds cod fillets
¾ cup freshly grated Parmesan cheese
⅓ cup butter, softened
¼ cup mayonnaise
¼ cup chopped green onion
3 tablespoons lemon juice
2 teaspoons dried dill weed
¼ teaspoon salt
¼ teaspoon ground black pepper
2 dashes hot pepper sauce (such as Tabasco®)

Steps:

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; lightly coat with about 1 teaspoon butter.
  • Lay fish in a single layer on the prepared baking sheet.
  • Mix Parmesan cheese, 1/3 cup butter, mayonnaise, green onion, lemon juice, dill, salt, black pepper, and hot sauce together in a bowl.

Salt and black pepper to taste
2 tablespoons olive oil
1/2 cup onion, (finely chopped)
2 cloves garlic, (minced)
1 1/2 cups Clamato® Original flavor
1 can (12 oz) evaporated milk
1 tablespoon cornstarch
2 tablespoon lime juice
2 teaspoons lime zest
Red pepper flakes ((optional))
Fresh parsley leaves, (finely chopped (optional))

Steps:

  • Preheat oven to 425º F (218º C).
  • Pat fillets dry with a paper towel. Season fillets on both sides with salt and pepper.
  • Heat oil in a large nonstick or cast-iron skillet over medium heat. Add onions; cook for 3 minutes, or until translucent and fragrant. Add garlic; cook for 1 minute, constantly stirring to avoid burning.
  • Add Clamato®, evaporated milk, cornstarch, lime juice, and lime zest; mix to combine. Cook for 5 - 6 minutes, frequently stirring, until sauce thickens a little. Place fish fillets over the sauce.

  • Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
  • Heat the butter in a pan and gently cook the onion until soft but not brown. Mix the cream with the parmesan, mustard powder and vermouth, stir in the cooked onions and season with salt and pepper.

In this quick and easy weeknight fish recipe, the fish is the chip. Coat fish fillets with sour cream and panko breadcrumbs, then bake until crisp and golden brown.

1½ cups sour cream
2 Tbsp. onion powder
1 lemon
1 small bunch of chives
½ cup panko breadcrumbs
2 Tbsp. olive oil
Four 6 oz. fish fillets (cod, salmon, halibut, or trout)
1 big head of crisp lettuce
Salt and pepper, to taste

Steps:

  • Heat the oven to 450°F. In a medium bowl, stir together 1½ cups sour cream and 2 tablespoons onion powder. Zest 1 lemon into the bowl. Snip ¾ of 1 small bunch of chives into the bowl with scissors (hold on to the rest). Stir to combine and season to taste with salt and pepper. In a small bowl, stir together ½ cup panko breadcrumbs and 2 tablespoons olive oil. Season with salt and pepper.
  • Pat dry four 6 oz. fish fillets (cod, salmon, halibut, trout) that are max 1½ inches thick. Transfer to a parchment-lined sheet pan, season with salt and pepper, and cover the flesh with a thin layer of the sour cream mixture (reserve the rest). Press the panko mixture on top, then bake until the fish flakes easily and the panko is browned, 10 to 12 minutes per inch of thickness. (If your fish is cooked through before the panko's browned, broil for a minute or two.)
  • Meanwhile, squeeze the juice from half the lemon (about 1½ tablespoons) into the remaining sour cream mixture. Slice 1 big head crisp lettuce (romaine, iceberg).
  • Divide the lettuce between plates and season with salt and pepper. Drizzle with olive oil and the juice from the remaining lemon. Add the fish to the plates, then snip the remaining chives over. Eat with the sour cream and onion dip.

A healthful dinner that actually tastes great! And it is so easy to make. Though this recipe was made with grouper, any firm white fish such as cod, haddock, or tilapiia will work. 1 lb & 4 oz. grouper fish fillet (1 5 oz. piece per serving)
1/2 cup mayonnaise
1 lime, juiced
1/4 teaspoon onion powder
1 garlic clove
1/8 teaspoon pepper
2 -3 slices fresh white bread or 3/4-1 cup panko breadcrumbs
4 -5 stems fresh parsley, leaves removed from stems
2 -4 tablespoons butter, melted

Steps:

  • Preheat oven to 425 degrees F. Spray an 11" x 7" baking dish with non-stick cooking spray.
  • Wipe fish fillets with a damp cloth and lay them in the baking dish. Combine mayonnaise with lime juice, onion powder, garlic, and pepper. Spread this over the fish.
  • In a food processor, reduce the bread to crumbs. Add the leaves of parsley and process again. If using panko, chop the parsley finely and add to the panko. Sprinkle these crumbs over the fish. Drizzle with the melted butter.
