Steps:
- Prepare grill for high heat.
- With a fork, poke sausages several times. Place in a pot, cover with water, and simmer over medium-high heat until cooked through, about 7 minutes. Remove from heat, and set aside.
- Warm butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper.
- Meanwhile, place sausages on grill (or under broiler), and cook until well browned. Serve on a mound of caramelized apples and onions.

- In a large skillet over medium heat, fry the sausage until cooked through, with no trace of pink remaining, 5 to 10 minutes for bulk sausage or 15 to 25 minutes for sausage links.
- Meanwhile, core and slice the apples into wedges 1/2 inch (12 mm) thick.
- Add the apples to the skillet containing the cooked sausage (or remove the sausage if there's no room) and sauté until the apples are browned and tender but not mushy, 5 to 10 minutes.
- Transfer the sausage and apples to a plate lined with paper towels to drain. Serve hot.

Steps:
- Trim breasts of fat.
- Season chicken with 1 tsp curry powder, salt and pepper.
- Heat 2 tbsp butter in a skillet on medium heat.
- Add sugar and apples.
- Saute until apples soften- about 8 minutes.
- Remove apples and add remaining 1 tbsp butter to pan.
- Add chicken breasts and remaining curry powder.
- Saute for 5 minutes on each side, or until golden.
- Pour in wine and bring to boil.
- Reduce liquid until only about 2 tbsps remain.
- Reduce heat.
- Add yogurt OR whipping cream.
- Simmer for 2 minutes.
- DO NOT LET THE YOGURT BOIL!
- When sauce is thickened and chicken juices run clear, stir in the apples.
- Sprinkle with chopped mint.
- Serves 4.
BAKED SAUSAGE AND SAUERKRAUT WITH APPLES - WHOLE FOODS
This is similar to a dish I have made and reviewed here on Zaar. The difference here is that the apples are served on the side and not cooked with the sausage and sauerkraut. "Sautéed apples and sauerkraut bring a sweet and sour flavor to the otherwise savory pan-fried sausages. Most commonly found in the German-speaking area of the Alps, this delicious entrée is often served with a dab of dark, spicy German mustard on the side for dipping". I have added my notes of change. I used precooked smoked turkey sausage, less sauerkraut. I do suggest using the brown sugar, it does not seem to add much sweetness. I think it combines beautifully with the sauerkraut. - Preheat oven to 325°F.
- In a large oven-safe skillet, melt 1 tablespoon butter over medium heat. Sauté onion and rosemary sprigs until onion is golden, about 10 minutes. Transfer to a plate and set aside.
- Add olive oil to the skillet. Add sausages and cook, turning, just until skins are browned, about 5 minutes per side. Remove sausages to a plate.
- Add sauerkraut and sautéed onions to the skillet. Place sausages on top. Mix wine and chicken broth together. Pour slowly all over the top. Add bay leaf to the middle of the dish. Cover with a lid or foil and transfer pan to oven. Bake for 1 hour.
- Meanwhile, prepare apples by melting remaining 2 tablespoons butter in a large skillet. Add apples and sauté until just tender, adding brown sugar, if desired. Apples will cook in about 5 to 10 minutes.
- To serve, spoon baked sausages and sauerkraut onto a serving platter. Top with sautéed apples, or serve on the side. Serve piping hot with spicy mustard on the side.

- Preheat the oven to 375°F
- Put the leeks and apples into a roasting tin that will hold the sausages in a single layer. Put the sausages on top of the leeks and apples and drizzle over the oil.
- Season and toss together. Dot with the butter and pour over the cider. Bake for 50 minutes to 1 hour.
- About 15 minutes before it's ready, spread the mustard over the sausages and return to the oven.
- Serve the sausages and leeks with extra pan juices spooned over and mash or rosemary roasted potatoes.

In my growing up years, serving this dish meant that autumn had certainly arrived! Mom served these "fried apples", with their delicious cinnamon flavor, alongside hot buttered biscuits, and freshly ground homemade sausage. Yumm!! It also is a delicious accompaniment with meats at other meals, particularly ham or pork.

- In a large skillet on medium-high heat, melt butter (If your butter browns a bit, don't get excited! This gives an even better flavor.
- Add sliced, unpeeled apples, cover, and saute, stirring frequently.
- In a bowl, mix brown sugar and cinnamon. (Sometimes, for a taste difference, I also throw in 1/2 cup chopped pecans, at this point).
- When apples are just barely starting to get tender, stir in sugar-cinnamon mixture.
