1/4 cup Olive oil
4 cloves Garlic ((minced))
1 bunch Broccoli florets ((~4 cups; florets cut in half))
1/4 tsp Sea salt ((or 1/2 tsp - to taste))
1/4 tsp Black pepper ((to taste))
1/4 cup Water

Steps:

  • Heat the olive oil in a large saute pan or skillet over medium heat. Add the minced garlic and saute until fragrant, about 30 seconds.
  • Add the broccoli florets. Season with sea salt and black pepper. Increase heat to medium high. Stir fry for 3-4 minutes, until the broccoli starts to turn bright green and brown a bit.
  • Add the water. Cover with a lid and cook for 3 to 5 minutes, until broccoli is crisp-tender. (There will be steam under the lid.) Remove the lid and if there is any water remaining, stir fry for another minute until it evaporates. Adjust salt and pepper to taste if needed.

2 large bunches broccoli
Good olive oil
Kosher salt and freshly ground black pepper
2 teaspoons minced garlic (2 cloves)
1/2 cup panko (Japanese bread flakes)
2 tablespoons toasted pine nuts
2 teaspoons grated lemon zest (2 lemons)
1 1/2 tablespoons freshly squeezed lemon juice

Steps:

  • Preheat the oven to 400 degrees F. Arrange two racks evenly spaced in the oven.
  • Remove and discard the bottom half of the broccoli stems. Cut the remaining stems in half lengthwise up to the florets and pull the florets apart. (Don't cut through the florets!) Continue cutting all the stems and pulling the florets apart - you want to have about two inches of stem with whole florets attached. Place the broccoli on two sheet pans, drizzle with 4 tablespoons of olive oil, sprinkle with 1 1/2 teaspoons salt and 1 teaspoon pepper. Toss well, spread in one layer on each pan, and roast for 15 minutes until crisp-tender and the edges are starting to brown, tossing occasionally.
  • Meanwhile, in a small (8-inch) saute pan over medium-low heat, heat 1 1/2 tablespoons of olive oil, add the garlic, and cook for 1 minute, until fragrant but not browned. Add the panko, tossing to coat in the oil. Cook over medium-low heat for 3 to 4 minutes, until the panko is golden brown, tossing occasionally. Off the heat, add the pine nuts and lemon zest.
  • Place the broccoli on a serving platter, sprinkle with the lemon juice, then the panko mixture, 1/2 teaspoon salt, and toss well. Serve hot, warm, or at room temperature.

2 tablespoons olive oil (light is best)
1 teaspoon dried red pepper flakes
4 garlic cloves, minced
1/2 cup chicken broth
2 lbs broccoli

Steps:

  • Cut broccoli into bite sized pieces.
  • Boil in salted water for about 5 to 7 minutes (broccoli should just start to soften).
  • Rinse under COLD water (to stop the cooking).
  • Dry to remove any excess water.
  • In a large skillet, heat the oil until hot.
  • Add the garlic and pepper flakes.
  • Sauté for 1 minute.
  • Add the broccoli and "some" of the broth. (I say "some" as you don't want it soaking in it, you just want it to help steam and add flavor)
  • Cook for 2 to 4 minutes (depending on the way you like your broccoli, tender or crisp) stirring the entire time. Season lightly with table salt.
  • As everyone has their own tastes, increase or decrease the garlic and or pepper flakes as desired.

Not only does this bring out the vegetable's inherent sweetness, but it softens whatever flavorings you add without burning them. This recipe embraces the prickly heat of chile and garlic, but you could also use ground spices, thyme or rosemary, ginger or scallions, capers or olives. Swap the broccoli for sliced carrots or sweet potatoes, cauliflower florets, broccoli rabe, or green beans, adjusting cook time and water as necessary.

1 pound broccoli, cut into 1 1/2- to 2-inch-long florets, stems sliced 1/4-inch thick

Steps:

  • Preheat oven to 500 degrees.
  • In a large bowl, toss the broccoli with the oil and salt and pepper to taste. Arrange the florets in a single layer on a baking sheet and roast, turning once, for 12 minutes, or until just tender.

4 bunches (12 to 16 ounces each) broccoli rabe (rapini), stems trimmed
1/4 cup olive oil
3 garlic cloves, chopped
1/2 teaspoon dried crushed red pepper flakes
1/3 cup raisins
Salt
2 tablespoons pine nuts, toasted

Steps:

  • Working in batches, cook the broccoli rabe in a large pot of boiling salted water until crisp tender, about 1 minute per bunch. Transfer the broccoli rabe to a large bowl of ice water to cool. Reserve about 1/4 cup of the cooking liquid. Strain the cooled broccoli rabe and set aside.
  • Heat the oil in a heavy large skillet over medium heat. Add the garlic and red pepper flakes, and saute until the garlic is golden, about 1 minute. Reduce heat to medium-low. Add the broccoli rabe and toss to coat. Add the reserved cooking water, the raisins, and cook until the broccoli rabe is heated through and the stems are tender, about 4 minutes. Season with salt, to taste. Just before serving, toss the mixture with the pine nuts.

6 cups broccoli rabe, rinsed and large stems removed (about 2 bunches)
1/2 ounce pine nuts, about 2 tbsp, toasted
2 garlic cloves, minced
2 teaspoons olive oil
1/8 teaspoon black pepper, to taste
1/8 teaspoon table salt, to taste

Steps:

  • In large stockpot, boil water.
  • Add broccoli rabe and blanch 2 minutes.
  • Drain.
  • In large skillet, heat oil.
  • Add garlic and cook 1 minute.
  • Add broccoli rabe and cook 4 minutes.
  • Season with salt and pepper.
  • Add pine nuts.
  • Toss and serve.
  • Yields about 1/2 cup per serving.

2 lbs broccoli, washed, tough stalks peeled, and rough chopped
1/4 cup olive oil
1/4 teaspoon ground coriander
1 teaspoon seasoning salt, Smokey Seasoned Salt
2 chipotle chiles in adobo, Seeded and minced
5 garlic cloves, minced
1/3 cup pine nuts

Steps:

  • Preheat oven to 450 degrees.
  • Place the broccoli in a roasting pan so all will be 1 layer. Mix all the remaining ingredients together then pour over the broccoli.
  • Place in oven for 10 minutes. Toss and return to oven for 10 more minutes give an other toss for 5 -10 more minutes.
  • Enjoy!

Steps:

  • In extra-large skillet over medium heat, heat olive oil. Add pine nuts and toast, stirring constantly, until fragrant and just barely golden, 1 to 2 minutes. Add garlic and sauté 1 minute more. Add broccoli rabe, sherry, and golden raisins and cover pan. Cook, stirring occasionally, until broccoli rabe is tender, 7 to 10 minutes.
