GARLIC SAUTEED SPINACH
Dinner couldn't be simpler with Ina Garten's Garlic Sauteed Spinach recipe from Barefoot Contessa on Food Network. It's an easy, go-to side dish for your table.

- Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
- In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.
JAPANESE SPINACH WITH SWEET SESAME SEEDS
You will need a Japanese mortar and pestle (suribachi and surikogi) for this recipe, as the sweet flavor of the roasted sesame is most intense when ground. This can also be made with asparagus instead of spinach.

- Heat the sesame oil in a large skillet over medium heat until hot. Add the spinach 3 to 4 cups at a time. Cook and stir to wilt, then add more spinach.
- Grind the sesame seeds into fine crumbs using a mortar and pestle. When spinach is wilted, move it to the sides of the pan and sprinkle sugar in the center. When the sugar melts, stir in the spinach to coat.
- Transfer spinach to a serving plate and sprinkle ground sesame seeds on top.

Save baby spinach for salads -- for this recipe, a heartier variety is best. Look for leaves that are thick and curly, which will retain more texture and flavor when sauteed.

- Heat a large skillet over medium. Add pepitas and toast, shaking pan occasionally, until they begin to swell and darken slightly, about 2 minutes. Add sesame seeds and continue toasting until pepitas and sesame seeds turn golden brown in places, about 1 minute more. Transfer to a plate; let cool completely.
- Return skillet to medium-high; swirl in 2 tablespoons oil. Add garlic and ginger, season with salt, and cook until fragrant, about 30 seconds. Add enough spinach to fill skillet. Cook, stirring, until spinach begins to collapse. Add remaining spinach, a handful at a time, until all is just wilted. Stir in vinegar and cook 30 seconds. Remove from heat. Stir in remaining1 tablespoon oil; season with salt and pepper. Sprinkle with toasted pepitas and sesame seeds just before serving.
SAUTEED SPINACH LEAVES WITH SESAME SEEDS

- Pick over the spinach and tear off and discard any tough stems. Discard any blemished leaves. Rinse the spinach and drain well.
- Heat the olive and sesame oils in a large skillet to hold the spinach. Over high heat add the spinach, sesame seeds, garlic, clove, salt and pepper to taste and the pepper flakes. Cook and stir rapidly until wilted and most of the moisture has evaporated. Remove the garlic and serve immediately.

TAHINI GRILLED SALMON WITH SAUTEED SPINACH, BEETS WITH SESAME SEEDS, EGGPLANT PUREE AND TAHINI SAUCE

- For the tahini grilled salmon: Preheat the grill to medium and lightly oil the grates. Mix the soy sauce and tahini in a bowl. Brush the salmon on both sides with the tahini soy sauce and place on the grill. Cook the salmon for about 3 minutes on each side and remove from the grill.
- For the crispy salmon skin: Preheat the grill to medium-high heat. Sprinkle the salmon skin with salt and pepper and place on the grill skin-side down. Once the skin begins to bubble, flip and grill until the salmon skin is completely crisp. Remove the salmon skin from the grill, place on a paper towel, cut in half and set aside.
- For the sauteed spinach: Heat the oil in a saute pan over medium heat. Once the oil is hot, add the garlic and shallots and saute until tender. Add the spinach and toss to incorporate until the spinach has wilted. Season with salt and pepper and remove from the heat.
- For the beets with sesame seeds: Place the red wine vinegar, salt, sugar and beets in a pot filled with cold water. Bring to a boil, then reduce to a simmer and cook until tender, 15 to 20 minutes. Remove the beets from the liquid and cool slightly. Wearing gloves, remove the skins of the beets and cut into bite-size pieces. Before serving, place the beets on a plate and sprinkle with sesame seeds.
- For the eggplant puree: Preheat the oven to 375 degrees F. Line a baking tray with parchment paper.
- Place the eggplant skin-side up on the prepared tray and roast until the eggplant has caramelized and cooked, about 30 minutes. Remove from the oven and scoop the flesh into a food processor. Add the tahini and olive oil and puree until smooth.
- For the tahini sauce: Place the sour cream, milk, tahini, honey, sesame oil, lemon juice and salt to taste in a bowl and stir to incorporate. Cover and place in the fridge until serving.
- To assemble: Spoon the eggplant puree in the center of a plate. Place the sauteed spinach on top of the puree. Place the tahini grilled salmon over the sauteed spinach. Drizzle the tahini sauce around the center of the dish. Scatter the beets with sesame seeds around the plate. Garnish with the crispy salmon skin.
SESAME WHITE PIZZA WITH SPINACH

- Make Sheet-Pan Pizza Dough; transfer to the oiled pan as directed in step 3, then shape into an oval and sprinkle with 2 tablespoons sesame seeds, patting to adhere. Flip the dough, cover and let rise as directed, then stretch. During the final rise, put a pizza stone or inverted baking sheet in the lower third of the oven and preheat to 500˚ for 1 hour.
- Meanwhile, make the spinach: Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the spinach and cook, tossing with tongs, until wilted, 3 to 4 minutes. Stir in the remaining 2 tablespoons olive oil, the garlic, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the water evaporates and the garlic is just golden, about 3 minutes. Remove the spinach to a cutting board and chop.
- Make the ricotta mixture: Combine the ricotta, pecorino, oregano and a few grinds of pepper in a small bowl.
- Sprinkle the remaining 1 tablespoon sesame seeds around the edge of the dough to create a 1/4-inch border, pressing to adhere. Sprinkle the mozzarella over the dough up to the sesame border. Top with the spinach, then top with spoonfuls (about 2 tablespoons each) of the ricotta mixture.
- Put the baking sheet directly on the hot stone and bake until the crust is browned around the edges and the cheese is golden, 15 to 20 minutes. Let cool slightly.
- Loosen the edges of the pizza with an offset spatula, then loosen the bottom. Slide the pizza onto a cutting board; cut into squares.
SAUTEED SPINACH WITH SESAME - KOREAN
This recipe is from Mark Bittman's "The Best Recipes in the World". I'm just always looking for simple, tasty ways to eat spinach. Cooking time is just an estimate. This looks like it will cook up very quickly.

- Put 2 T. of the oil in a large skillet over medium heat for one minute. Add garlic. The instant it begins to sizzle, add spinach and cook, stirring occasionally, until it is completely wilted. Turn heat to low.
- Stir in sugar and soy sauce. Cook for a few more moments. Turn off heat. Taste to see if you need additional salt or soy sauce. Serve hot, warm, room temp or cold.
- Before serving, drizzle with remaining sesame oil and spinkle with sesame seeds.

- In a large saucepan cook spinach in 2 cups boiling water for 2 minutes; drain and rinse in cold water.
- Drain again and squeeze dry.
- Chop spinach coarsely and set aside in a deep serving dish.
- In a small skillet over high heat toast sesame seed until light brown (2-3 minutes)and then sesame seed to a mortar and crush with pestle.
- Stir in soy sauce and sugar.
- Toss sesame seed mixture with spinach and serve.
