HONEY PLUM SOY STIR-FRY

Steps:
- Place the soy sauce, honey, plum preserves, chicken stock, cornstarch, ginger, sriracha, garlic and scallions in a mason jar. Secure the lid and shake until everything is combined. Set aside.
- Heat the peanut oil in a large skillet over a medium-high heat. When the oil is hot, add the chicken and cook for 2 minutes, then remove and set aside. Add the onions, broccoli and cauliflower and cook until the veggies have softened but still have a bite, 4 to 5 minutes.
- Return the chicken to the skillet and pour over the sauce. Stir everything together and cook until the sauce is very thick, 1 to 2 minutes. Add a little water if needed to make it more saucy.
- Serve the stir-fry over cooked rice. Garnish with some sliced scallions and sesame seeds. Enjoy.
HONEY PORK STIR-FRY
A recipe from one of those small community cookbooks that we have modified for our tastes by cutting the amount of meat in half and adding extra veggies! Like any stir-fry, this one is very versatile and you could use almost any veggies that you like. We have also added baby corn and red bell pepper before. *Updated: The review by LARavenscroft reminded me that we usually do 1.5 times or double the amount of sauce, depending on the amount of veggies we are using, so please update accordingly if you feel it needs more sauce.

- Cut pork into 1 inch squares. Brown in large skillet over medium high heat, stirring frequently.
- Combine chicken broth, honey, soy sauce, vinegar, ginger, and garlic powder. (See note on sauce above).
- Add to skillet, cover and cook for 15 minutes.
- Add vegetables, cook for another 10-15 minutes, until at the preferred crispness.
- Thicken sauce with cornstarch and water.
- Serve over rice. I like jasmine or basmati.
STIR-FRIED PORK IN PLUM AND SOY SAUCE
I made this the other night and this is another great quick and easy mid week meal to make, as it can be on the table in about 30 Min's. My hubby and I have been watching our carb intake at the moment and are trying not to eat starchy carbs in the evening, so I served as is, but it would pair well with steamed Jasmine rice.

- Heat 1 Tablespoon oil in a wok and stir-fry pork, in batches, until browned, remove from wok and set to one side.
- Heat remaining oil in wok, add onion, garlic and ginger, stir-fry 1 Minute.
- Add red and yellow peppers stir-fry 1 minute, add soy sauce, return pork to pan, stir-fry until peppers start to soften.
- Add asparagus, peas, sprouts, plum and hoi sin sauces, stir-fry until remaining veg are just tender, you still want a nice crunch.
- Cooking time will be longer if not using a wok.
- To Serve: Either serve as is for low carb or serve over jasmine rice.

- Mix cornstarch and water until smooth. In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat; stir-fry chicken and garlic 1 minute. Add honey, soy sauce, salt and pepper; cook and stir until chicken is no longer pink, 2-3 minutes. Remove from pan., In same pan, stir-fry vegetable blend in remaining oil just until tender, 4-5 minutes. Return chicken to pan. Stir cornstarch mixture and add to pan; bring to a boil. STICKY SOY & HONEY PORK WITH ASIAN NOODLES

- Heat oven to 200C/180C fan/gas 6. Mix together the soy, ketchup and honey with the five-spice. Put the pork tenderloin on a baking tray and brush with just under half the sauce. Roast in the oven for 10 mins, then brush with a little extra sauce and return to the oven for a further 15 mins.
- Meanwhile, soak the noodles in boiling water until soft. Drain, reserving about 50ml of the water. Heat the sesame oil in a wok or large frying pan, add the corn and sugar snap peas, and stir-fry for 3 mins, adding the water to help the veg steam.
- Add the stir-fry veg and half the spring onions, and cook for 3 mins more until wilted. Tip in the noodles and the rest of the sauce. Using tongs, mix everything to combine. Remove the pork, cut into slices and serve on top of the noodles. Scatter with remaining spring onions.

HONEY AND CHILLI STIR FRY

Steps:
- Maranade the chicken with the honey, chillis, ginger, garlic, penut butter, salt and pepper. Ideally this should be left in the fridge for around 10 mins.
- After maranading, heat the oil in a large wok and add the chicken, cooking on a medium heat until there is no pink left. While the chicken is cooking, heat a large pan of water until boiling.
- Thrown in the vegetables along with the mace, corriander and dark soy sauce.
- While the vegetables are cooking in the wok, put the noodles into the boiling water and boil for 4 mintues.
- Drain the noodles and add to the wok with the light soy sauce, turning up to a high heat for 1 mintue. Serve.
- As a tasty extra, try spinkling over chopped peanuts or some fresh corriander.
