HARICOTS VERTS WITH HERB BUTTER
Steps:
- Bring a large pot of water to a boil and add 1 tablespoon salt. Add the string beans and cook for 2 minutes. Drain and then place the string beans in a serving dish.
- For the herb butter, placed the scallion, dill, parsley, butter, 1 teaspoon salt and the pepper in a small bowl and combine.
- Scoop a generous tablespoon of the herb butter and place it on top of the string beans. Sprinkle with sea salt and serve.
- Use any extra herb butter for serving on a steak or in a sandwich.
ROASTED HARICOTS VERTS
Steps:
- Preheat the oven to 375 degrees F.
- Trim the stem ends only from the haricots verts and place them on two sheet pans. Drizzle the beans with 2 tablespoons of the oil (total) and spread them out in one layer. Sprinkle them with 1 1/2 teaspoons salt and 1 teaspoon pepper. Roast for 10 minutes, until crisp-tender. Serve hot.
HARICOTS VERTS ALMONDINE
Steps:
- Bring a large pot of salted water to boil.
- Meanwhile, in a large saute pan, toast the almonds over medium-high heat until golden brown and fragrant, 3 to 5 minutes. Remove from the pan, finely chop and set aside.
- Blanch the string beans in salted boiling water until crisp but tender, 2 to 3 minutes. The salt will impart flavor as well as help keep the string beans crisp. Immediately drain and run cold water over the beans or plunge into an ice bath to cool and stop the cooking process, then remove and completely dry.
- Return the saute pan to the burner over medium heat and melt the butter with the olive oil. Add the shallots, sprinkle with salt and pepper and cook until starting to brown, stirring occasionally, 3 to 5 minutes. Toss the drained beans with the shallots and add the lemon zest and juice. Cook to heat the beans completely through, 1 to 2 minutes.
- Remove from the heat and season with additional salt and pepper if needed. Toss with the toasted chopped almonds and transfer to a serving dish.
SAUTéED HARICOTS VERTS RECIPE (FRENCH GREEN BEANS)
Sautéed Haricots Verts (French Green Beans) are a great side dish. The melt in your mouth texture, the tang of the garlic butter and the zest of fresh herbs make sautéed haricots verts a dinner time favorite.

Steps:
- Place a pot of salted water to boil for your haricots verts.
- Trim the ends of the haricots verts and place in boiling water for 12 minutes.
- Strain.
- In a frying pan over medium high heat, drizzle the olive oil and toss in in the sliced cloves of garlic.
- Allow the garlic to sizzle before adding in the strained green beans.
- Once the remaining water has evaporated, add in the butter.
- Toss frequently. Use a pair of tongs to toss the green beans so you keep their shape. If you use a spoon you risk breaking them.
- Finely chop the fresh parsley. Sprinkle onto the green beans.
- Mix together and turn off the heat.
- Transfer to your dish of choice and serve.

PANCETTA SAUTEED HARICOT VERT WITH CHERRY TOMATOES AND FETA

- When hot, add pancetta; cook and stir until browned.
- Add haricot vert, pinch of salt and pepper, and cherry tomatoes. Cook for 3-5 minutes or until beans are crisp tender.
- Transfer to a serving plate and sprinkle with Feta Cheese.

- In a large skillet, heat the olive oil and sautee the shallots and green beans.
- Season with salt and pepper.
- Shake the pan occasionally so the beans do not burn.
- When done to your taste, about 10 minutes for us, squeeze a couple TBS of lemon juice over the beans and toss with the zest.

Add haricots verts. Sauté until heated through, about 5 minutes. Mix in nuts; season with salt and pepper. Transfer to bowl.
