SAUTEED GREEN BEANS WITH ONIONS
Warm green beans sauteed with onions, cayenne pepper, and extra virgin olive oil until they are tender and crispy makes a healthy and flavorful side dish that will compliment any meat or poultry.

Steps:
- Heat olive oil in a large non-stick skillet and on moderate heat. Add the onions and sauté, stirring often, until they are golden, and caramelized about 5 to 8 minutes.
- Add string beans (while still wet).
- Add cayenne pepper. Cover the pan and lower the heat to simmer. This will also steam the beans while simmering.
- Cook for 10 to 12 minutes, stirring occasionally.
- Add salt, fresh cracked pepper, and garlic powder to taste.
- Taste the beans for tenderness, then remove and transfer to a bowl. Serve.
- Serves 4

- Fill a stockpot with water and bring to a boil over high heat. Add green beans and 1 pinch salt; boil until tender, 5 to 10 minutes. Drain beans in a colander and rinse with cold water. Blot dry using paper towels.
- Heat olive oil in a skillet over medium heat. Cook and stir onion and shallot in the hot oil until tender and translucent, 5 to 7 minutes. Add green beans, garlic salt, soy sauce, salt, and pepper. Cook and stir for 5 to 7 minutes more. Serve immediately.

- Blanch green beans in boiling water until just cooked. (We like ours a little crunchy.) Meanwhile, saute sliced mushrooms in butter over medium-high heat until golden, then toss with the drained, blanched beans and some salt and pepper. Top with French-fried onions.

- Preheat oven to 450°F. Spray 2 heavy large baking sheets with vegetable oil spray. Arrange onions in single layer on prepared sheets.
- Dot onions with 4 tablespoons butter, dividing equally. Season with salt and pepper. Bake until onions are dark brown on bottom, about 35 minutes.
- Meanwhile, boil broth in heavy large skillet over high heat until reduced to 1/2 cup, about 6 minutes. Add sugar and vinegar and whisk until sugar dissolves and mixture comes to boil.
- Add onions to sauce; reduce heat to medium-low. Simmer until liquid is slightly reduced, about 5 minutes. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over low heat before continuing.)

- Snap and boil green beans for at least 2 hours, or until beans are very tender.
- Sauté onions in oil in large skillet over medium heat for 5-10 minutes or until tender.
- Add green beans and white wine to onions. Sauté for about 5 minutes.
- Add mustard, salt, pepper, and bread crumbs. Simmer over low heat and stir until bread crumbs are cooked through.
- Serve and enjoy!
