2 cups frozen corn kernels (or fresh if in season), thawed in the refrigerator
1 green bell pepper, halved, stem, seeds, and ribs removed, and cut into 1/4-inch dice
Pinch red pepper flakes
Salt and freshly ground black pepper

Steps:

  • In a non-stick skillet, heat the oil over moderately high heat until it is hot but not smoking Add corn and pepper dice and saute, stirring, until tender but still crunchy, about 3 minutes. Stir in red pepper flakes and cook 15 more seconds. Season with salt and pepper.

2 large sweet red peppers, chopped
1/2 cup chopped onion
1 garlic clove, minced

6 cobs fresh corn, shucked or (28-ounce) can corn
1 red pepper
1 large poblano pepper (poblanos are called pasillas in California and the Southwest)
2 tablespoons olive oil
3 cloves garlic, minced
1 medium onion, diced
1 yellow pepper, diced
1 orange pepper, diced
4 Roma tomatoes, diced
1 to 2 ounces cream cheese
1/4 cup milk or cream
Salt and freshly ground black pepper
1 bunch fresh cilantro leaves, chopped
1 bunch fresh chives, chopped

Steps:

  • Heat grill to medium.
  • Place corn in foil, sprinkle with water, wrap and put on the grill, with the red and pablano peppers. Char the peppers, remove, peel and dice for relish. Remove the corn to a cutting board, cut off the kernels and reserve in a medium bowl.
  • Add oil to a large skillet and saute the garlic and onion. Saute for a minute, then add the roasted and fresh peppers, tomatoes, and corn heat for another quick minute. Add cream cheese and stir in milk very slowly until the cream cheese is melted and the mixture is smooth. Pour into a serving bowl, fold in cilantro and season with salt and pepper, to taste. Serve garnished with chives.

8 to 10 ears of corn on the cob (yellow or white corn)
3 tablespoons unsalted butter
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove the husks and the silk from the corn and cut the kernels off as close to the husk as possible without removing any of the husk. You should have about 7 cups of kernels.
  • Melt the butter in a large, heavy saute pan. Add the corn, salt, and pepper and saute uncovered on medium-low heat for 8 to 10 minutes, stirring occasionally, until all the starchiness in the corn is gone. Taste, for salt and pepper, and serve.

12 large red bell peppers
12 large green bell peppers
12 large onions
3 cups sugar
3 cups white vinegar
2 tablespoons celery seeds
2 tablespoons salt

Steps:

  • Grind or otherwise process peppers and onions into finely chopped, even mushy, consistency.
  • Cover with boiling water and let stand 10 minutes.
  • Drain well.
  • Save juice to add to vinegar mixture if needed to cover vegetables.
  • Add sugar, vinegar, celery seed and salt.
  • Boil 15 minutes.
  • Pour into sterilized canning jars and seal.

1 tablespoon olive oil
1 cup frozen corn, thawed
2 cups frozen carrots, thawed (the sliced variety)
1 1/2 cups red onions, diced
1 1/2 cups red bell peppers, diced
1 garlic clove, minced
3 teaspoons dried basil
1/2 teaspoon spike seasoning
1/4 teaspoon salt
1/2 teaspoon ground pepper

Steps:

  • Heat oil over medium-high heat in large saucepan.
  • Add onions, garlic, and bell peppers, and sauté until tender.
  • Add corn and carrots (be sure they are thawed)and cook over medium heat, stirring occasionally until heated through.
  • Add salt, pepper, basil, and Spike seasoning and mix well.
  • Simmer for 3-5 minutes more.
  • Note: You can substitute another all-purpose seasoning for Spike.

Not the same, but still so very good with a hint of heat. This won a secret food bloggers secret ingredient contest for a recipe using red bell peppers. I hope you enjoy! Number Of Ingredients 5

1 red bell pepper, chopped in small pieces (or any other type of bell pepper)
1/2 onion, diced fine
2/3 cup sugar
1/2 cup white vinegar (or apple cider)
1/4-1/2 teaspoon red pepper flakes (if you like less heat, use 1/4 tsp. If you like more heat, add 1/4 tsp.)

Steps:

  • Add everything to a small sauce pan and mix until well incorporated.
  • Cook the relish on medium heat for 5 minutes and turn down the heat to medium-low(or low) for an additional 20 minutes, stirring occasionally until most of the liquid has reduced.
  • Remove from heat and allow to cool before serving.
  • Note:.
  • The relish needs to be cooked on a low heat, so stir frequently and reduce time if necessary. This recipe will keep quite awhile in the fridge and you may multiply the recipe and can it if desired.

4 large ears fresh corn kernels
1 red bell pepper (red, yellow or green)
1 1/2-2 tablespoons corn, olive or 1 1/2-2 tablespoons grapeseed oil
1 jalapeno pepper, finely chopped
1 -2 garlic clove, minced
1/3 cup chopped fresh cilantro (optional) or 1/3 cup basil (optional)
salt
1 pinch sugar
fresh ground black pepper or cayenne pepper
1 -2 tablespoon cider vinegar (or to taste)

Steps:

  • Husk the corn, remove the silk, rinse well with cold water and then pat dry with paper toweling. Cut the kernels from the cobs, scraping to extract as much corn milk as possible. Discard the cobs and set the corn kernels aside.
  • Core and cut the peppers, cut into thin strips, about 1/8-inch thick.
  • Heat the oil in a large heavy skillet. Add the bell peppers, jalapenos, garlic, cilantro or basil and saute, stirring a couple times, for 5 to 7 minutes or until the peppers are soft and slightly wilted. Remove the pan from the heat.
  • Stir the corn into the pan, mixing well with the vegetables. Then stir in the salt and black pepper and saute the vegetables 5 minutes longer. Stir a couple times or until the corn is tender and has picked up a golden glow.
  • Stir in the vinegar and heat the corn 2 or 3 minutes longer. Serve the dish hot or at room temperature.
