1 Tbsp. olive oil
1/2 cup low sodium soy sauce
1/2 cup water
3 Tbsp. packed light brown sugar
2 Tbsp. rice vinegar
1/2 tsp. sesame oil (optional)
1 tsp. ground ginger
2 tsp. minced garlic
2 Tbsp. honey
3 tsp. cornstarch
sesame seeds and chopped green onions for garnish
rice for serving
steamed veggies for serving

Steps:

  • Heat oil in a large skillet on medium high heat.
  • Add cubed chicken and brown chicken until cooked through and it is no longer pink.
  • While Chicken is browning, prepare your teriyaki sauce! In a medium size mixing bowl whisk together soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch.
  • Once Chicken is browned and cooked through, add your homemade teriyaki sauce to your skillet and continue to cook stirring until the sauce has thickened.
  • Serve immediately with white or brown rice and vegetables of your choice. Garnish with sesame seeds and green onion

1 rotisserie chicken, white and dark meat shredded
10 to 12 ounces steamed broccoli (the freezer section works!)
3/4 cup teriyaki sauce
1/2 cup shredded carrots
Zest of 2 lemons plus 1/4 cup lemon juice
1 tablespoon grated fresh ginger
1 tablespoon dark brown sugar
1/2 teaspoon red chile flakes
2 scallions, white and green parts, chopped
1 clove garlic, grated on a rasp grater
Freshly cracked black pepper
4 cups cooked sushi rice
4 sunny-side up eggs
1/2 cup crushed French-fried onions

Steps:

  • Add the chicken and broccoli to a large bowl and set aside.
  • In a pot on medium heat, add the teriyaki sauce, carrots, lemon zest and juice, ginger, brown sugar, red chile flakes, scallions, garlic and some black pepper. Cook, stirring, until the mixture bubbles and the sugar is melted, about 5 minutes. Pour the hot sauce over the chicken and broccoli and toss to coat.
  • Scoop rice evenly into 4 bowls and top with some of the chicken and broccoli mixture, an egg and a sprinkle of French-fried onions.

4 cups baby spinach (about 2 ounces)
8 ounces sugar snap peas, trimmed and halved
1 orange bell pepper, cut into strips

4 scallions, thinly sliced
1/2 cup fresh basil leaves, thinly sliced
2 cups shredded rotisserie chicken (skin removed)

Steps:

1 cup uncooked brown rice* (see first note)
water** (see second note)
6 (3-4 ounce) boneless skinless chicken thighs
¼ cup light soy sauce
¼ cup mirin
2 garlic cloves, minced
1-inch fresh ginger root, grated
1 tbsp brown sugar
1 tbsp cornstarch
1 tbsp vegetable oil
1 tbsp vegetable oil
3 garlic cloves, minced
1½ lb. (2 bunches) kale, stems removed and chopped
¼ cup water
Salt and pepper
¼ cup toasted sesame seeds
¼ cup furikake (Japanese rice seasoning)

Steps:

  • For the rice. Cook the rice according to package directions.
  • For the teriyaki chicken (Part 1). As the rice cooks, in a medium bowl, whisk together the soy sauce, mirin, garlic, ginger, brown sugar, and cornstarch until well combined.
  • Place the chicken thighs in a large ziploc bag and pour the sauce over the chicken. Squeeze out excess air before sealing the bag. Gently squeeze the bag with your hands, making sure that the marinade coats the chicken.
  • Place the bag flat on a baking sheet and marinade the chicken in the refrigerator for 20 minutes.
  • For the garlicky kale. As the chicken marinades and the rice cooks, heat a large nonstick skillet to medium heat, add vegetable oil, and stir in garlic until lightly golden. Add in kale and water, and carefully stir to combine until the kale starts to wilt. Cover and let it steam for 5 minutes.
  • Remove the lid, season with salt and pepper, and stir occasionally until the liquid has mostly evaporated and the kale is tender, about 2-3 minutes. Remove from heat and set aside.
  • For the teriyaki chicken (Part 2). Heat a large non-stick skillet to medium-high heat, add vegetable oil and swirl to coat the skillet. Place the chicken thighs (along with the marinade) in the skillet so that they are not touching.
  • Cook the chicken, spooning the marinade (sauce) over the chicken occasionally and flipping once, about 6-8 minutes on each side or until completely cooked through.
  • Remove the chicken from the skillet onto a cutting board and let it rest for 5 minutes before slicing.
  • Assemble the bowls. Evenly divide the ingredients into separate bowls or containers***(see third note). Sprinkle chicken and kale with sesame seeds and rice with furikake if you like. Serve immediately or let it cool completely before sealing with a lid for meal prep or leftovers.

1 cup cooked white rice or 1 cup brown rice
1 (4 ounce) boneless skinless chicken breasts (seasoned)
3/4 cup chopped vegetables (carrots, broccoli, zucchini, celery, cabbage or your favorites)
1 teaspoon sesame oil
1/4 cup teriyaki sauce
srirachi chili-garlic sauce
thin sliced green onion, optional garish
sesame seeds, optional garnish

Steps:

  • Grill chicken breast (about 8-10 minutes in a grill pan or skillet) or bake in oven (350° for about 30 minutes).
  • Pour sesame oil in hot wok or skillet and sauté vegetables for about 3 minutes.
  • Mix teriyaki sauce and a few drops of srirachi chili garlic sauce together. Chop chicken breast into slices and pour teriyaki sauce over chicken. Place rice in the bottom of a large bowl. Put sautéed vegetables over rice. Top off bowl with seasoned chicken. Garnish with sliced green onions and/or sesame seeds.

1 lb boneless, skinless chicken breast
salt, to taste
white pepper, to taste
2 tablespoons water
1 ½ teaspoons cornstarch
¼ cup soy sauce
2 tablespoons brown sugar
1 teaspoon fresh ginger, minced
1 teaspoon garlic, minced
1 tablespoon honey
1 teaspoon sesame oil
1 tablespoon mirin
2 tablespoons cooking oil
1 cup bell pepper, julienned
1 cup carrot, julienned
4 cups short grain rice, cooked
3 eggs, beaten
2 cups panko breadcrumbs
1 cup scallion, thinly sliced

Steps:

  • In a large measuring cup, combine water and cornstarch. Stir until combined and add soy sauce, brown sugar, ginger, garlic, honey, sesame oil, and mirin. Mix well.
  • Season sliced chicken breast with salt and pepper, then pour ¼ cup (60 ml) of the sauce over the sliced chicken just until covered, and set aside. Mix the sauce with the sliced chicken, cover, and marinate in the refrigerator for at least 30 minutes.
  • In a large skillet over medium-high heat, pour the rest of the sauce and stir occasionally as it comes to a boil. Once boiling, reduce heat to low and simmer for 10 minutes, or until the sauce has thickened. Set aside in a bowl.
  • In the same skillet, add 1 tablespoon cooking oil and raise heat back to medium-high. Place sliced chicken pieces in the pan and cook for 3 minutes, flip, and cook an additional 3 minutes. Pour 1 tablespoon of the reduced sauce over the chicken and stir. Remove from the pan and set aside.
  • Add the remaining cooking oil into the skillet and add the julienned vegetables. Season with salt and white pepper, and cook 3-4 minutes or until vegetables have softened. Add back the chicken and gradually add just enough sauce to coat the chicken and vegetables.
  • Take ⅓ cup (65 g) of cooked rice and flatten out on a piece of plastic wrap. Layer the cooked chicken and vegetables in the center of the rice and wrap the rice around the fillings. Form into a square shape and repeat with the remainder of the rice and filling. Chill rice balls in the refrigerator for 30 minutes.
  • Dip the rice ball in beaten eggs, then coat with panko. Shake off any excess bread crumbs.
  • Heat ½ inch (1 cm) oil in a skillet to 350˚F (180˚C) and fry for 3 minutes on each side or until golden and crispy. Move to a cooling rack, and season with salt.
  • Cut in half and serve with the remaining sauce for dipping.
  • Enjoy!
