SOUTHERN STYLE CORNBREAD DRESSING

This Southern Style Cornbread Dressing is the perfect side dish for your next holiday gathering. It's savory, flavorful and so easy!

Cornbread (enough to fill a 9x13)
1 sleeve ritz or saltine crackers
3 medium eggs (lightly beaten)
1 large yellow onion (diced)
5 cloves garlic (minced)
5 sage leaves (OR 2 1/2 tsp ground sage)
2 tbsp olive oil
4-6 cups chicken broth
14 oz cream of chicken
2 tsp seasoning salt
1 tsp coarse black pepper
1 tsp thyme leaves
3 stalks celery (chopped)

Steps:

  • Start chopping, and dicing all of the vegetables such as the celery, onions, and garlic. Also chop up the fresh sage.
  • Next, drizzle the olive oil into a large pan, then place the pan over medium heat.
  • Once the oil is nice and hot add in the onions, celery, and garlic. Cook until nice and tender.
  • Now toss in the fresh sage. Continue to cook for 2 minutes. Turn the heat off.
  • Crumble the cornbread into a large mixing bowl, along with the crackers.
  • Now add in the cooked vegetables. Fold the ingredients until everything is well combined.
  • Now pour in the broth followed by the cream of chicken soup.
  • Add in the eggs, and mix everything until well combined.
  • Sprinkle in the seasoning salt, thyme and pepper.
  • Now mix until well combined.
  • Preheat the the oven to 350 F.
  • Lightly oil a 9x13 bake dish, then pour in the dressing mixture.
  • Bake the dressing uncovered for about 45 minutes.
  • Serve and enjoy!

This is my favorite Cornbread Dressing I use for special holidays. I make my own white bread using my bread machine and my own Skillet Cornbread to use in this recipe. If you prepare the bread ahead of time, you can freeze them until ready to use. I really like this dressing. It is easy to do and has a great flavor. I like to add fresh mushrooms to the mix. 2 cups chopped onions
2 cups chopped celery
1/2 cup butter
4 cups finely crumbled toasted bread (I use homemade)
4 cups finely crumbled cornbread (see recipe I posted for Skillet Cornbread)
1 tablespoon salt
2 teaspoons freshly ground black black pepper
1 tablespoon dried sage
2 teaspoons poultry seasoning
turkey broth (from simmering turkey giblets with 3 1/2 cups water for 45 minutes. You can use unused portion to ma)
4 large eggs, beaten

Steps:

  • Melt butter in a skillet; add the onions and celery and saute until tender.
  • Combine toasted bread and cornbread in a large bowl and mix.
  • Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry seasoning and mix throughly.
  • Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
  • Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.

1 (3 pound) whole chicken
10 cups crumbled cornbread
8 biscuits, crumbled
2 (10.75 ounce) cans condensed cream of chicken soup
1 cup chopped onion
1 cup chopped celery
1 teaspoon salt
2 teaspoons ground black pepper
1 teaspoon ground sage
8 eggs, beaten

Steps:

  • Place chicken in a small pot with enough water to cover. Bring to boil, reduce heat, and simmer for 30 minutes or until chicken is done.
  • Remove chicken from pot, set aside to cool. Remove skin and bones; chop meat and save for dressing. Strain, and reserve broth.
  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease two 4-quart casserole dishes.
  • In a large bowl, combine cornbread, biscuits, chicken soup, onion, celery, salt, pepper, sage and eggs. Stir well. 30 minutes before baking, add a desired amount of reserved chicken and enough broth to soak dressing. Divide dressing between prepared baking dishes.
  • Bake in preheated oven until top is browned and center is firm, about 30 minutes.

1/4 cup plus 2 tablespoons vegetable shortening
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
1/2 cup milk
1 large egg
1 loaf crusty French bread, cut into 1-inch cubes (about 8 cups)
1 stick unsalted butter
4 stalks celery, finely diced (leaves included)
2 carrots, finely diced
1 large onion, diced
4 cups low-sodium chicken broth, plus more if needed
2 teaspoons chopped fresh rosemary
1/2 teaspoon dried thyme
1/4 teaspoon ground sage
1/8 teaspoon turmeric (optional)
Kosher salt
1/4 cup chopped fresh parsley

Steps:

  • The day before making the stuffing, bake the cornbread: Preheat the oven to 450 degrees F. Melt 2 tablespoons shortening in a 9-inch cast-iron skillet over medium heat. Meanwhile, combine the cornmeal, flour, baking powder, salt and baking soda in a large mixing bowl. In a separate bowl, whisk the buttermilk, milk and egg until combined. Slowly incorporate the wet ingredients into the dry, stirring until combined. Melt the remaining 1/4 cup shortening in the microwave and add to the batter, stirring constantly. Pour the batter into the hot skillet, smoothing the surface with a rubber spatula. Bake until golden brown, 20 to 25 minutes. Let the cornbread cool in the skillet, then cut into 1-inch cubes.
  • Spread the cornbread and French bread cubes on 2 baking sheets and let dry at room temperature, uncovered, until totally crisp, about 24 hours. Transfer to a large bowl and toss to mix them up a bit.
  • Make the stuffing: Preheat the oven to 350 degrees F. Melt the butter in a large skillet or Dutch oven over medium heat. Add the celery, carrots and onion and cook until the onion is almost translucent, about 6 minutes. Add the chicken broth and bring to a boil. Reduce the heat to low and add the rosemary, thyme, sage and turmeric. Gradually ladle the broth mixture into the bowl with the bread, tossing gently. Taste as you go and add salt carefully. If the mixture is not moist enough, add a bit more chicken broth. Stir in the parsley.
  • Transfer the mixture to a 9-by-13-inch baking dish. Bake until golden brown, 20 to 25 minutes. Let rest 10 minutes before serving.

2 tablespoons butter
½ cup chopped celery
1 small onion
2 eggs, beaten
2 cups chicken stock

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking dish.

8 tablespoons butter, divided
1 large Vidalia or Spanish onion, chopped (about 1 cup)
Kosher salt and freshly cracked black pepper
3/4 cup water
6 cups cubed (1-inch pieces) store-bought or homemade cornbread, about 1 pound
1/3 cup fresh sage leaves, about 12, stems removed
2 large eggs, beaten

Steps:

  • Preheat oven to 375 degrees F.
  • In a large skillet over medium heat, melt 2 tablespoons of the butter; add the onions and season with salt and pepper, to taste. Cook, stirring often, until light golden, about 6 to 8 minutes and remove from the pan to a small plate. Raise the heat to medium-high and add the water, scraping up the brown bits from the bottom of the skillet and allowing the water to simmer just a couple of minutes to infuse in the onion flavor. Remove from the heat.
  • Put the cornbread in a large mixing bowl. Melt the remaining 6 tablespoons butter in a small pan over medium heat and let it bubble until the milk solids to start to turn golden. Add the sage leaves and briefly fry until beginning to crisp, about 30 seconds. With a slotted spoon, remove sage and put on top of cornbread to drain and crisp. Remove the butter from the heat. Add the eggs and cooked onions to the cornbread and pour the browned butter over the mixture. Season with salt and pepper, to taste. Add the onion infused water, a tablespoon at a time, gently folding, until cornbread is evenly moistened but not soggy. Pour the dressing into a 9 by 11-inch baking dish and bake in the preheated oven until the top is golden brown in color and the dressing is set in the middle, about 30 minutes.

While most dressing recipes call for the bread to be toasted, here it just needs to be at room temperature. However, if you would like to start with day-old bread, that works too!

6 tablespoons unsalted butter, cut into pieces
1 small white onion, finely diced
1 medium green bell pepper, finely diced
1 medium stalk celery, finely diced
1 clove garlic, chopped

1/2 cup cooked turkey giblets (see Cook's Note), finely chopped
1 tablespoon ground sage
1 tablespoon fresh thyme leaves, chopped

Steps:

  • For the dressing: Preheat the oven to 425 degrees F.
  • Put the crumbled cornbread in a large bowl and set aside.
  • Melt 4 tablespoons of the butter in a 10-inch cast-iron skillet over medium-high heat. Add the onion, green pepper, celery, garlic, 1 teaspoon salt and a generous amount of black pepper and cook, stirring occasionally, until the vegetables are tender, 5 to 7 minutes. Stir in the giblets, sage and thyme until just heated through, 1 to 2 minutes. Transfer to the large bowl, add the eggs and fold into the cornbread until well combined. Wipe the skillet clean and set aside.
  • Add 1/4 cup of the stock at a time to the bowl and fold after each addition until the mixture looks like batter (1 1/2 cups stock should be plenty). Transfer the dressing to the skillet and dot the top with the remaining 2 tablespoons butter. Bake until the eggs are cooked through and the top is golden brown, about 20 minutes.
  • Meanwhile, make the gravy: Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook, stirring constantly, until golden brown, 5 to 7 minutes. Slowly pour in the stock, whisking constantly, until well combined. Season with 1/2 teaspoon salt and a generous amount of black pepper. Bring to a simmer and cook, stirring occasionally, until the flour taste is gone and the gravy has thickened, about 15 minutes. Fold the giblets, egg and heavy cream into the gravy. Season with 1/2 teaspoon salt and a few grinds of pepper. Serve alongside the dressing.
  • Preheat the oven to 425 degrees F. Spray a 10-inch cast-iron skillet with cooking spray.
  • Whisk together the cornmeal, flour, baking powder, baking soda and 1 teaspoon salt in a medium bowl until combined.
  • Whisk the buttermilk, melted butter, eggs and brown sugar in a large bowl until smooth. Fold in the cornmeal mixture until just combined (it should be a bit lumpy).
  • Transfer the batter to the prepared skillet and dot the top with the remaining 2 tablespoons butter. Bake until the top is golden brown and a toothpick inserted into the center comes out clean, about 22 to 25 minutes. Let cool in the skillet for 10 minutes, then invert the bread onto a rack to cool completely, about 30 minutes.

2-1/2 cups of day-old cornbread, crumbled
1 slice of day-old bread, crumbled (regular or gluten-free)
1-1/2 cup of chicken or turkey broth
1/2 cup of chopped onion
1/2 cup of chopped celery
1 egg
1/4 cup of milk
1 tablespoon of butter
1 teaspoon of sage
1/2 teaspoon of salt
Dash of pepper

Steps:

  • Preheat the oven to 400 degrees F. Spray a 7" x 11" or 8" x 8" baking dish with nonstick cooking spray.
  • Melt the butter in a medium saucepan. Add the chopped onion and celery. Sauté until the onion is translucent.
  • Add the salt and pepper. Give it a quick stir.
  • Remove from the heat, add the sage, and stir again. Set it aside.
  • Pour the crumbled cornbread and bread into a large mixing bowl.
  • In a small bowl, whisk the egg and milk until it is well mixed. Pour the mixture into the large bowl with the cornbread and mix.

  • Now add the sautéed onion and celery.

8 ½ oz cornbread mix (Jiffy Corn Muffin Mix, 1 box)
¼ cup sugar (granulated (*can be omitted if you don't prefer cornbread sweet))
4 tablespoons butter (unsalted )
3 oz cream cheese (whipped cream cheese)
4 oz heavy whipping cream
¼ cup butter (unsalted )
2 tablespoons butter (unsalted )
1 cup yellow onion (diced)
1 cup celery (diced)
1 tablespoon thyme (fresh or dried)
1 tablespoon rosemary (fresh or dried)
1 teaspoon sage (ground)
¼ cup parsley (finely chopped)
½ cup chicken stock (or chicken broth (Use vegetable broth to make this dish vegetarian.))
1 teaspoon salt
½ teaspoon black pepper
1 egg (large)

Steps:

  • Preheat the conventional oven or Instant Pot Omni Plus oven to bake at 350 degrees for 10 minutes (although you may not use all of this time for melting the butter).
  • Place the 4 tablespoons of butter in an 8-inch skillet and melt in the oven for approximately 5 minutes.
  • While the butter is melting, combine the Jiffy cornbread mix, sugar, cream cheese, and heavy cream in a medium-size mixing bowl.
  • Pour the melted butter from the skillet into the mixing bowl and mix all the ingredients together.
  • Pour the cornbread mixture into the skillet.
  • Bake at 350 degrees F. In the conventional oven for 25-30 minutes. Instant Pot Omni Plus oven for 23-25 minutes.
  • When the baking time has finished, allow the cornbread to cool for approx 10 minutes.
  • Cut the bread lengthwise and then across into 1-inch bread cubes and set aside.
  • Grease an 8″ or similar-sized baking dish and set it aside.
  • Remove the lid from the Instant Pot and turn on the sauté setting for 8 minutes.
  • With the lid off, melt ¼ cup of butter.
  • Add the chopped onion, celery, thyme, rosemary, and sage.
  • Stir to coat the vegetables in the herbs and melted butter and then sauté until they soften and slightly brown.
  • Add the chicken stock, salt, and pepper to the inner pot's simmer, and stir to combine.
  • Remove the herb mixture from heat and set aside.
  • Allow the mixture to cool to the touch so that it can be mixed with the egg. (You don't want the egg to cook from the residual heat and scramble!)
  • While the herbs are cooling off, beat the egg with the parsley in a medium-sized bowl.
  • Gently fold in the cornbread cubes to coat with the egg.
  • Pour in the cooled herb mixture into the egg mixture.
  • Transfer the mixture to the pre-greased baking dish.
  • Cut the 2 tablespoons of butter into small pats and place them all around on top of the dressing.
  • Cover the baking dish with foil and bake at 350 degrees F. 35 minutes in the conventional oven. In the Instant Pot Omni Plus oven for 30 minutes.
  • Uncover and bake until golden, 10-15 more minutes (conventional oven), 10 minutes (Instant Pot Omni Plus oven).
  • Serve cornbread dressing warm, and enjoy!
  • Optional - serve with gravy on top.

2 c chopped celery
2 c chopped onion
2 Tbsp sage
1 Tbsp poultry seasoning
1/2 c butter
2 eggs, beaten
8 c crumbled cornbread
1 qt chicken broth (32 oz)
1 tsp salt
1 tsp pepper

Steps:

  • 1. Melt butter in a heavy skillet; add celery and onion. Saute 5 minutes or until onion and celery are tender.
  • 2. In a large mixing bowl combine crumbled cornbread and broth.
  • 3. Season with salt, pepper, sage, and poultry seasoning.
  • 4. Stir in celery and onions.
  • 5. Add eggs and mix well.
  • 6. Pour into a large baking dish.
  • 7. Cover and bake at 400 degrees for 35-40 minutes. Remove cover during last 15 minutes of cook time to brown top.

my husband likes cornbread dressing, I find it dry. A friend gave me this recipe 35 years ago and it is still my favorite. And so easy! I use Pepperidge Farm Herb Seasoned Stuffing mix.

1 3/4 cups crumbled cornbread (from a mix is good)
1 3/4 herb seasoned stuffing mix
1 teaspoon sage
1 cup chopped celery
1/2 cup chopped onion
1/4 cup butter
1 (10 3/4 ounce) can cream of mushroom soup

Steps:

  • Mix together corn bread crumbs, stuffing mix, sage, celery and onion in large bowl.
  • Heat the butter and soup together in saucepan. When butter is melted add this to the dressing mixture. Toss lightly.
  • I make it in advance and store it in a zip lock bag in refrigerator.
  • Stuff turkey or put it in an oven proof bowl(Add a little broth to it). Bake until heated through.
