SOUR CREAM & DOUBLE-CHEESE MASHED POTATOES
We added garlic to these mashed potatoes along with sour cream and two kinds of cheese. (As if creamy and cheesy weren't enough to thrill the crowd!)

Steps:
- Cook potatoes and garlic in large saucepan of boiling water 15 min. or until potatoes are tender. Transfer potatoes and garlic to large bowl with slotted spoon, reserving cooking water in pan. Add broccoli to water in pan. Return water to boil; cook 2 to 3 min. or until broccoli is crisp-tender. Drain.
- Mash potatoes. Add cheeses, sour cream and pepper; mix well.
- Stir in broccoli.

SOUR CREAM CHEDDAR MASHED POTATOES
Steps:
- Cook the potatoes in a large pot of salted water until a sharp knife can easily be inserted.
- Drain and allow to stand, uncovered, for 5 minutes for any steam to evaporate then peel the potatoes.
- While the potatoes are cooking, heat the milk with the pepper, thyme and bay leaf in a saucepan.
- As soon as the milk starts to simmer, remove from the heat and allow to infuse.
- Remove the herbs and peppercorns from the milk then pour over the potatoes. Add the butter and mash. Stir in the sour cream and cheddar then season to taste with salt.
- Transfer the potatoes to a serving dish and add a knob of butter and a crack of black pepper to the top.

- Place potatoes in a large pot and cover with water. Bring to a boil and generously salt water.
- Simmer until potatoes are tender, about 20 minutes.
- Drain well. Mash potatoes together with cream cheese, sour cream, chives, salt and pepper. Beat with an electric mixer until smooth.

- Peel and cut the potatoes into large cubes and boil in salted water until tender.
- Meanwhile, beat the cream cheese, then stir in the sour cream, milk and spices.

- Place potatoes and 1 1/2 tablespoons of the salt in a large stock pot. Add enough cold water to cover potatoes by 2 inches. Bring to a boil over high heat. Reduce heat to medium-high and boil until potatoes can be easily pierced with a fork, about 15 minutes.
- Meanwhile, place salted butter and garlic in a small saucepan over low heat. Cook, stirring occasionally until garlic is fragrant and white milk solids have separated from butter, 2 to 3 minutes. Remove from heat and cover to keep warm.
- Remove potatoes from heat and drain in a colander. Return potatoes to the pot; add milk, sour cream, unsalted butter, 2 teaspoons salt, and pepper. Mash using a potato masher until smooth. (Avoid over-mashing or the starches will form a glue-like texture.) Transfer to a serving bowl.
- Pour garlic butter through a fine mesh strainer into a small bowl. Discard milk solids and garlic. Pour butter over mashed potatoes and sprinkle with scallions.
