This Kielbasa and Cabbage Skillet is a fast and hearty weeknight dinner full of fiber and flavor! Serve with noodles or as is for a lower carb meal.

1/4 cup olive oil ($0.52)
2 Tbsp red wine vinegar ($0.20)
1.5 Tbsp stone ground or whole grain mustard ($0.09)
1/4 tsp garlic powder ($0.02)
1/4 tsp salt ($0.02)
Freshly Cracked Pepper ($0.05)
1 Tbsp olive oil ($0.13)
14 oz. kielbasa ($2.49)
1 yellow onion ($0.32)
6 cups chopped cabbage (1 small head, 2.25 lbs) ($1.59)
pinch salt and pepper ($0.05)

Steps:

  • Prepare the vinaigrette by adding the olive oil, vinegar, mustard, garlic powder, salt, and some freshly cracked pepper to a bowl or jar. Whisk or shake the jar until the ingredients are combined, then set the vinaigrette aside.
  • Slice the kielbasa into medallions or half-rounds and add them to a large skillet (12" or larger) or a large, wide-bottomed pot, along with the olive oil. Sauté the sausage over medium heat until the pieces are well browned.
  • While the sausage is browning, finely dice the onion. Once the sausage has fully browned, add the onions and continue to sauté until the onions are soft and transparent.
  • While the onions are sautéing, chop the head of cabbage into 2-inch by 1/2-inch wide strips. Add the cabbage to the skillet or pot along with a pinch of salt and pepper. Continue to sauté until the cabbage is tender (check the thickest white pieces for tenderness). To help the cabbage soften, add a few tablespoons of water to create steam within the pot or skillet. Let the water evaporate as you sauté the cabbage.
  • Once tender, drizzle the mustard vinaigrette over the skillet, starting with just half of the prepared amount. Stir to coat the kielbasa and cabbage in the vinaigrette, taste, and add more if needed. Serve warm.

1/2 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
1/2 small head cabbage, coarsely chopped (about 3 cups)
1/4 cup chicken broth or water
Salt to taste, optional
Pepper to taste

Steps:

  • In a large skillet, saute onion and green pepper in butter until crisp-tender. Add sausage; cook and stir until browned. Add the cabbage, broth, salt if desired and pepper. Cover and cook 10-12 minutes or until cabbage is tender.

1 onion, peeled and diced
1 head savoy cabbage, shredded
1 (15 ounce) can sliced potatoes
1 ½ pounds kielbasa sausage
3 tablespoons red wine vinegar
salt and pepper to taste
½ cup water

Steps:

  • Saute margarine and onions in a large skillet until the onions are soft.
  • Stir cabbage and potatoes into the skillet and saute until the cabbage becomes wilted. Place the kielbasa, wine vinegar, salt and pepper into the skillet. Cook kielbasa covered over a low heat, stirring occasionally until cooked through. Pour the water into the pan, cover and cook another 10 minutes before serving.

1 head cabbage, chopped

1 (16 oz) ring kielbasa sausage, sliced thin

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble. Reserve drippings in skillet.

6 slices bacon
¼ cup water
2 tablespoons white sugar
1 onion, chopped
2 teaspoons minced garlic
¼ teaspoon crushed red pepper flakes
¼ teaspoon seasoning salt

1 pound Polish kielbasa

Steps:

  • In a large skillet, fry bacon over medium high heat until browned, turning once. Remove bacon from pan, reserving drippings, and place on paper towels.

1 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
4 tablespoons butter, divided
1 large head cabbage (4 pounds), coarsely chopped
2 medium onions, chopped
4 cans (8 ounces each) tomato sauce
1/3 cup sugar
1 tablespoon paprika
3 to 4 large potatoes, peeled and cubed

Steps:

  • In a Dutch oven, brown sausage in 2 tablespoons butter; remove and set aside. In the same pan, saute cabbage and onions in remaining butter until onions are tender. , In a small bowl, combine the tomato sauce, sugar and paprika; pour over cabbage mixture. Bring to a boil. Reduce heat; cover and simmer for 20 minutes. Add the potatoes and reserved sausage. Cover and simmer for 30 minutes or until potatoes are tender.

I love pierogies and they finish this cabbage-kielbasa saute perfectly. I know there are plenty of really good cabbage, kielbasa and potato recipes, but the pierogies in this dish just melt in your mouth. Not a diet dish, but a delicious comfort food meal. I got the recipe from a PBS home cooking special and have loved it ever since. Note that cooking start times overlap in this recipe. Reduce the amount of butter if desired.

12 frozen potato and onion pierogies (1 box)
8 tablespoons butter or 8 tablespoons margarine
1 large onion, coarsely chopped
1 head cabbage, at least 2 1/2 lbs, cored & coarsely chopped
salt and pepper
1 lb kielbasa, sliced 3/8 - 1/2 inch thick

Steps:

  • Bring a large pot of water to a boil. Add pierogies and boil for 5-7 minutes. Pierogies should float to the surface when they are done, but that's not always true with today's frozen products - some float right away or within a minute or two. Ignore that event and boil for at least 4-5 minutes to fully cook the filling.
  • Remove pierogies with a slotted spoon and drain well.
  • While the water is heating for the pierogies, melt butter in a large skillet over medium high heat. Add onion and saute until it softens, 3 - 5 minutes.
  • Add cabbage and saute mixture 5 more minutes. Season generously with salt and pepper.
  • Stir in sliced kielbasa and continue to cook until cabbage is done and kielbasa flavors have melded with the mixture.
  • Reduce temperature to warm. Place cooked pierogies atop cabbage and season with pepper.
  • Spoon some of the cabbage mixture over the pierogies to help them reheat. The dish is ready when the pierogies are heated through. Serve warm.
