A handful of basic ingredients combined with storecupboard artichokes and you've got a speedy supper with a touch of lux

6 tbsp extra virgin olive oil
1 small onion , very finely sliced
200g waxy potatoes , peeled or unpeeled, cut into slices
200g artichoke hearts from a can, drained (see tip)
2 garlic cloves , crushed
¼ tsp chilli flakes (or less if you want less heat)
2-4 eggs (depending on your appetite)
1 tbsp chopped flat-leaf parsley

Steps:

  • Heat 4 tbsp of the olive oil in a large frying pan over a medium heat and add the onion and potatoes. Fry for 12-15 mins or until the potatoes are soft right through and everything is golden.
  • Add the artichoke hearts, garlic, chilli and seasoning, and cook for another 2 mins or so. Meanwhile, heat the rest of the oil in another pan and fry the eggs, scooping the hot oil up over them to help cook the yolks.
  • Stir the parsley into the potatoes and artichokes, and check the seasoning. Serve with the fried eggs on top.

2 large artichokes (about 1 pound each)
3 cloves garlic, chopped
2 tablespoons butter

Steps:

  • Rinse artichokes under cold water, and use a sharp knife to cut the top 1/3 off of each one. Trim the stems to about 1 inch, and remove the smaller leaves from around the base. Use scissors to remove any remaining leaf tips. Cut each artichoke in half from the bottom to the top, then use a spoon to scrape out the hairy choke. Rinse again to remove any residual hairs.
  • Melt the butter in a large skillet over medium heat. Add the garlic, and saute for about 1 minute to flavor the butter. Arrange artichoke halves cut-side down in the skillet. Saute for about 5 or 10 minutes, or until lightly browned. Reduce heat to low, and pour in about 1/4 cup of water, cover, and let steam for 15 to 20 minutes, or until the artichokes are tender. A fork should easily pierce the stem.

1 tbsp olive oil
3 cloves garlic (minced)
½ cup white wine
3 tbsp lemon juice
6 tbsp butter
1 pinch salt
¼ tsp black pepper
2 (14oz) cans artichoke hearts (drained and cut in half)
1 tbsp parsley (finely chopped)
¼ cup green onion (thinly sliced)

Steps:

  • In a medium-sized nonstick pan heat the olive oil over a medium heat.
  • Add the garlic and stir for a minute making sure not to let the garlic turn brown.
  • Add the white wine and simmer for 2-3 minutes to cook off the alcohol.
  • Pour in the lemon juice and stir.
  • Cut the butter into cubes and add to the pan gradually making sure to whisk constantly.
  • Season with salt and black pepper.
  • Carefully add the artichoke hearts and gently toss in the sauce to warm for about a minute.
  • Transfer the artichoke hearts and sauce to a serving platter and garnish with the parsley and green onions.
  • Serve at once.

Steps:

  • Preheat oven to 425°F and line a rimmed baking sheet with parchment paper or coat lightly with cooking spray.

Steps:

  • Preheat oven to 425 degrees. Drain or defrost artichoke hearts then place in a single layer on top of several paper towels. Cover with a few more sheets of paper towel then press firmly enough to remove excess water without crushing them.
  • In a medium-sized mixing bowl, stir together olive oil, garlic, salt and pepper. Add artichoke hearts and toss to coat evenly. Transfer to a large baking sheet.

2 tablespoons fresh lemon juice (about 1/2 a lemon)
1 medium sweet onion, finely chopped
1 tablespoon extra-virgin olive oil
6 plum tomatoes, seeded and diced
1 1/2 teaspoons Italian seasoning
2 tablespoons fresh basil leaves, shredded
Kosher salt and freshly ground black pepper

Steps:

  • In a bowl, combine and toss drained and rinsed artichoke bottoms with lemon juice. Set aside.
  • In a large frying pan over medium heat, sweat onions in oil until translucent. Add tomatoes and cook until heated through, about 1 minute. Stir in Italian seasoning and shredded basil leaves. Add in artichoke bottoms with lemon juice and sprinkle with salt and pepper. Cover pan and reduce heat to low. Simmer for 10 minutes.

3 large artichokes
6 skinless boneless chicken breast halves
1/4 cup all purpose flour
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 tablespoons olive oil, divided
1/2 cup minced shallots (about 2 large)
1/3 cup dry white wine
1 cup low-salt chicken broth
4 teaspoons chopped fresh tarragon plus additional for sprinkling
3 tablespoons chilled butter, cut into 1/2-inch cubes

Steps:

  • Squeeze 1 lemon half into large bowl of cold water. Working with 1 artichoke at a time, trim all but 1 inch from artichoke stem. Break off all dark green leaves from artichoke until only pale green leaves remain. Using large serrated knife, cut off top 2/3 of leaves from artichoke. Rub cut edges with other lemon half. Using paring knife, trim any dark green parts from outer heart and stem. Quarter artichoke through stem. Using spoon, scrape out fuzzy choke. Thinly slice artichoke heart and place in bowl of lemon water. Repeat with remaining artichokes.
  • Place chicken breasts between 2 sheets of plastic wrap. Using mallet, pound to 1/2- to 1/3-inch thickness. Whisk flour, salt, and pepper in small bowl. Dredge chicken breasts in flour mixture; shake to remove excess. Place on plate.
  • Heat 1 tablespoon olive oil in heavy large skillet over medium-high heat. Add 3 chicken breasts and cook until golden brown and just cooked through, about 3 minutes per side. Transfer chicken to another plate. Repeat with 1 tablespoon oil and remaining chicken breasts.
  • Add remaining 1 tablespoon oil to same skillet. Add shallots; sauté until beginning to soften, about 1 minute. Drain artichokes; add to skillet and sauté until beginning to soften, about 3 minutes. Add wine to skillet and simmer until wine is almost absorbed, scraping up any browned bits, about 1 minute. Add chicken broth and 4 teaspoons tarragon; cover and simmer until artichoke hearts are tender, about 5 minutes. Season sauce with salt and pepper. Return chicken breasts with any accumulated juices to skillet. Gently toss to combine. Remove skillet from heat. Add butter and stir gently until butter is melted. Transfer to platter. Sprinkle with additional tarragon and serve.

  • Trim your artichokes. Cut off 1/3 from the top of the artichoke, trim the stem and then remove any and all tough outer leaves. You will need to remove more leaves than you think, just keep going until you see the tender inner leaves that are a nice light pale green.

  • 2. Trim artichokes. Cut off the stem, cut off the top 1/3 of the artichoke and peel off the tough green outer leaves until you get to the lighter colored, softer leaves. Yes, you have to peel through a lot of the leaves to get to the good stuff — don't be shy about it. Use a paring knife to remove any leaves or tough spots around the stem. Cut the artichokes in half lengthwise.
  • 3. Artichokes will oxidize immediately, so to prevent browning, as soon as you've trimmed each one, place it in the olive oil and lemon mixture and toss so it's covered.
  • 4. Heat a sauté pan over medium heat. Use a pan that has a lid. Add artichokes and olive oil mixture to the pan. Use tongs to turn the artichoke halves cut-side down. Let sauté without disturbing for about 3-4 minutes, until artichokes are browned. Use tongs to turn them over. Add 1/4 cup water and immediately put the lid on and let artichokes steam for another three minutes. Add 1/4 cup of water again and let steam another 3 minutes. Poke a couple artichokes with a fork to make sure they are completely tender. If not, add a little more water and steam for another couple minutes. Place them on a plate and make the pan sauce.
