8 links pork sausage
1 onion, chopped
3 tablespoons all-purpose flour
2 ½ cups water
2 cubes beef bouillon
1 tablespoon Worcestershire sauce
2 tablespoons tomato sauce
salt and pepper to taste

Steps:

  • Boil sausages in large pan of water for 5 minutes; drain and peel off skin. Chop up sausages.
  • Heat oil in a large fry pan and fry onion until soft and golden. Remove pan from heat and add flour. Stir slowly adding water until well combined. Return to heat and bring to boil, stirring. Add beef cubes, Worcestershire sauce, tomato sauce, salt and pepper; mix well.
  • Reduce heat and add cooked sausages. Cover and simmer for 20 minutes.

4 onions , cut into thin wedges
2 tbsp balsamic vinegar
8 sausages
300ml / ½ pint beef stock
1 tbsp Worcestershire sauce
mashed potato and green beans, to serve

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the onions into a roasting tray and drizzle with the vinegar and seasoning. Sit the sausages on top and roast for 30 mins, stirring halfway.
  • Pour over the stock and Worcestershire sauce, return to the oven and cook for 10 mins more. Serve with the mash and green beans.

400g pack sausages
1 batch Basic sticky onions (see recipe underneath)
1 tbsp plain flour
1 sprig thyme, leaves picked
400ml beef stock
splash Worcestershire sauce
50g butter
12 medium onion
1 tsp sugar

Steps:

  • Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
  • For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

Recipe video above. Everybody loves a good sausage recipe, and this is the great British classic! Affectionately known as "Bangers and Mash" to Aussies and Brits, this is so easy to make, you will never ever use a store bought gravy powder!

1/2 tbsp oil
8 sausages of choice ((Note 1))
1 large onion (, halved and finely sliced (yellow, white or brown) (Note 2))
2 garlic cloves (, minced)
3 tbsp flour ((plain))
2 cups beef stock/broth
1/4 tsp salt
1/2 tsp black pepper
Mashed potato
Peas

Steps:

  • Cook sausages: Heat oil in a large skillet / fry pan over medium high heat. Add sausages and cook, turning, until browned as much as possible all over and cooked through. Cook time will differ depending on sausage size - mine take around 8 minutes.
  • Remove sausages onto a plate. Turn heat down to medium.
  • 2 tbsp oil remaining: You need around 2 tbsp oil left in the skillet. If you have much less, add a bit of butter or oil.
  • Saute onion and garlic: Add onion and garlic, cook until golden brown - around 4 minutes.
  • Cook off flour 2 minutes: Add flour and mix through. Then cook, stirring constantly for 2 minutes.
  • Gradually add beef stock: Add about 3/4 cup of beef broth and mix into the onion so it becomes a sludge. Then add remaining beef broth and mix until combined. If it's lumpy, use a whisk to help make it smooth.
  • Thicken gravy: Simmer, stirring, for 2 to 3 minutes until the gravy thickens but is slightly thinner than you want - it will thicken more as you serve it.
  • Season: Add salt and pepper. Stir, taste, then add more salt if you want.
  • Serve sausages with plenty of gravy, with mashed potato and peas on the side. (Low carb option - Creamy Cauliflower Mash)

Bubble and squeak is a classic British dish of smashed-up winter vegetables, traditionally made from the Sunday roast leftovers. Use about 60 percent potato to get the right consistency, then whatever vegetables you like - carrots, Brussels sprounts, rutabagas, turnips, onions, leeks or savoy cabbage.

1 1/2 pounds all-purpose potatoes, peeled and cut into chunks
1 1/4 pounds mixed winter vegetables such as carrots, Brussels sprouts, rutabagas, turnips, onions, leeks or savoy cabbage, peeled or trimmed and chopped into equal-sized chunks
Olive oil
2 knobs butter, divided
1 (7-ounce) package vacuum packed chestnuts
6 good quality pork sausages, linked together
6 good quality venison or beef sausages, linked together
Sea salt and freshly ground black pepper
Small bunch fresh rosemary, leaves picked and finely chopped
Nutmeg, for grating
3 red onions, peeled and finely sliced
Few bay leaves
1 tablespoon all-purpose flour
1/2 cup balsamic vinegar
1 cup plus 1 tablespoon good-quality vegetable or chicken stock

Steps:

  • Cook the potatoes and mixed vegetables in a pan of boiling water for 15 to 20 minutes. When they're cooked right through, drain and put aside.
  • Heat a glug of olive oil and half the butter in a large frying pan and add the chestnuts. When they start to sizzle, add the potatoes and vegetables. Mash the vegetables up in the pan, then pat the mixture into a thick pancake shape. Fry on a medium heat for about 1/2 an hour, checking it every 5 minutes. When the bottom turns golden, flip it over bit by bit and mash it back into itself. Pat it out flat again and continue cooking until really crisp all over.
  • Preheat the oven and a roasting pan to 425 degrees F.
  • Unravel the pork sausage links and squeeze the filling between them until all 6 sausages are joined together. Do the same to your venison or beef sausages. Pat them to flatten them a bit. Drizzle with olive oil and massage this into your 2 long sausages. Sprinkle over a pinch of pepper, the rosemary and some nutmeg. Put 1sausage on top of the other and roll them up like a licorice wheel! Poke 2 skewers through, in a cross shape, to hold the sausages together.
  • Take the preheated roasting pan from the oven. Drizzle in some olive oil and add the onions. Season, add the remaining butter and stir. Place the sausage wheel on the onions and stick the bay leaves between the sausages. Drizzle with some more oil and roast in the preheated oven for around 40 minutes, or until golden and crisp. When your sausages and onions are done, your bubble and squeak should be ready too. If it still hasn't browned, put it under a hot broiler for 5 minutes.
  • Remove the sausages to a plate and place the pan with the onions on the stove top. Whack the heat up to full and stir in the flour, balsamic vinegar and stock. Bring to the boil and leave to thicken to a nice gravy consistency, stirring every now and then, and season to taste. Remove the skewers and cut the sausages into wedges. Serve the bubble and squeak with a good portion of sausage, a spoonful of onion gravy and perhaps some lovely dressed watercress.

Devilled Sausage is a favourite with the whole family! We serve it up with mashed potato and a couple of green vegetables (peas, beans etc) You can add sliced apple (cook it in when adding the gravy) to enhance the flavour.

8 -10 sausages
2 medium onions, sliced
250 g mushrooms, sliced
4 tablespoons onion gravy mix
2 cups water

Steps:

  • LIghtly soften and brown onions in a little oil - put into a large casserole dish.
  • Saute the mushrooms until softened - add to casserole dish.
  • Make up 1 cup of onion gravy mix with instant mix and 1 cup of water -- then add 1 cup of water to thin the mix.
  • Place sausages - I use thick beef sausages (uncooked) into the casserole dish, and cover with the onion mixture. Stir through.
  • Put a lid on the casserole dish and place in a preheated oven (180 degrees celcius) for 1 hour. Stir carefully once halfway through cooking.
  • Serve up with mash and enjoy!

The joy of a good sausage is that fried, fatty quality and a strong mystery seasoning. Veggie sausages are tricky, but after years of trying I think this is a pretty good version. Any crumbly sharp cheese can be used as a sub for the lancashire.

21 ounces lancashire cheese, grated (1 lb 5oz)
7 ounces fresh breadcrumbs
6 scallions, chopped
2 tablespoons fresh thyme, chopped
2 tablespoons parsley, freshly chopped
3 eggs
3 egg yolks
2 garlic cloves, crushed
1/4 cup milk, to bind
salt & freshly ground black pepper
vegetable oil, for frying
3 large onions, sliced
2 garlic cloves, crushed
1 tablespoon brown sugar
3 ounces plain flour
1/3 cup vegetarian liquid gravy browner
1 pint vegetable stock

Steps:

  • Place all the sausage ingredients except the oil in a large bowl, season well, and mix it all up with your hands. When you taste it, overseason it by about 15 per cent, so it's a bit more salty and peppery than you'd normally have - the mixture loses some of its power as it chills and cooks. Chill the mixture for two hours.
  • Meanwhile, make the gravy. Heat a little oil in a pan and fry the onions, garlic and sugar over a low heat until golden. Sprinkle on the flour and cook for 3-4 minutes. Add the gravy browning and stock and bring to the boil. Season, then simmer for at least 20 minutes.
  • Mould the chilled sausage mix into sausage shapes - you should get about twelve decent bangers out of it, depending how big you like your sausage.
  • You can either shallow-fry the sausages in a little oil or deep-fry them in a lot of oil; I think the deep-fry method brings the best out of the flavour and texture. Fry them for about five minutes until golden, then drain well on some kitchen paper and serve with the gravy.
  • This fabulous grub is great with mashed potato (try it with the addition of wholegrain mustard), with a salad or in a bun smothered in ketchup, onions and mustard and served with chips.
