1 medium sweet onion, sliced
3 tablespoons butter
2 medium apples, peeled and shredded
1 tablespoon lemon juice
1 can (8 ounces) sauerkraut, rinsed and well drained
1/2 cup unsweetened apple juice
1 teaspoon caraway seeds
1/2 teaspoon fennel seed, crushed
1 package (16 ounces) smoked Polish sausage

Steps:

  • In a large skillet, saute onion in butter for 15 minutes or until lightly browned. , In a large bowl, toss apples with lemon juice. Add the apples, sauerkraut, apple juice, caraway and fennel to the onion. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Meanwhile, heat sausage according to package directions; cut into slices. Serve with sauerkraut.

2 tablespoons vegetable oil
1 large onion, quartered and sliced
2 pounds smoked sausage , such as andouille, kielbasa, knackwurst, or chicken apple sausage, sliced
2 large apples, peeled, cored, and diced
2 cups apple juice
1 tablespoon vinegar
1/4 cup light brown sugar
2 pounds cold-pack sauerkraut, rinsed and well-drained
1/4 teaspoon ground black pepper
Optional: 1 teaspoon caraway seeds, or to taste

Steps:

  • Gather the ingredients. Heat the oven to 425 F.
  • In a large ovenproof saute pan or Dutch oven over medium heat, heat the vegetable oil. Add the onion and sliced sausages and saute until the onion is golden and the sausage is lightly browned, 5 to 7 minutes.
  • Add the apples and saute for 1 minute longer.
  • Add the apple juice, vinegar, brown sugar, sauerkraut, and pepper.
  • Add the caraway seeds, if using.
  • Cover and bake for 1 hour.
  • Serve with crusty rolls or biscuits and a tossed salad. Enjoy.

This is similar to a dish I have made and reviewed here on Zaar. The difference here is that the apples are served on the side and not cooked with the sausage and sauerkraut. "Sautéed apples and sauerkraut bring a sweet and sour flavor to the otherwise savory pan-fried sausages. Most commonly found in the German-speaking area of the Alps, this delicious entrée is often served with a dab of dark, spicy German mustard on the side for dipping". I have added my notes of change. I used precooked smoked turkey sausage, less sauerkraut. I do suggest using the brown sugar, it does not seem to add much sweetness. I think it combines beautifully with the sauerkraut. 2 rosemary sprigs
1 tablespoon extra virgin olive oil

1/2 cup dry white wine, sub. apple juice

1 bay leaf
4 firm cooking apples, such as Fuji, Pippin, peeled, cored, and sliced
1 tablespoon brown sugar (optional)

Steps:

  • Preheat oven to 325°F.
  • In a large oven-safe skillet, melt 1 tablespoon butter over medium heat. Sauté onion and rosemary sprigs until onion is golden, about 10 minutes. Transfer to a plate and set aside.
  • Add olive oil to the skillet. Add sausages and cook, turning, just until skins are browned, about 5 minutes per side. Remove sausages to a plate.
  • Add sauerkraut and sautéed onions to the skillet. Place sausages on top. Mix wine and chicken broth together. Pour slowly all over the top. Add bay leaf to the middle of the dish. Cover with a lid or foil and transfer pan to oven. Bake for 1 hour.
  • Meanwhile, prepare apples by melting remaining 2 tablespoons butter in a large skillet. Add apples and sauté until just tender, adding brown sugar, if desired. Apples will cook in about 5 to 10 minutes.
  • To serve, spoon baked sausages and sauerkraut onto a serving platter. Top with sautéed apples, or serve on the side. Serve piping hot with spicy mustard on the side.

1 lb fresh sauerkraut or 1 lb canned sauerkraut
1 lb smoked sausage (for a low-fat version) or 1 lb smoked turkey sausage (for a low-fat version)
3 tart cooking apples, thinly sliced
1/2 cup packed brown sugar
3/4 teaspoon salt
1/8 teaspoon pepper
3/4 cup apple juice or 3/4 cup cider

Steps:

  • Rinse sauerkraut and squeeze dry.
  • Cut sausage into 2-inch pieces.
  • Put 1/2 the sauerkraut in the slow cooker.
  • Add the sausage pieces on top.

2 tablespoons canola oil
1 small head red cabbage, thinly shredded
1 medium onion, sliced
2 teaspoons chopped garlic
1/2 teaspoon red pepper flakes

1 (12-ounce) can beer
1/2 cup cider vinegar
2 tablespoons spicy brown mustard
1 tablespoon brown sugar
2 Fuji apples, peeled, cored and cut into 1/4-inch slices

Steps:

  • Preheat the grill or grill pan to medium-high heat.
  • Cook the sausage on the outdoor grill or grill pan for about 12 minutes, turning a quarter turn every 3 minutes.
  • While the sausage is cooking, heat the canola oil in a large skillet over medium-high heat. Add the cabbage, onion, garlic, red pepper flakes, salt, and pepper. Cook, stirring often, until the cabbage has wilted slightly, about 4 minutes.

1 teaspoon caraway seeds
2 tablespoons plus 3 teaspoons vegetable oil, such as grapeseed, divided
1 pound baby bok choy, heads trimmed and quartered lengthwise
1 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 Honeycrisp or Gala apple, sliced into 1/4-inch wedges
8 links fresh sausage (about 2 pounds), such as hot or sweet Italian sausage
2 1/2 cups prepared sauerkraut, drained
1/2 cup low-sodium chicken broth
1 tablespoon cider vinegar
1 tablespoon unsalted butter
Grainy Dijon mustard, for serving

Steps:

  • In a large dry skillet over medium heat, lightly toast the caraway seeds until fragrant, 1 to 2 minutes. Scrape out and reserve seeds.
  • Add 1 tablespoon oil to the skillet and heat over medium-high heat. Working in two to three batches, sear bok choy on all sides until lightly browned, 2 to 3 minutes per cut side. Add 1/4 teaspoon salt, 1/8 teaspoon pepper to each batch, and 1 teaspoon oil to sear each subsequent batch of bok choy.
  • Add 1 teaspoon oil to the skillet and sauté apples with 1/4 teaspoon salt and 1/8 teaspoon pepper until softened but still holding their shape, 5 to 7 minutes. Reserve apples.
  • Add remaining tablespoon oil to skillet and sear sausages on all sides until golden brown, 3 to 5 minutes per side. Add toasted caraway seeds, sauerkraut, and broth. Bring to a simmer, reduce heat to medium, cover the skillet, and simmer until sausages are cooked through (150°F for pork sausages, 160°F for poultry sausages), about 10 minutes. Remove cover and fold in reserved bok choy, apples, vinegar, and butter. Cook, tossing, until some of the liquid has evaporated and the bok choy and apples are warm, 3 to 5 minutes. Taste and adjust seasoning. Serve with mustard for dipping.

¼ cup brown sugar
1 apple, diced
½ pound bacon, cut into 1-inch pieces

1 quart sauerkraut from jar or bag (not canned), washed and drained
1 large apple, peeled if desired, cored and sliced thin
1 tablespoon caraway seeds, crushed
2 tablespoons vegetable oil
1 tablespoon butter
1 pound bratwurst, sliced thick
1/2 cup white wine
8 small pitas
Dijon mustard

Steps:

  • Saute sauerkraut, apple and caraway in hot oil in large pot over low heat for a couple of minutes. Cover and continue cooking over low heat about 20 minutes.
  • Heat butter in saute pan; cook bratwurst in butter until it browns on both sides. Pour off excess fat and add wine. Cook quickly until wine evaporates.

24 ounces sauerkraut
1 Granny Smith apples, peeled and diced
1 small sweet onion, chopped small
1/2 teaspoon caraway seed
1 tablespoon oil

Steps:

  • Add oil to medium skillet. Over medium heat sauté apples, onions and caraway seeds until onion turn opaque. About 10-12 minutes.
  • Dice sausage into 1/2 inch pieces and add to skillet. Stir well. Heat for 8 -10 minutes or until sausage is warm.

This dish has German roots, but is widely prepared in Switzerland. I'm not sure exactly where I found this recipe,but it's been DH and grandson's favorite deer hunting camp meal for many years. It cooks in one skillet so clean up is minimal.

1 teaspoon olive oil
1 medium onion (cut in wedges)
1 (16 ounce) can sauerkraut
1 cup apple (cored and sliced)
1 cup apple juice
4 red potatoes (cubed)
1/2 cup brown sugar
salt and pepper

Steps:

  • In a large skillet, brown smoked sausage in olive oil, add onions and cook for 3 minutes.
  • Arrange all ingredients around sausage in skillet and cook over medium heat 30-40 minutes or until juice has cooked down.
  • If kraut still has a sour taste, add more brown sugar to suit your taste.

  • In a large sauce pan or Dutch oven, combine the sauerkraut, diced apples, caraway seeds, brown sugar, apple cider and salt over medium heat. Bring to a simmer, then cover and reduce heat to medium-low. Simmer, covered, for 90 minutes, stirring periodically. Remove to the bowl of a slow cooker and turn on to low heat.
