- Cook noodles according to package directions. Meanwhile, in a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink, breaking the meat into crumbles; drain. Add pizza sauce and mushrooms; heat through. , Drain noodles. In a greased 13x9-in. baking dish, layer half each of the noodles, beef mixture, cheeses and pepperoni. Repeat layers. Cover and bake at 350° for 15-20 minutes or until heated through., Freeze option: Cover and freeze unbaked casserole for up to 3 months. Remove from freezer 30 minutes before baking (do not thaw). Cover and bake at 350° for 45-50 minutes. Uncover; bake 15-20 minutes longer or until heated through.

PIZZA NOODLE BAKE
Ever wonder what to do with the leftover meat toppings you didn't put on your pizza? Well, I had some italian sausage and pepperoni left over and this is a recipe that I came up with that I wanted to share with you all. My italian sausage was already cooked but if you wanted to use raw, you could omit the butter and oil and cook the onion, mushroom and garlic with the sausage.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Bring water to a boil in a 3 quart sauce pan. Boil noodles and set aside.
- These steps are if you are using pre-cooked sausage:.
- Heat butter and oil in a skillet; the oil keeps the butter from burning.
- Add your mushrooms, onions and garlic and saute until almost done.
- Add your precooked sausage and cook for an additional 5 to 7 minutes or until sausage is heated through.
- (If you aren't using pre-cooked sausage, cook the sausage, mushrooms, onion and garlic together and omit the butter and oil.).
- In a 2 quart casserole dish, add 2 Tablespoons spaghetti sauce to the bottom.
- Layer 1/2 of the cooked noodles, sausage mixture, 1/2 of the remaining sauce and 1/2 cup of the mozzarella cheese.
- Layer the remaining noodles, remaining sauce, 1/2 cup mozzarella cheese.
- Top the dish off with pepperoni slices.
- Bake for 40 to 45 minutes or until cheese is melted and dish is heated through.

- Preheat oven to 400F. Coat a 9 inch pie pan ( or a 2 qt baking dish) with cooking spray. Use a vegetable spiralizer or julienne pepper to cut zucchini into long thin noodles/*
- Place zucchini noodles in a colander and sprinkle with salt, tossing to incorporate the salt. Let zucchini stand for 15-20 min. in colander (to release water).
- Meanwhile, cook sausage in a large fry pan. set aside.
- Once zucchini has rested for 15 min., use paper towels or tea towel to gently dry and release any additional water. Set aside.
- In a large bowl combine eggs, 1/2 cup mozzarella cheese, Parmesan cheese, flour, and cornmeal. Add zucchini noodles and stir to incorporate. Transfer to prepared pie pan. Bake for approx. 15 mins. until set and no excess liquid remains.
- Remove from oven and spread with pizza sauce. Top with remaining mozzarella cheese, sausage, mushrooms, bell pepper and olives. Bake 15-20 mins more until cheese is melted, bubbly and turning light brown. Remove from oven, let rest for 2-3 mins and serve. Garnish with fresh chopped basil if desired.

Zoodles and broccoli mixed with mushrooms, peppers, and other yummy vegetables topped with fresh mozzarella cheese and then baked altogether create a wonderful veggie casserole that is just busting with flavor. This dish was a little soupy; I just served it using a slotted spoon and it worked perfectly.

- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13-inch baking pan with avocado oil.
- Melt butter in a skillet over medium heat, about 2 minutes. Stir in garlic.
- Cut zucchini into noodle shapes with a spiralizer.
- Combine zucchini noodles, broccoli, mushrooms, bell peppers, and half of the basil leaves in a large bowl. Stir in butter mixture until well combined.
- Pour vegetable mixture into the prepared baking pan; layer on tomatoes. Top with tomato sauce, oregano, salt, and pepper. Arrange remaining basil leaves in the pan; layer on mozzarella cheese. Cover with aluminum foil.
- Bake in the preheated oven until cheese is just melted, 20 to 30 minutes. Remove aluminum foil with an oven mitt or heatproof gloves. Continue baking until vegetables are tender and cheese is bubbly, 15 to 30 minutes more.
