1 cup milk
¼ cup olive oil

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook penne at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain and transfer pasta to a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; add to pasta.
  • Whisk pesto sauce mix, milk, and olive oil together in a small saucepan; bring to a boil while stirring constantly. Reduce heat to low and keep at a simmer until thickened, about 3 minutes; pour over pasta and sausage mixture and toss to coat.

1 tablespoon olive oil
1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

3/4 lb bulk Italian sausage (hot or mild)
1 1/2 cups spaghetti sauce (from a jar)
1/2 cup sliced pitted ripe olives (black or green)
1 red onion, sliced in half rings
1/2 sweet red pepper, sliced in strips
4 French rolls
4 slices mozzarella cheese (approx 6 ounces)

Steps:

  • Preheat the oven to 375°F.
  • In a skillet brown sausage.
  • Drain off the fat, stir in the sauce and olives, heat through.
  • Split rolls lengthwise without cutting through opposite side.
  • Hollow out buns slightly, halve cheese slices lengthwise.
  • Place a piece of cheese on bottom half of each roll.
  • Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers.
  • Place another cheese slice on top and close the rolls.
  • Wrap each sandwich in foil and seal, place on a baking sheet and bake the wrapped sandwiches in the oven for approx 15 minutes.
  • Unwrap serve and enjoy!

¼ pound ground pork
4 teaspoons kosher salt
1 tablespoon paprika
2 teaspoons ground black pepper
1 teaspoon granulated onion powder

⅓ cup ice water
4 hot dog buns, split and toasted

Steps:

  • Place ground beef, ground pork, salt, paprika, black pepper, granulated onion, granulated garlic, smoked paprika, and ice water in a bowl. Mix together with fingers until well blended and mixture is dense and solid, about 4 minutes. It's okay to overmix. Wrap dough in plastic; refrigerate at least 2 hours or overnight.
  • Place a sheet of plastic wrap on a work surface. Have a bowl of ice water nearby to keep your hands wet and cold. Place 1/4 of the mixture on the plastic wrap. Roughly shape meat into a thick roll and wrap with the plastic. Shape into a thinner roll about as long as a hot dog bun. You can unroll the plastic and "fine tune" the sausage shape after wetting your hands in ice water. Rewrap in plastic and place on a dish; repeat for the remaining sausages. Refrigerate until ready to cook.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Carefully place sausages on grill and let them cook undisturbed for about 2 minutes to seal the bottom edge. Gently turn completely over to brown the opposite side; cook until brown, about 2 minutes. Brown all surfaces, turning carefully to avoid breaking the sausages, about 5 minutes more.   • In a large dry pot or deep skillet over med/high heat, brown sausage (10-12 min), breaking it apart with your spatula (the sausage releases enough oil to grease the pan). When browned, remove excess grease by pushing a paper towel around the pan with a spatula until fully saturated then discard.
  • Cut cream cheese into pieces and stir it into browned pork until melted and incorporated.
  • Add 2 cans un-drained Rotel tomatoes, 15 oz can drained corn, and 8 oz shredded cheddar (reserve some cheddar to garnish the top if desired). 1 tablespoon minced garlic
1 1/2 teaspoons red chile flakes
1/2 cup extra-virgin olive oil

SANDWICHES
4 sandwich rolls, such as Mexican bolillos
1 teaspoon olive oil
4 fresh Italian-style pork sausages (not hot)

  • Mix 2 tbsp. boiling water, the garlic, and chile; let steep 3 minutes. Stir in remaining chimichurri ingredients; season with salt.

8 ounces uncooked DeLallo Casarecce Pasta
10.6 ounces Italian sausages (crumbled (see note))
1/2 medium onion (chopped)
7 ounces cremini mushrooms (sliced)
2 cloves garlic (minced)
1 cup little tomatoes (grape, cherry, etc.) (cut into halves)
1/2 red bell pepper (chopped fairly small)
1/2 cup chicken broth
1/4 cup DeLallo Simply Pesto
Salt & pepper (to taste)
For garnish: freshly grated parmesan cheese & chopped parsley (optional)

Steps:

  • Boil a large, salted pot of water for the casarecce pasta. Cook it al dente (8 minutes).
  • Meanwhile, prep your vegetables. You can do some prep while the sausages are cooking to save time, but feel free to prep everything prior to starting the sauce if that's easier for you.
  • Take the sausage meat out of the casings and crumble it into a deep skillet. Cook it over medium-high heat, stirring occasionally, until it's browned (about 5-7 minutes). Transfer to a plate.
  • Leave the sausage grease in the pan and then add the mushrooms and onions (if there is very little grease then add about a teaspoon of olive oil). Sauté, stirring occasionally, until the mushrooms release their water and they get a nice sear and the onions brown (about 5-6 minutes).
  • Stir in the garlic and cook for 30 seconds.
  • Add the tomatoes, peppers, chicken broth, and sausage to the skillet. Reduce the heat to medium and cook for around 5 minutes or until the tomatoes have started to lose their shape and the chicken broth has reduced a bit.
  • Add in the pesto (stir the jar first), then take the pan off the heat and ensure it's stirred in well. Add a splash of pasta water to the sauce (a couple tablespoons) prior to draining it, and then toss the drained pasta with the sauce. Season with salt & pepper as needed. Serve immediately with parmesan cheese and parsley if desired.

Steps:

  • Prepare a grill for medium-high heat.
  • Mix the balsamic vinegar, garlic, 1/2 teaspoon Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper in a large bowl. Whisking constantly, slowly drizzle in 2 tablespoons olive oil until emulsified. Add the red pepper, green pepper, serrano pepper, onion, 1/2 teaspoon salt and a few grinds of black pepper and toss until well combined.
  • Place the basket on a baking sheet and transfer the peppers and onions to the center, letting any extra marinade drip off. Place 3 links of sausage on either side of the veggies. Close and secure the basket.
  • Place the grill basket on the grill and cook, flipping once, until the vegetables and sausages start to brown and caramelize and an instant read thermometer inserted into a sausage measures 160 degrees F, 10 to 12 minutes.
  • Meanwhile, mix the remaining 3 tablespoons oil, remaining 1 teaspoon Italian seasoning, 1/4 teaspoon salt and a few grinds of black pepper in a small bowl. Open the hoagie rolls and brush the insides with the herb oil. Grill until toasted, about 1 minute.
  • Remove to a platter and place 2 overlapping slices provolone on each roll (do not allow cheese to hang over the sides). Return the rolls to the grill, cover, and cook until the cheese is melted, about 1 minute. Remove to a platter.
  • Remove the peppers and onions from the basket and slice thinly. Cut each link of sausage in half on a deep bias and place in a hoagie roll.
