CHOPPED STEAK AND MUSHROOM ONION GRAVY

Steps:
- Preheat the oven to 350 degrees F.
- Combine the ground beef, egg, Worcestershire, shallots, garlic, parsley, ground mustard, bread crumbs, flour, and salt and pepper, to taste, in a large bowl. Shape the mixture into 6 equal-sized oval patties and set aside on a plate.
- Heat a large frying pan over medium heat and add the canola oil and butter. When the butter foams add the patties and brown, about 3 to 4 minutes per side. Transfer the patties to a 13 by 9-inch baking dish. Drain all of the fat from the pan but leave any browned bits.
- Return the pan to medium heat and melt the butter for the gravy. Add the mushrooms, onion, and thyme and season with salt and freshly ground black pepper, to taste. Cook, stirring rarely, until the mushrooms are slightly browned and soft, about 4 minutes. Sprinkle in the flour and mix until fully incorporated. Stir occasionally, until the flour is lightly toasted, about 3 minutes. Add the brandy and stir, scraping up any browned bits from the bottom of the pan. Slowly pour in the stock and stir until smooth. Let the mixture come to a boil and cook until sauce is reduced and thickened, about 8 minutes.
- Taste and add salt and freshly ground black pepper, if needed. Lots of pepper is good in this dish! Pour the sauce over the patties in the baking dish and cover with aluminum foil. Bake until the meat is tender and slightly pink in the middle, about 20 minutes. Remove the dish from the oven and serve.
MAPLE-GLAZED ROAST TURKEY WITH MIXED-HERB GRAVY

- For gravy:
- Toast flour in heavy large skillet over medium-high heat until pale golden (about the color of peanuts), stirring constantly, about 7 minutes. Remove skillet from heat. Add butter and whisk until butter melts and mixture is smooth (mixture will become very dark). Gradually whisk in broth. Bring to boil over medium heat, whisking frequently. Reduce heat; simmer until gravy is reduced to 21/2 cups, about 30 minutes. (Can be made 8 hours ahead. Cover and chill.)
- For turkey:
- Preheat oven to 325°F. Rinse turkey inside and out; discard any pieces of fat in neck and main cavity. Pat turkey dry with paper towels. Fill neck cavity loosely with bread dressing. Fold skin over and secure with skewer. Fill main cavity loosely with bread dressing. Place turkey on rack in large roasting pan. Tie turkey legs together to hold shape. Tuck wings under turkey. Brush turkey with 11/2 tablespoons melted butter. Sprinkle turkey with salt and pepper. Pour 1/2 cup broth into roasting pan.
- Roast turkey 3 hours, basting with pan juices and adding 1/2 cup broth to pan every 30 minutes. Mix maple syrup, ginger and 1 tablespoon melted butter in small bowl; brush mixture over turkey. Continue to roast turkey until thermometer inserted into innermost part of thigh registers 180°F, about 15 minutes longer.
- Transfer turkey to platter. Tent with foil and let turkey stand 30 minutes.
- Meanwhile, scrape pan juices and any browned bits from roasting pan into 2-cup measuring cup. Spoon off and discard fat from surface of juices. Add juices to gravy. Add herbs and bring to simmer. Season gravy with salt and pepper.
- Serve turkey with dressing and gravy.
CHEF JOHN'S MUSHROOM GRAVY
Mushroom sauce can be done with any type of stock, but I used beef stock here since I'm going to be serving with meatloaf.

- Heat butter over medium heat in a saucepan until it foams. Stir in mushrooms. Season with salt. Simmer until liquid evaporates, about 20 minutes.
- Stir in the flour, cooking and stirring for about 5 minutes. Add about 1 cup of beef stock, stirring briskly until incorporated, then pour in the remaining stock and mix thoroughly. Season with black pepper and thyme. Reduce heat to medium-low, and simmer until thickened, about 30 minutes, stirring often.

Steps:
- Heat oil in saucepan and add onion. Saute until golden.
- Add herbs and mushrooms and cook until softened about 5 minutes. Stir in port, vegetable stock, Braggs and simmer, stirring until the gravy has thickened slightly about 3 to 5 minutes.
- Remove bay. Pour into Gravy boat and serve.
- Note Crusted Port is Vegetarian.

BRAISED BRISKET WITH MUSHROOM ONION GRAVY
Another I haven't tried, sounds tempting though. Sounds like something I might try this Fall when the weather cools and I am tired of brisket on the smoker.

Steps:
- Place the mushrooms in a small bowl. Bring 1 cup of the water to a boil. Pour over the mushrooms. Let stand for 30 minutes to soften.
- Remove the mushrooms from the soaking liquid, squeezing as much liquid as possible back into the bowl. Coarsely chop the mushrooms.
- Strain the soaking liquid through a coffee filter or 2 layers of cheesecloth. Set aside.
- Preheat the oven to 400 degrees.
- Heat 2 tablespoons of the oil in a heavy large Dutch oven over medium heat. Add the onions and saute for about 10 minutes, until translucent.
- Reduce heat to low. Cook for about 15 minutes, until the onions begin to brown, stirring from time to time.
- Add the vinegar and cook, stirring, for about 10 minutes, until the onions turn a deep golden brown.
- Add the wine and bring to a boil, scraping up any browned bits in the pot. Transfer the mixture to a bowl.
- Heat the remaining 2 tablespoons oil in the same Dutch oven over high heat. Season the brisket with salt and pepper. Brown well on all sides. Transfer the meat to a platter.
- Add the mushroom-soaking liquid to the Dutch oven and bring to a boil, scraping up any browned bits.
- Return the brisket to the pot, along with the onion-wine mixture, the remaining 3 cups water, the mushrooms, garlic, thyme and bay leaves. Bring to a boil.
- Tightly cover the pan. Place in the oven and cook for about 3 hours, until the brisket is very tender.
- Transfer the meat to a platter and tent with foil.
- Remove the bay leaves from the cooking liquid. Working in batches, puree the cooking liquid in a processor until smooth. Transfer to a large saucepan. Adjust seasoning and rewarm, if necessary.
- Cut the brisket across the grain into thin slices. Arrange on a platter. Spoon the sauce over the meat.

MUSHROOM-THYME GRAVY
Planning Tip: Can be made 2 days ahead. Reheat in a saucepan over medium-low heat or in the microwave. I found this in Woman's Day magazine. I have not tried this recipe, but I'm posting it for safe keeping.

- Melt butter in a large saucepan. Add onion and cook, stirring occasionally, 6 minutes or until tender. Add mushrooms and cook 5 minutes or until tender.
- Pour 1 can broth into a medium bowl and whisk in flour until blended. Stir into mushroom mixture in pot. Stir in other can of broth and the thyme; bring to a boil over medium-high heat, stirring frequently.
- Reduce heat and simmer 7 minutes, stirring occasionally, until slightly thickened. Stir in pan drippings from turkey if desired and heat through.

Steps:
- Heat oil in a 12" skillet over medium high heat, add onions and sautee for 5 - 6 minutes.
- To that add mushrooms, thyme, garlic and ginger and cook 1 - 2 minutes or just until fragrant. Set aside.
- In a medium saucepan melt butter on medium heat. Once butter is melted turn heat to low, Wisk in flour and cook for 1 - 2 minutes to cook out the flour taste.
- Add stock and worcestershire sauce while wisking constantley to avoid lumps.
- Stir in onion mixture and simmer 10 minutes or to desired thickness.
