Addictive Roasted Broccoli and Mushrooms with Onion Wedges image

It's amazing to me sometimes how often the paleo diet can overlap with other popular types of diets. Many paleo recipes are equally viable for anyone following a keto diet, or even a vegan style diet. Today I'll be sharing a recipe that will delight paleo and vegan dieters alike. It's for an addictive roasted broccoli and mushrooms meal with onion wedges on the side and of course, a wide spectrum of nutrients. You have your vitamins, minerals and antioxidants, not to mention some heart-healthy monounsaturated fats as well thanks to the olive oil.

Number Of Ingredients 6

1 large head broccoli, cut into florets
½ pound mushrooms, quartered
2 small red onions, cut into wedges
3 tbsp olive oil
1 tbsp balsamic vinegar or more to taste
salt and ground black pepper to taste

Steps:

  • Preheat oven to 425°F. Place the broccoli florets, mushrooms and red onion on a large baking sheet. Drizzle with olive oil and toss to coat. Season to taste with salt and black pepper. Roast in preheat oven for 20-25 minutes or until lightly brown and tender. Remove from the oven. Drizzle with balsamic vinegar and toss to coat. Serve immediately.

1 tablespoon olive oil
4 cups sliced mushrooms
1/4 cup sliced shallot
1/4 cup dry sherry
4 cups broccoli florets
1/2 teaspoon kosher salt
crushed red pepper flakes
1/2 cup reduced-sodium fat-free chicken broth
1/4 teaspoon fresh ground black pepper
slivered & toasted almonds or toasted cashews

Steps:

  • Heat oil in a large Dutch oven over medium-high heat.
  • Add mushrooms and shallots to pan; sauté 10 minutes or until mushrooms are lightly browned.
  • Stir in sherry; cook 2 minutes or until liquid evaporates, stirring frequently.
  • Add broccoli and salt to pan; stir well.
  • Stir in broth & red pepper flakes; bring to a boil.
  • Cover and cook 5 minutes or until broccoli is crisp-tender.
  • Stir in black pepper, if using, and toasted slivered almonds or toasted cashews.
  • Enjoy!

4 large shallots, peeled and halved
4 ounces whole mushrooms
olive oil flavored cooking spray
1 (1 1/2 lb) bunch broccoli
1 1/2 tablespoons olive oil
1/4-1/3 teaspoon ground nutmeg
kosher salt
fresh ground black pepper

Steps:

  • Turn oven to 500 degrees.
  • Spray a small baking pan or cast iron skillet with olive oil spray and add shallots and mushrooms.
  • Spray the tops and put in the oven.
  • Cook about 15 minutes, shaking the pan a few times during cooking.
  • Remove when nicely browned all over.
  • Coarsely chop shallots and slice mushrooms.
  • Meanwhile, cut broccoli into florets, peel stalk and cut into rounds 1/4-inch thick.
  • Put stalk slices in the bottom of a steamer basket in a large saucepan with about 1/2-inch of water.
  • Add florets on top.
  • Cover and put over medium-high heat for 7 minutes.
  • Put oil in a wok or large skillet over medium-high heat.
  • Add broccoli, shallots, and mushrooms.
  • Season with nutmeg, salt and pepper.
  • Stir a few times until heated through.

Steps:

  • Heat the olive oil, garlic, and pepper flakes in a large skillet of medium heat until fragrant and garlic begins to brown, about 30 seconds. 2 pounds fresh shallots, peeled, with roots intact
3 tablespoons sugar
3 tablespoons good red wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh flat-leaf parsley
Preheat the oven to 400 degrees F.

Steps:

  • Melt the butter in a 12-inch ovenproof saute pan, add the shallots and sugar, and toss to coat. Cook over medium heat for 10 minutes, tossing occasionally, until the shallots start to brown. Add the vinegar, salt, and pepper and toss well.
  • Place the saute pan in the oven and roast for 15 to 30 minutes, depending on the size of the shallots, until they are tender. Season to taste, sprinkle with parsley, and serve hot.

1 pound fresh wild mushrooms, like chanterelles, morels, porcini or any cultivated mushrooms of your choice
2 tablespoons olive oil
Salt and freshly ground pepper to taste
1 tablespoon butter
2 tablespoons fine bread crumbs
1 tablespoon finely chopped shallots
1 teaspoon finely chopped garlic
2 tablespoons finely chopped parsley

Steps:

  • Trim the mushrooms, wash them in cold water and drain well.
  • If the mushrooms are large, slice them or cut them in halves or quarters.
  • Heat a large, heavy skillet and add the olive oil. When it is very hot and almost smoking, add the mushrooms, salt and pepper. Cook over high heat, shaking and tossing the skillet so that the mushrooms cook evenly until they are browned and crisp. They should be almost mahogany in color.
