Oven-Roasted Sausage and Potatoes image

Slices of potato and sausage plus green and red pepper, and onion are roasted until golden for an easy, one pan meal.

2 pounds red potatoes (cut into slices)
3 tablespoons butter (melted)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon paprika
salt and pepper
1 (14-ounce) package Beddar with Cheddar Johnsonville fully cooked sausage, (cut into slices)
1 medium onion (peeled and chopped)
1/2 green bell pepper (seeded and chopped)
1/2 red bell pepper (seeded and chopped)

Steps:

  • Preheat oven to 450 degrees.
  • Place potatoes slices on a baking sheet, spreading out as much as possible.
  • Combine melted butter, olive oil, garlic powder, and paprika in a small bowl. Reserve 1 tablespoon and drizzle rest on potatoes. Toss to coat. Season to taste with salt and pepper.
  • Place in oven for 30 minutes, stirring halfway through.
  • On a second baking pan, combine sausage slices, onion, and peppers. Toss with the butter mixture that was set aside. Place in oven for 20 minutes, stirring halfway through.
  • If potatoes do not get browned enough, place under broiler for about 3 minutes.
  • Combine potatoes with sausage, onions, and pepper and serve.

This recipe is from the package of Liptons Onion Soup, though I have written it in my own words with some tune ups for clarity. The children really like it, though I prefer it using the hot italian sausage rather than the sweet.

1 lb Italian sausage (hot or sweet)
4 medium potatoes
1 package dry onion soup mix
2 cups water

Steps:

  • Cook sausage in a little bit of water until just done.
  • Cook off water, or pour out of pan and pan fry sausage until well browned.
  • Wash potatoes (or peel if desired) and cut into bite sized chunks.
  • Remove sausage from pan.
  • Mix soup mix with water and use to deglaze the pan.
  • Add potatoes.
  • Bring to a boil, cover, then simmer for about 10-15 minutes , until potatoes are done.
  • Cut Sausage into disks about 1/2 inch to and inch thick.
  • Add to pan and stir well.
  • Simmer, with the cover off until sausages are heated through and the liquid is slightly thick.
  • Serve with crisp green salad and saute'd onions and peppers with crusty italian bread.

2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

8 ounces petite baby carrots
2 teaspoon of Italian Seasoning
1 teaspoon of salt
1 teaspoon pepper
1/4 cup olive oil
8 ounces asparagus
1/2 large yellow onion
1 13 oz package skinless smoked sausage
1 tablespoon minced garlic
1/3 cup grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F. Line sheet pan with parchment paper or foil for easier cleanup .
  • Slice the baby red potatoes in half. In a small bowl, mix together all of the seasonings.
  • Place the red potatoes and baby carrots on the sheet pan. Drizzle 2 tablespoons olive oil and half of the seasoning mix on top. Gently Toss to combine and place in the preheated oven for 20 minutes.
  • Prepare the asparagus by trimming the ends and cutting into 2 inch pieces. Thinly slice the yellow onion and thickly slice the sausage.
  • Remove the potatoes and carrots from the oven and push them to one side of the pan using a spatula. On the other side add the chopped asparagus, sliced onion, sausage, and minced garlic.
  • Drizzle the remaining 2 tablespoons olive oil and remaining seasoning mix.
  • Toss to combine and then toss those ingredients with the potatoes and carrots.
  • Bake for another 10-15 minutes stir or until potatoes and onions are roasted to your preference. Top the dish with freshly grated Parmesan.
  • Serve immediately. Enjoy!
  • Salt and pepper to taste. It is also good with a little lemon juice squeezed over the top.

1 large onion, peeled and chopped
3 medium potatoes russet
1 tablespoon olive oil
1/2 teaspoon fine sea salt

Steps:

  • Preheat the oven to 400*F.
  • Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.
  • Cut sausage into rounds. Chop the onions and potatoes the same size. This helps with cooking time.
  • Add the sausage rounds, onions, and potatoes into a large bowl. Drizzle with a tablespoon of olive oil and season with salt, pepper, and paprika. Toss together with your hands until everything is evenly distributed. Pour this out onto the sheet pan and spread out the sausage and potatoes.
  • Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.

  • Preheat oven to 450°F. Toss potatoes, 2 Tbsp. oil, 1 tsp. salt, and 1/4 tsp. pepper on an 18x13" rimmed baking sheet. Prick sausages all over with a sharp knife, then nestle among potatoes. Roast, turning sausage and tossing potatoes halfway through, until potatoes are lightly browned and just barely fork-tender and sausage is just cooked through, 12-14 minutes.
  • Meanwhile, whisk vinegar, mustard, honey, and remaining 6 Tbsp. olive oil, 3/4 tsp. salt, and 1/4 tsp. pepper in a large bowl. 1 (16 ounce) package turkey sausage (or your favorite kind of sausage)
1/2 yellow onion (diced)
1 (28 ounce) bag frozen potatoes O'Brien (with onions and peppers in it)
1/4 green pepper (diced)
1/4 red pepper (diced)
1/2 cup broccoli (finely chopped)
8 eggs (lightly beaten)
1/2 cup skim milk (or almond milk works great in this recipe)
1/4 teaspoon garlic powder
salt and pepper to taste
1 cup shredded cheddar cheese

Steps:

  • Heat a large skillet over high heat on the stove. Add the sausage and diced onion, cook for 4-5 minutes or until no longer pink. Drain, then add in potatoes, green pepper, red pepper, and broccoli to skillet.
  • In a medium bowl, mix together eggs, milk, garlic powder, and salt and pepper. Pour egg mixture over potato mixture in the skillet. Cover skillet with a lid, lower heat to medium-low and let cook for 10 minutes (don't stir it during this time).
  • Remove lid and continue to let it cook for 5-6 minutes, or until egg mixture is set. Remove skillet from heat and sprinkle with cheese. Let stand for a couple of minutes or until the cheese is melted.

EASY ITALIAN SAUSAGE AND POTATO SKILLET



Easy Italian Sausage and Potato Skillet image

1½ pounds any type potato (Russet, new red, yellow, all purpose, etc.)
2 tablespoons olive oil
1½ pounds Italian sweet sausage, cut into thick slices on the bias
1 pound onion, sliced into thick slices
2 large green peppers, cut into thick strips
¼ cup chicken or vegetable stock
3 tablespoons butter
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon dry oregano
¼ teaspoon paprika

Steps:

  • In a large skillet with a tight fitting lid, fill half full of water.
  • Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
  • Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
  • Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
  • Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
  • Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.

700g small new potatoes
3 onions, sliced
4 carrots, peeled and cut into thick sticks
200g chestnut mushrooms
8 Lincolnshire sausages
2 - 3 tbsp olive oil
1 tsp Worcester sauce
1 tsp tomato purée
375ml hot beef stock
Salt and freshly ground black pepper
2 tsp chopped flat leaf parsley

Steps:

  • Preheat oven to 180⁰C/350⁰F/Fan 160⁰C/Gas Mark 4.
  • Put the potatoes, onions, carrot, mushrooms and sausages into a large roasting tin. Pour on the oil and toss everything together making sure everything is well coated.
  • Add the Worcester sauce and tomato purée to the stock, whisk it in well and pour around the vegetables and sausages. Season with salt and pepper.
  • Roast in the oven for 1 ¼ - 1 ½ hours until the vegetables are golden and softened and the sausages browned.
  • Lift out the vegetables and sausages and keep warm. Serve with the gravy and sprinkle on the parsley.
