SAUSAGE & BEAN CASSEROLE
A comforting and hearty one-pot sausage stew with chorizo, smoked paprika and plenty of vegetables

Steps:
- Heat 2 tbsp olive or rapeseed oil in a large heavy-based pan.
- Add 1 finely chopped onion and cook gently for 5 minutes.
- Add 2 finely chopped medium celery sticks, 1 chopped yellow pepper and 1 chopped red pepper and cook for a further 5 mins.
- Add 6 chorizo sausages and 6 pork sausages and fry for 5 minutes.
- Stir in 3 chopped garlic cloves, 1 ½ tsp sweet smoked paprika, ½ tsp ground cumin and 1 tbsp dried thyme and continue cooking for 1 - 2 mins or until the aromas are released.
- Pour in 125ml white wine and use a wooden spoon to remove any residue stuck to the pan.
- Add two 400g cans of tomatoes, and 2 sprigs of fresh thyme and bring to a simmer. Crumble in the chicken stock cube and stir.
- Cook for 40 minutes. Stir in a 400g drained and rinsed can of aduki beans and cook for a further five minutes.
- Remove the thyme sprigs, season with black pepper and stir through some snipped chives, if using. Serve.

VEGAN PINTO BEAN BREAKFAST SAUSAGE
These meatless bean-packed sausages taste just like the real thing-and they're full of fiber (5 grams per link).

- Heat 2 tablespoons of oil in a large skillet over medium-high heat, then add the onions, mushrooms and 1/4 teaspoon salt and cook, stirring, until the onions and mushrooms are soft and thick almost like a paste, about 6 minutes. Stir in the soy sauce and remove from the heat. Let cool.
- Put the drained beans, chickpea flour, onion-mushroom mixture and 1 tablespoon oil in a food processor and pulse until the beans are finely chopped and hold together when squeezed, but not a smooth paste. Add the sage, thyme, maple syrup, rosemary, nutmeg, red pepper flakes, 1 teaspoon salt and 1/4 teaspoon pepper and pulse until combined.
- Divide the bean mixture into 12 even portions. Roll each out into a cylinder about 4 inches long, then roll up tightly in plastic wrap and twist the ends to secure.
- Set up a steamer and arrange the rolled up sausages in it (you may have to do this in batches). Heat the steamer over medium heat and once steaming, cover and steam until the sausages have plumped up, about 20 minutes. Remove from heat, uncover and refrigerate the steamed sausages until firm, about 2 hours or up to overnight.
- Preheat the oven to 350 degrees F. Unwrap the sausages and heat the remaining 2 tablespoons oil in a large ovenproof nonstick skillet over medium-high heat. Add the sausages and cook, turning them as needed, until browned and crisp all over, about 5 minutes. Transfer the skillet to the oven and bake until heated all the way through, about 5 minutes.

- Crush tortilla chips and sprinkle into a greased 13x9-in. baking dish. In a large bowl, combine the beans, corn, tomatoes, tomato sauce and taco seasoning. Pour over chips. Sprinkle with cheese. , Bake, uncovered, at 350° for 18-25 minutes or until heated through. Serve with lettuce, sour cream and salsa if desired.

HOT SAUSAGE LINKS AND BEANS CASSEROLE
Potatoes, beans sausage and cheese, who could ask for more. It's savoury, spicy and slightly sweet all at the same time. One of my DH's favourites and easy to throw together. Delicious!!!

- Preheat oven to 350*F (175*C).
- In a medum skillet, heat 1 TBS of the olive oil over medium heat.
- Add the garlic and cook for 30 seconds.
- Stir in the onion, oregano, parsley, salt and peppr.
- Cook for 1 minute and remove from the heat.
- Grease the bottom of an 8X8X2inch baking dish with the remaining TBS olive oil.
- On this layer the cubed cooked potatoes.
- Top the potatoes with the onion mixture.
- On the onion mixture, evenly distribute the sliced hot links.
- Ina small bowl, combine the brown sugar, baked beans and the barbecue sauce.
- Pour this evenly over the sausage.
- Top with the shredded Cheddar Cheese.
- Place in the pre-heated oven for 45 minutes.
- Serves 4.

- Cover pinto beans with water in a bowl and allow to soak overnight. Drain.
- Melt butter in a 6-quart stock pot over medium heat. Cook and stir onion and celery in butter until vegetables are tender, about 5 minutes.
- Stir garlic into onion mixture until fragrant, about 1 minute more.
- Stir beef broth, tomato juice, sugar, and drained pinto beans into the vegetable mixture and bring to a boil; reduce heat to medium-low and simmer until beans are tender, about 1 hour and 15 minutes.
- Mix potatoes, carrots, oregano, salt, and black pepper into the bean soup; simmer until potatoes are tender, about 30 minutes more.
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place smoked sausage on a baking sheet.
- Bake sausage in the preheated oven until browned, about 10 minutes.
- Cut sausage into quarters, then slice. Add sausage and parsley to the soup; continue to simmer for 10 more minutes.

SAUSAGE - PINTO BEAN CASSEROLE
Found this in a cooking mag and had to try it. We love it and the only side I fix to go with it is wilted lettuce and onions. Gave it to a friend and she says her family has asked for it so much she is ready to shoot me. I like using the Mexican Corn Bread Mix for this recipe.

- 1. Preheat oven following directions on the cornbread mix. In a large skillet brown sausage, breaking up with a fork, as it cooks. Add green pepper and onion. Cook until done. Drain. Return to skillet. Add the beans and tomatoes.
- 2. Pour into a 9 x 13 inch baking dish. Cover the mixture with 1 and 1/2 cups of the cheese. Prepare the corn bread mix according to the package. Spread evenly over the cheese. Sprinkle top with the rest of the cheese. Bake following directions on the cornbread mix package until done and the top is lightly brown.

- To a braising pan or high-sided skillet over medium heat and add the olive oil. Brown the sausages about 3 minutes per side until brown (they don't have to be cooked through) remove from the pan.
- To the same pan, add the onions (add more oil if needed) and cook until they start to soften. Add garlic and rosemary, stir and cook for 1 minute do not allow to brown. Add the tomato paste and red pepper flakes stir to combine. Add the wine and stir well, scraping any browned bits from the bottom of the pan.
