WHEN I MAKE PASTA DISHES ANYTHING GOES. Here is one of my easy delicious dishes. My family really enjoys this dish.

4 lg mild italian sausage links
1 sliced onion
1 sliced red pepper
1 sliced green pepper
15 oz can chopped tomatoes
1 jar fav marinara sauce
1/2 c italian dry red wine
ziti pasta
fresh basil

Steps:

  • 1. In lg skillet brown your sausage on all sides, add peppers and onion, slightly saute. continue to add rest of ingredients. Remove sausage cut in bite sizes return to pan bring back to boil. Turn on low and simmer for about half hour.
  • 2. Boil ziti according to directions. Strain, I always save a cup of pasta water in case u need to add to sauce add ziti to sauce mixture simmer another few minutes add fresh basil and serve with fresh italian bread and parm.

8 ounces ziti rigati pasta, uncooked
2 teaspoons olive oil
1 medium red bell pepper, chopped
2 cubanelle peppers, chopped
1 medim onion, chopped
12 ounces spicy sausage or 12 ounces sweet Italian sausage, 4 links
1 cup part-skim ricotta cheese
1 1/2 cups part-skim mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1/4 cup fresh parsley, chopped
2 cups marinara sauce (from 24- or 26-ounce jar)

Steps:

  • Heat oven to 400 degrees F; cook pasta in a large pot of lightly salted water as package directs for al dente or firm texture.
  • Meanwhile, heat oil in large nonstick skillet over medium heat.
  • Add peppers, onion and sausage; cook 6 minutes or until sausage is browned.
  • Remove from heat; cut sausage into 1/4-inch slices.
  • Mix ricotta, 1 cup mozzarella, 3 T Parmesan and the parsley in a large bowl.
  • Drain pasta; toss with cheese mixture, sausage mixture and 1 cup marinara.
  • Pour pasta mixture into 2 quart shallow baking dish.
  • Spoon remaining sauce on top; sprinkle with remaining mozzarella and Parmesan.
  • Bake, uncovered,20 minutes or until bubbly.

1 1/2 lbs sweet sausages or 1 1/2 lbs hot Italian sausages, links
1 1/3 cups green bell peppers, seeded & cut into 1 x 1/4 strips
28 ounces Italian-style tomatoes (including liquid) or 28 ounces plum tomatoes (including liquid)
10 3/4 ounces tomato puree
1 teaspoon garlic clove, chopped finely
4 tablespoons extra virgin olive oil
2 tablespoons extra virgin olive oil
1/2 cup basil, fresh, chopped finely, firmly packed
salt & pepper
1 lb ziti pasta or 1 lb penne pasta, cooked according to package directions
fresh parsley, chopped
parmesan cheese, grated

Steps:

  • Pre-heat oven to 350ºF.
  • BAKE sausage links in oven for 20 minutes or until completely cooked. Cut sausages in half lengthwise; then cut into 1/2" slices. Result will be semi-circles of sausage. Set aside.
  • SAUTE pepper slices in olive oil until their crispness is lost, but not soft.
  • CHOP tomatoes or use a food processor on "pulse"; do not puree tomatoes.
  • COMBINE chopped tomatoes, tomato puree, garlic, olive oil and fresh basil in sauce pan. Bring to a simmer. Add sausage pieces and stir well.
  • TRANSFER cooked, drained pasta to large serving platter. Top with sausage & pepper marinara mixture.
  • GARNISH with parsley and grated Parmesan cheese.

24 ounces sweet Italian sausage links or 24 ounces hot Italian sausage links
1 1/3 cups green bell peppers
2 tablespoons olive oil
3/4 lb ziti pasta, cooked
parmesan cheese, grated
parsley sprig
40 fluid ounces marinara sauce
28 ounces italian-style canned tomatoes
10 3/4 fluid ounces tomato puree
1 teaspoon garlic, minced
4 tablespoons olive oil
1/2 cup fresh basil, packed,chopped
salt and pepper

Steps:

  • Bake or pan-fry the sausages until fully cooked, drain, cool.
  • Halve the sausages and cut the split sausages into ½ inch slices.
  • Sauté the bell peppers in olive oil over moderate heat only until their crispness is loss, but peppers are not soft.
  • In a heavy saucepan add the tomatoes, tomato puree, garlic, olive oil and fresh basil and bring to a light simmer on moderate heat.
  • Add the sautéed pepper strips and cooked sausage and heat for 3 to 5 minutes.
  • Serve the pasta, topped with the sausage, peppers and salsa marinara and garnish each plate with a parsley bouquet.
  • Pass the Parmesan.

This is a "wow" recipe that I created last night. I had been wanting to try Andouille sausage and finally found it at a local grocery. It gives this dish just the right "kick" to spice up your dinner, though feel free to add some red pepper flakes if you really like it hot! My husband took one bite and said "you have got to write this recipe down"!

2 tablespoons extra virgin olive oil
1 large yellow pepper, cut into thin strips
1 large red pepper, cut into thin strips
1 large yellow onion, cut into thin wedges
1 tablespoon fresh garlic, minced
1 lb andouille sausage, sliced into 1/2 inch pieces (I used Johnsville brand )
1 (22 ounce) can diced tomatoes, undrained
1 (6 ounce) can tomato paste
3/4 cup water
1 1/2 tablespoons italian seasoning
2 bay leaves
2 teaspoons paprika
1/4 cup sugar
salt and pepper

Steps:

  • In a large skillet over med-high heat, saute peppers and onion in the olive oil.
  • Once the vegetables are "crisp tender", add the garlic and sausage, sauteing for 1 minute, being careful not to let the garlic burn.
  • Add the diced tomatoes.
  • Whisk the tomato paste and water together and add to the skillet.
  • Add all the spices.
  • Bring to a boil, then reduce heat. Simmer covered, for 20 minutes, uncover and simmer for 10 more minutes.
  • Serve tossed with cooked pasta or rice.

  • In a large pot of salted boiling water, cook ziti according to package instructions for very al dente, about 9 minutes. (It will continue to cook in the oven, so you want to undercook the pasta just a bit.) Drain; set aside.
  • Meanwhile, cook sausage in a 12-inch cast iron skillet or Dutch oven over medium-high heat until no longer pink, about 5-7 minutes. Use a slotted spoon to remove the sausage from the skillet and set aside on a paper towel-lined plate. Reserve 1 tablespoon of drippings in the skillet and drain off the rest (if you don't have enough fat in the skillet, add a tablespoon of olive oil).
  • Add the garlic and red pepper to the drippings in the skillet; cook over medium-high heat for 1 minute. Add wine; bring to a boil, and use a wooden spoon to scrape any browned bits from the bottom of the pan (these add tons of flavor to your sauce). Cook until reduced by half, about 5 minutes.
