ROUND 2 RECIPE - SAUSAGE AND PEPPER BAKED ZITI



Round 2 Recipe - Sausage and Pepper Baked Ziti image

Cooking spray
1/2 (16-ounce) package ziti
2 tablespoons canola oil
1 medium yellow onion, diced
2 teaspoons chopped garlic
1 (15-ounce) can crushed tomatoes
1 tablespoon Italian seasoning
Reserved sausage and pepper skewers, from Sausage and Pepper recipe
Salt and fresh ground black pepper
1 cup grated mozzarella cheese

Steps:

  • Heat the oven to 375 degrees F.
  • Coat a 9 by 13-inch baking pan lightly with cooking spray.
  • Bring a large pot of water to a boil over medium heat. Add the pasta and cook for about 6 minutes. It should be a little less than al dente; it will finish cooking in the oven.
  • While the pasta is cooking, heat the canola oil in a large skillet over medium-high heat, add the onion and garlic and saute until slightly tender, about 3 minutes. Add the tomatoes and Italian seasoning and cook for another 5 minutes. Chop the reserved sausage and peppers and add them to the skillet to heat through. Taste and adjust the seasoning with salt and pepper, to taste.
  • Drain the pasta and add it to the prepared baking pan. Pour the tomato sauce over the pasta and sprinkle with the cheese. Bake until the cheese is melted and lightly browned, about 30 minutes. Remove from the oven and serve.

Both kids and adults will dive into this new twist on baked ziti. If you like, assemble it up to one day ahead, refrigerate and bake just before serving. If you make it the day before you will have to adjust the baking time. I have taken this to our church potluck dinners. The recipe is always requested. Enjoy!

1 1/2 lbs sweet Italian sausage links or 1 1/2 lbs hot Italian sausage links, cut crosswise into one inch chunks
4 garlic cloves, minced
2 large bell peppers, cut into 1/4 inch pieces
1 large onion, cut croswise and then cut into 1/4 inch slices
1 (28 ounce) can whole tomatoes
1 (15 ounce) can tomato sauce
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil
1 lb ziti pasta or 1 lb penne pasta
1 (8 ounce) package part-skim mozzarella cheese, cut into 1/2 inch cubes
1/2 cup freshly grated romano cheese

Steps:

  • Prepare sauce. In deep nonstick 12 inch skillet cook sausage over medium heat 5 minutes or until browned on all sides, stirring occasionally.
  • Reduce heat to medium.
  • Discard all but two tablespoons sausage fat.
  • To sausage in skillet add garlic, peppers and onion
  • Cook until vegetables are tender, stirring occasionally.
  • Stir in whole tomatoes,tomato sauce, salt,oregano and basil.
  • Heat to boiling over medium heat breaking up tomatoes with side of spoon.
  • Reduce heat to low, cover and simmer 10 minutes.
  • Meanwhile preheat oven to 400.
  • Heat large covered saucepot of salted water to boiling over high heat.
  • Add pasta; cook 2 minutes less than cooking time recommended on label.
  • Drain well.
  • Combine vegetables with pasta.
  • Pour into 9 x 13 greased pan. Spread mozzarellacubes on top.
  • Bake 30 minutes.
  • Before serving sprinkle romano cheese on top.

28 ounces whole tomatoes in puree
15 ounces tomato puree
1 teaspoon salt
16 ounces ziti pasta
8 ounces part-skim mozzarella cheese, cut into 1/2-inch cubes
1/4 cup grated parmesan cheese or 1/4 cup romano cheese

Steps:

  • In a deep nonstick 12" skillet, cook sausage over medium-high heat, stirring occasionally, until browned on all sides, about 5 minute.
  • Reduce heat to medium. Discard all but 2 T sausage fat. Add garlic, pepper and onion to sausage in skillet; cook, covered, stirring occasionally, until vegetables are tender, 10 minute Stir in whole tomatoes, tomato puree and salt; bring to a boil over medium heat, breaking up tomatoes with side of spoon. Reduce heat to low; cover and simmer 10 minute.
  • Meanwhile preheat oven to 400 degrees F. In a large pot of boiling salted water, cook pasta 2 min less than cooking time recommended on label.
  • Drain pasta and return to pot; stir in sausage mixture to coat. Add mozzarella and toss to combine. Transfer pasta mixture to an ungreased 9x13" baking dish and spread it out evenly; sprinkle with grated cheese.
  • Bake, uncovered, until top browns and sauce is bubbling, 20 to 25 minute Let stand 10 min before serving.

1 1/3 cups green bell peppers

3/4 lb ziti pasta, cooked
parmesan cheese, grated
parsley sprig
40 fluid ounces marinara sauce
28 ounces italian-style canned tomatoes
10 3/4 fluid ounces tomato puree
1 teaspoon garlic, minced
4 tablespoons olive oil
1/2 cup fresh basil, packed,chopped
salt and pepper

Steps:

  • Bake or pan-fry the sausages until fully cooked, drain, cool.
  • Halve the sausages and cut the split sausages into ½ inch slices.
  • Sauté the bell peppers in olive oil over moderate heat only until their crispness is loss, but peppers are not soft.
  • In a heavy saucepan add the tomatoes, tomato puree, garlic, olive oil and fresh basil and bring to a light simmer on moderate heat.
  • Add the sautéed pepper strips and cooked sausage and heat for 3 to 5 minutes.
  • Serve the pasta, topped with the sausage, peppers and salsa marinara and garnish each plate with a parsley bouquet.
  • Pass the Parmesan.

1 1/2 lbs sweet sausages or 1 1/2 lbs hot Italian sausages, links
1 1/3 cups green bell peppers, seeded & cut into 1 x 1/4 strips
28 ounces Italian-style tomatoes (including liquid) or 28 ounces plum tomatoes (including liquid)
10 3/4 ounces tomato puree
1 teaspoon garlic clove, chopped finely
4 tablespoons extra virgin olive oil
2 tablespoons extra virgin olive oil
1/2 cup basil, fresh, chopped finely, firmly packed
salt & pepper
1 lb ziti pasta or 1 lb penne pasta, cooked according to package directions
fresh parsley, chopped
parmesan cheese, grated

Steps:

  • Pre-heat oven to 350ºF.
  • BAKE sausage links in oven for 20 minutes or until completely cooked. Cut sausages in half lengthwise; then cut into 1/2" slices. Result will be semi-circles of sausage. Set aside.
  • SAUTE pepper slices in olive oil until their crispness is lost, but not soft.
  • CHOP tomatoes or use a food processor on "pulse"; do not puree tomatoes.
  • COMBINE chopped tomatoes, tomato puree, garlic, olive oil and fresh basil in sauce pan. Bring to a simmer. Add sausage pieces and stir well.
  • TRANSFER cooked, drained pasta to large serving platter. Top with sausage & pepper marinara mixture.
