SAUSAGE CACCIATORE ZITI
WHEN I MAKE PASTA DISHES ANYTHING GOES. Here is one of my easy delicious dishes. My family really enjoys this dish.

Steps:
- 1. In lg skillet brown your sausage on all sides, add peppers and onion, slightly saute. continue to add rest of ingredients. Remove sausage cut in bite sizes return to pan bring back to boil. Turn on low and simmer for about half hour.
- 2. Boil ziti according to directions. Strain, I always save a cup of pasta water in case u need to add to sauce add ziti to sauce mixture simmer another few minutes add fresh basil and serve with fresh italian bread and parm.

Steps:
- Heat oven to 400 degrees F; cook pasta in a large pot of lightly salted water as package directs for al dente or firm texture.
- Meanwhile, heat oil in large nonstick skillet over medium heat.
- Add peppers, onion and sausage; cook 6 minutes or until sausage is browned.
- Remove from heat; cut sausage into 1/4-inch slices.
- Mix ricotta, 1 cup mozzarella, 3 T Parmesan and the parsley in a large bowl.
- Drain pasta; toss with cheese mixture, sausage mixture and 1 cup marinara.
- Pour pasta mixture into 2 quart shallow baking dish.
- Spoon remaining sauce on top; sprinkle with remaining mozzarella and Parmesan.
- Bake, uncovered,20 minutes or until bubbly.

- Pre-heat oven to 350ºF.
- BAKE sausage links in oven for 20 minutes or until completely cooked. Cut sausages in half lengthwise; then cut into 1/2" slices. Result will be semi-circles of sausage. Set aside.
- SAUTE pepper slices in olive oil until their crispness is lost, but not soft.
- CHOP tomatoes or use a food processor on "pulse"; do not puree tomatoes.
- COMBINE chopped tomatoes, tomato puree, garlic, olive oil and fresh basil in sauce pan. Bring to a simmer. Add sausage pieces and stir well.
- TRANSFER cooked, drained pasta to large serving platter. Top with sausage & pepper marinara mixture.
- GARNISH with parsley and grated Parmesan cheese.

- Bake or pan-fry the sausages until fully cooked, drain, cool.
- Halve the sausages and cut the split sausages into ½ inch slices.
- Sauté the bell peppers in olive oil over moderate heat only until their crispness is loss, but peppers are not soft.
- In a heavy saucepan add the tomatoes, tomato puree, garlic, olive oil and fresh basil and bring to a light simmer on moderate heat.
- Add the sautéed pepper strips and cooked sausage and heat for 3 to 5 minutes.
- Serve the pasta, topped with the sausage, peppers and salsa marinara and garnish each plate with a parsley bouquet.

ANDOUILLE SAUSAGE AND PEPPERS MARINARA
This is a "wow" recipe that I created last night. I had been wanting to try Andouille sausage and finally found it at a local grocery. It gives this dish just the right "kick" to spice up your dinner, though feel free to add some red pepper flakes if you really like it hot! My husband took one bite and said "you have got to write this recipe down"!

- In a large skillet over med-high heat, saute peppers and onion in the olive oil.
- Once the vegetables are "crisp tender", add the garlic and sausage, sauteing for 1 minute, being careful not to let the garlic burn.
- Add the diced tomatoes.
- Whisk the tomato paste and water together and add to the skillet.
- Add all the spices.
- Bring to a boil, then reduce heat. Simmer covered, for 20 minutes, uncover and simmer for 10 more minutes.
- Serve tossed with cooked pasta or rice.

- In a large pot of salted boiling water, cook ziti according to package instructions for very al dente, about 9 minutes. (It will continue to cook in the oven, so you want to undercook the pasta just a bit.) Drain; set aside.
- Meanwhile, cook sausage in a 12-inch cast iron skillet or Dutch oven over medium-high heat until no longer pink, about 5-7 minutes. Use a slotted spoon to remove the sausage from the skillet and set aside on a paper towel-lined plate.
