2 pounds bacon
8 cups shredded sharp Cheddar cheese
4 cups processed cheese sauce
2 cups sour cream
2 cups mayonnaise
2 large onions, finely chopped
1 tablespoon minced chives
2 teaspoons salt
2 teaspoons ground black pepper

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain, cool, and cut into cubes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels; crumble.
  • Preheat oven to 325 degrees F (160 degrees C). Lightly grease an 8-quart baking dish.
  • Combine potatoes and bacon in a large bowl. Mix Cheddar cheese, cheese sauce, sour cream, mayonnaise, onions, chives, salt, and pepper in a bowl. Stir cheese mixture into potatoes; transfer to baking dish and cover with aluminum foil.
  • Bake in preheated for 50 minutes; remove foil and continue baking until cheese is bubbly and lightly browned, about 10 minutes.

6 slices bacon
1 ½ cups shredded Cheddar cheese, divided
1 cup evaporated milk
½ cup sour cream
1 teaspoon salt
½ teaspoon ground black pepper
1 cup sliced green onions, divided
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and return potatoes to pot.
  • Meanwhile, arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels and crumble.
  • Combine 1 1/2 cup Cheddar cheese, evaporated milk, sour cream, salt, and black pepper in the pot with potatoes. Mash with a potato masher until creamy. Spread potato mixture into prepared baking dish.

2 (24 ounce) containers Simply Potatoes Traditional Mashed Potatoes
1 (12 ounce) package wonton wrappers (use 24 wrappers)
1 -8 ounce sour cream
2 cups shredded cheddar cheese
1 (2 1/2 ounce) package pre- cooked bacon, cut in 1 inch pieces

Steps:

  • Preheat oven to 350 degrees.
  • Peel film at corners of both containers to vent. Heat both containers in microwave for 4 minutes. Place warmed potatoes in a large bowl and stir in the sour cream.
  • Spread half of the potato/sour cream mixture in a 9x13 non-stick baking dish. Top with 1 cup of the cheese and sprinkle the bacon pieces on top. Top with a single layer of 12 wonton wrappers. Spread the remaining half of the potato mixture on top of the wonton layer. Finish with a second, single layer of the wonton wrappers. Sprinkle wontons with the remaining cheese. Cover with foil and bake 30 minutes.

Nonstick cooking spray, for greasing the baking dish
6 large russet potatoes
Pinch salt
8 ounces sliced bacon
1 cup milk
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup (1/2 stick) unsalted butter
Pinch garlic salt
Pinch freshly ground black pepper
2 cups grated Cheddar

Steps:

  • Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
  • Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
  • While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
  • Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
  • Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.

Nonstick cooking spray
6 slices bacon, cut 1/2-inch thick
2 1/4 pounds russet potatoes (about 4), scrubbed clean and cut into 1-inch chunks
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
2/3 cup sour cream
2 scallions, white and light green parts only, thinly sliced

Steps:

  • Preheat the oven to 425 degrees F and spray a 3-quart casserole dish with nonstick spray. Set aside.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
  • Put the potatoes into the prepared casserole dish. Toss with the reserved 2 tablespoons bacon drippings, 1 teaspoon salt and 1/2 teaspoon pepper. Roast until the potatoes are soft and begin to brown, about 45 minutes.
  • Meanwhile, mix together the cream cheese and 1 cup Cheddar in a bowl until well combined. Dollop over the potatoes, then sprinkle with the remaining cup Cheddar and bake until the cheese is melted and bubbly and the potatoes are completely cooked through when poked with a knife, 13 to 15 minutes.
  • Dollop the sour cream evenly over the casserole and sprinkle with the scallions and bacon pieces.

Official Contest Entry: Simply Potatoes 5Fix. I think this is one of easier recipes to follow and put together that I make and it taste good to. I scaled it down from a recipe that was given to me about twenty years ago, and added leeks. Just make sure you clean the sliced leeks in water.

1 (10 3/4 ounce) can cream of chicken soup
1 large leek (sliced and diced)
1 cup hot milk

  • Preheat oven to 350 degrees. Slice the white part of leek and dice, put in small bowl of warm water to clean.(sand should go to bottom). 1 lb Simply Potatoes Sour Cream and Chive Mashed Potatoes
2 cups medium cheddar (separate 1/2 to the side)
1/2 lb bacon
18 g dry ranch dressing mix (or 2/3 packet/1.2 Tablespoons)
3 tablespoons butter (1 tbls. separate for greasing)

Steps:

  • Preheat oven to 350, use 1tbls. butter to grease a 9x13 in backing dish.
  • In a frying pan, brown the bacon on medium high turning until desired color, approximately 10 minutes, when bacon is finished, chop up into small bacon bit size pieces.
  • In a bowel mix 1 1/2c cheddar cheese, 2/3 ranch packet and mashed potatoes together and spread into casserole dish, put in oven for 15-20 min or until the casserole is blended.
  • Add bacon and remaining cheese, remove when cheese is melted, approximately five more minutes.

This recipe comes from the Kirby House Restaurant in Abilene, Kansas. It is a low maintenance but flavorful potluck dish! In addition to the below ingredients, I add Penzey's Brady Street & Sandwich Sprinkle to each layer. But if you do add Sandwich Sprinkle, remember, there is salt already in it. This is a great 'make-ahead' dish that you can refrigerate or freeze until you are ready to bake. Prep time is approximate. Enjoy!

6 medium unpeeled potatoes, baked
1/4 teaspoon salt
1/4 teaspoon pepper (I use Penzey's mignonette)
6 -8 slices bacon, cooked and crumbled (I use thick cut bacon)

1 cup shredded cheddar cheese, if desired (or more)
2 green onions, chopped

Steps:

  • Preheat oven to 350 degrees.

1/2 fresh cabbage, thinly shredded

8 ounces irish cheddar cheese or 8 ounces any aged cheddar cheese, shredded

1 (16 ounce) package Simply Potatoes (depending on number of people)
1/2-1 head green cabbage, sliced thin and cut into smaller pieces
1 large sweet onion, chopped
8 ounces shredded cheddar cheese (or your choice)
1/4 cup olive oil (for searing the cabbage and onion)

Steps:

  • For one package of simply mashed potatoes (I use either the garlic or mashed with skins) spray an 8 x8 glass casserole/pan. In a large skillet cook cabbage & onion in olive oil over medium heat just until tender, seasoning with salt and pepper to taste. In casserole dish spread out one layer of potatoes about 1/2 package, then 1/3 of the cheese, then cabbage and onion. Top with remaining potato and cheese. Bake in a preheated 350 degree oven for 30 minutes or cheese is lightly golden brown.
