- Preheat the oven to 350F degrees. Grease a 12-cup muffin pan with non-stick cooking spray; set aside.
- Crumble the sausage into a skillet over medium-high heat and cook until no longer pink. Drain off the fat and set the sausage aside to cool slightly.
- In a large mixing bowl, lightly beat the eggs. Add the shredded cheese, Bisquick, and the fully cooked sausage; mix well.
- Fill the prepared muffin cups about ¾ full with the mixture. Bake for 18-20 minutes, or until golden brown on top.

- Preheat the oven to 400 degrees F (204 degrees C).
- In a large skillet over medium-high heat, cook the ground sausage, breaking apart with a wooden spoon, for 8-10 minutes, until browned.
- Meanwhile, line a muffin tin with 12 parchment muffin liners or silicone muffin liners.
- Arrange the ground sausage in the muffin cups. Sprinkle cheese on top.
- Whisk together the eggs, heavy cream, sea salt, and black pepper. Pour the egg mixture into the muffin cups over the sausage.
- Bake for 15-20 minutes, until the eggs are set.

SAUSAGE, EGG & CHEESE COCONUT FLOUR MUFFINS
This low carb muffin is a delicious breakfast option. The texture is more like eggs than a muffin but still tasty. Italian sausage and cheese add tons of flavor. We loved that the recipe makes exactly 6 muffins. A great meal prep option. Make these on Sunday and you'll have breakfast prepared for the week.

Steps:
- Cook sausage lightly, breaking into small crumbles. Set aside to cool.
- Blend together egg, coconut oil or butter, coconut milk, salt, garlic powder, cumin and thyme.
- Stir in coconut flour until no lumps remain.
- Fold in 3/4 cup cheese and the sausage.
- Fill 6 greased muffin cups with batter. Sprinkle tops of muffins with remaining cheese.
- Bake at 400 degrees F. (205 c) for 15 minutes. High altitude: Move oven rack to the top level and bake at 375 F for 18 minutes.
- Variation: Use chopped cooked bacon or spicy sausage in place of the mild sausage.
- Note: There is no leavening in this recipe. The muffins will not rise, so you can fill the muffin cups to the top. Muffins are a little more dense than usual.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.
- In a large bowl, combine eggs, chiles, onion, garlic powder, salt pepper and sausage; mix well. Spoon 1/4 cup of sausage mixture into each prepared muffin cup.
- Bake in preheated oven for 15 to 20 minutes, until egg has set and a toothpick inserted into each 'muffin' comes out clean.
