2 cups sugar
1 cup canola oil
4 large eggs
2 jars (6 ounces each) carrot baby food
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract
4 cups confectioners' sugar
Yellow, red and green liquid food coloring
2 pastry or heavy-duty resealable plastic bags

Steps:

  • In a bowl, beat sugar, oil, eggs and carrots. Combine flour, baking powder, cinnamon, baking soda and salt; add to carrot mixture and mix well. Pour into a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool. , In a bowl, beat cream cheese, butter and vanilla. Blend in sugar until smooth. Place 1/4 cup of frosting in a small bowl; stir in yellow and red food coloring to make orange. Set aside. Place 3 tablespoons frosting in a small bowl; stir in green food coloring., Spread white frosting on cake. Cut a small hole in the corner of a pastry or plastic bag; fill with orange frosting. Mark off 20 squares on the cake; pipe a small carrot in the center of each square. Place green frosting in another bag; cut a small hole in the corner. Pipe greens on top of each carrot.

2 cups old-fashioned rolled oats (not quick-cooking)

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
  • In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in just until combined.
  • Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 bars.

  • In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Unsalted butter, softened, for baking sheet
2 cups raisins (about 13 ounces)
1 cup sugar
1 teaspoon cornstarch
1/2 cup apple cider
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1 1/4 teaspoons coarse salt
1 1/4 cups vegetable shortening
1 1/4 cups packed light-brown sugar
1 large egg
1 1/4 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats

Steps:

  • Preheat oven to 350 degrees. Butter a 10-by-15-inch rimmed baking sheet. Line bottom with parchment paper, and butter parchment; set sheet aside.
  • Make filling: Pulse raisins and sugar in a food processor until almost pureed. Transfer to a saucepan. Whisk cornstarch into 1 cup cold water; whisk into raisin mixture. Stir in cider. Simmer over medium-low heat, stirring occasionally, until mixture thickens and sugar has dissolved, about 6 minutes.Let cool completely.
  • Make dough: Whisk together flour, baking soda, and salt in a medium bowl; set aside. Put shortening in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Add brown sugar, and mix until pale and fluffy, 2 to 3 minutes. Add egg and vanilla, and mix until combined. Reduce speed to low. Add flour mixture; mix until just combined. Mix in oats.
  • Press half the dough into prepared baking sheet. Spread raisin filling evenly over top of dough. Crumble remaining dough on top of filling using your fingers, gently pressing down so that topping covers filling. Bake, rotating sheet halfway through, until top is golden brown, about 35 minutes. Let cool completely in sheet on a wire rack. Cut into 2-inchsquares. Bars can be stored between layers of parchment in airtight containers at room temperature up to 5 days.

1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup confectioners' sugar
2 tablespoons butter or 2 tablespoons oleo

1 pinch salt
enough warm coffee to make frosting spreadable on warm cookie

Steps:

  • Combine the liquid ingredients in pot, Bring to boil, boil 5 minutes, then let cool.
  • Combine the dry ingredients.
  • Mix dry ingredients with cooled ingredients.
  • Spread in greased floured 11 x 15 pan.
  • If batter is too thick, thin with sherry or rum or water before spreading.
  • Bake in a 350 oven for 20 minutes approximately
  • Spread frosting on warm cake.
  • I think you could adjust any of the spices to your own taste, but we liked it as is.

Steps:

  • Whisk flour, baking powder, and salt together in a bowl.

  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy. Add flour mixture in 3 batches, alternating with egg mixture, beating dough briefly after each addition. Divide dough in half and wrap in plastic wrap; chill for 2 hours or until firm.

  • Combine the raisin filling ingredients in a saucepan and heat over medium heat until the raisins are plump and the liquid has almost completely evaporated (about 10 minutes).

Number Of Ingredients 15

2 cups Kellogg's corn flakes (crushed to 1/2 cup) or 1/2 cup Kellogg's® corn flake crumbs
1 cup all-purpose flour
1/3 cup firmly packed brown sugar
1/3 cup margarine or butter, softened
2 tablespoons all-purpose flour
1/4 teaspoon salt
2 eggs, slightly beaten
1 cup firmly packed brown sugar
1 1/2 cups flaked coconut
1/2 teaspoon vanilla extract
1 cup chopped nuts
LEMON ICING
1 cup powdered sugar
1 tablespoon margarine, melted
1 tablespoon lemon juice

Steps:

  • 1. In mixing bowl, combine KELLOGG'S CORN FLAKES cereal, the 1 cup flour, he1/3 cup sugar and margarine. Mix well. Press evenly in bottom of 13 x 9 x 2-inch baking pan.2. Bake at 275°F for 10 minutes. Remove baked crust from oven. Set aside. Increase oven temperature to 350° F.3. Mix together the 2 tablespoons flour and salt. Set aside.4. In medium mixing bowl, combine eggs, the 1 cup brown sugar, coconut and vanilla. Add flour mixture and nuts. Mix well. Spread over baked crust.5. Return to oven and bake 20 minutes or until bars are lightly browned.6. While bars are baking make Lemon Icing. Combine powdered sugar, the 1 tablespoon margarine and lemon juice. Beat until smooth. After bars are baked and still warm, frost with Lemon Icing. Cool and cut into bars.
