2/3 cup pecans, plus more for decorating
3/4 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1 stick unsalted butter, at room temperature
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
Turbinado sugar, for sprinkling

Steps:

  • Preheat the oven to 350 degrees F. Spread the pecans on a rimmed baking sheet and bake until browned, 10 to 12 minutes. Let cool completely. Sift 3/4 cup flour, the salt and baking powder into a medium bowl.
  • Pulse the toasted nuts with the remaining 2 tablespoons flour in a food processor until finely ground.
  • Beat the butter, confectioners' sugar and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, 3 to 5 minutes. Add the flour mixture and stir with a wooden spoon until just combined, then stir in the nut mixture. Pat the dough into a rectangle on a piece of plastic wrap; wrap and refrigerate until firm, at least 2 hours or overnight.
  • Position racks in the upper and lower thirds of the oven and preheat to 325 degrees F. Line 2 baking sheets with parchment paper. Roll out the dough between 2 pieces of parchment into a 9-by-6-inch rectangle, slightly less than 1/4 inch thick. Sprinkle the dough with turbinado sugar, then gently press the sugar into the dough using a rolling pin. Slice into sixths crosswise and lengthwise to make 36 rectangles. Arrange about 1 inch apart on the prepared baking sheets. Pierce each rectangle a few times with a fork, then press a pecan onto each. Bake, switching the position of the pans halfway through, until golden brown, 10 to 12 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

3/4 cup golden syrup, such as Lyle's
1/3 cup water
2 sticks cold unsalted butter, diced
2 tablespoons heavy cream
1 tablespoon pure vanilla extract
3/4 teaspoon salt

Steps:

  • Make the crust: Preheat the oven to 350˚. Lightly butter the bottom and sides of a 9-inch fluted tart pan with a removable bottom. Spread the pecans on a baking sheet and toast in the oven, stirring once, 10 minutes; let cool. Set aside 1 cup perfect pecan halves for topping.
  • Transfer the remaining 1 cup pecans to a food processor with the flour, confectioners' sugar and salt; process until the nuts are finely ground. Add the butter and egg yolk and pulse until the dough is moistened and starts to clump together. Press the dough into the bottom and up the sides of the prepared pan. Freeze until firm, about 20 minutes.
  • Line the crust with parchment paper or foil and fill with pie weights or dried beans. Bake until firm and dry around the edges, about 25 minutes. Remove the parchment and weights and continue baking until the crust is lightly browned all over, about 15 more minutes. Transfer to a rack to cool completely.
  • Meanwhile, make the filling: Combine the granulated sugar, golden syrup and water in a medium saucepan over medium-high heat; stir until dissolved. Cook, swirling the pan occasionally, until the mixture turns a deep amber color, thickens slightly and registers 300˚ on a candy thermometer, about 8 minutes. Remove from the heat and stir in the diced butter, 1 piece at a time, until smooth and thickened. Stir in the heavy cream, vanilla and salt. Let cool slightly, stirring occasionally, about 30 minutes.
  • Pour the filling into the cooled crust and arrange the reserved pecans on top. Refrigerate until cold and set, at least 3 hours or overnight.

1 egg white
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F.
  • Whisk together flours, pecans, cinnamon, and salt. Cream butters and sugar. Add the egg white and continue beating until light and fluffy. Beat in vanilla extract. On low speed, gradually add flour mixture and beat until a dough forms.
  • Shape the dough into 3-inch balls, about 1 heaping tablespoon each. Place dough balls 2 inches apart on baking sheets lined with parchment paper. Bake until lightly browned on the bottom, 10 minutes.

2 cups butter
2/3 cup white sugar
4 teaspoons water
4 teaspoons vanilla
4 cups sifted flour
2 cups chopped pecans
6 tablespoons powdered sugar

Steps:

  • Cream to gether butter and sugar until smooth.
  • Beat in water and vanilla.
  • Stir in the flour and pecans until well blended (I use the mixer).
  • Cover dough and chill at least 4 hours (can be chilled over night).
  • Preheat oven 325 degrees.
  • Shape dough into walnut sized balls or cresents.
  • Place 2 inches apart onto cookie sheets.
  • Bake for 18 to 20 minutes.
  • Roll in powdered sugar while still warm.
  • I like to double roll them in the powdered sugar.

This was one of the first cheesecakes that I learned to make, and it set the bar pretty high. The pecans in the crust give it an extra special touch, and the sour cream topping adds to the "wow" factor. This cheesecake needs to chill in the refrigerator at least 2 hours before serving, which is not reflected in the preparation time. It can be prepared up to three days ahead and kept in the refrigerator.

5 ounces graham crackers (to make 1-1/2 cups crumbs)
1/4 cup pecan halves
3 tablespoons sugar
6 tablespoons unsalted butter, melted
1 lb cream cheese, softened, cut in pieces
1/2 cup sour cream
3/4 cup sugar
3 eggs
1 grated large lemon, zest of
1 vanilla beans, split lengthwise or 1 teaspoon vanilla extract
1 1/2 cups sour cream
3 tablespoons sugar
1 teaspoon vanilla extract

Steps:

  • To make crust, preheat oven to 350 degrees. Process graham crackers in a food processor until they become fine crumbs or put them in a plastic bag and crush with a rolling pin. Measure out 1-1/2 cups.
  • Chop pecan halves. Mix cracker crumbs with pecans and sugar. Add melted butter and mix well.
  • Lightly butter a 9-inch springform pan. Press mixture in an even layer on bottom and about 1 inch up the sides of pan. Bake in oven for 10 minutes. Let cool completely. Leave oven set at 350 degrees.
  • To make filling, beat cream cheese with sour cream at low speed until very smooth. Gradually beat in sugar. Beat in eggs, one at a time. Beat in lemon zest. If using vanilla bean, scrape its seeds with point of a knife into cheese mixture, or stir in vanilla extract.
  • Carefully pour filling into cooled crust and bake for about 45 minutes or until firm in center. Remove from oven and cool for 15 minutes. Raise oven temperature to 425 degrees.
  • To make topping, mix together sour cream, sugar and vanilla. Carefully spread topping on cake in an even layer without letting it drip over crust.
  • Return cake to oven and bake for 8 minutes or until topping sets. Remove from oven and cool to room temperature. Refrigerate at least 2 hours before serving.
  • Remove sides of springform pan just before serving.

1 cup powdered sugar
1 teaspoon vanilla
2 cups flour

Steps:

  • Heat over to 350
  • Combine butter, 1/2 cup powdered sugar and vanilla* in a large bowl and mix with electric mixer for about 3 minutes on high speed until mix is light and fluffy.
  • Add flour, salt and nuts to the butter mix slowly at low speed until all ingredients are blended.
  • Divid cookie dough in half. Shape each cookie dough portion into a log, 1 1/2" in diameter. Wrap the logs in plastic wrap and refrigerate for 1 hour or more.
  • Cut the dough logs into 1/4" slices and place 1/2" apart on an ungreased cookie sheet.
  • Bake cookies for 15 minutes or until lightly browned on top. Remove cookies from the baking sheet immediately and roll them in the remaining powdered sugar.
  • Place cookies on a rack to cool before storing in a container.
  • *I always use Mexican vanilla when baking and it makes a difference.

  • Beat in eggs one at a time.
  • Add vanilla. Stir until blended.

3 cups sugar
2 teaspoons vanilla
5 cups pecan halves

Steps:

  • Mix together sugar and sour cream in a heavy 2 1/2 quart saucepan.
  • Cook over a low heat, stirring constantly, until the mixture reaches 240 degrees (or soft ball stage).
  • Remove from heat and stir in vanilla.
  • Continue to stir until the mixture begins to cool.
  • Add pecans, making sure all of them are coated.
  • Place pecans individually on wax paper to cool.

  • In a large mixer bowl, beat butter or margarine and shortening with electric mixer for 30 seconds. Add sugar; beat till fluffy. Add egg, sour cream, and vanilla; beat well.
  • Add Dry ingredients; beat till well combined.
  • Divide dough in half; cover and chill the dough at least 3 hours.
  • Working with half of the dough at a time, on a lightly floured surface, roll to 1/8 inch thickness. Cut with desired cookie cutter, or you can shape dough into 1 inch balls.
  • Place on an ungreased cookie sheet. Bake cutout cookies in 375 deg. F. oven for 7 to 8 minutes, or till done. For ball shaped cookies, bake for 10 minutes.
  • Remove to a wire rack; cook.
  • Make lemon glaze: In a mixer bowl beat 1 egg white till frothy. Add 1 1/2 cups sifted powdered sugar, 1 tablespoon lemon juice, and a dash of salt. Beat well. Add a few drops of food coloring if desired.
  • Spread or drizzle cookies with lemon glaze. Decorate with halved pecans, or chopped or halved pistachio nuts.
