An overnight breakfast casserole, Sausage Cheese Strata is comfort food at its finest! It comes together quickly and is easy to customize for specific tastes!

Steps:
- Grease a 13x9 pan and set aside.
- In a large skillet, cook sausage over medium high heat until no pink remains. Remove sausage to a plate. Drain fat from pan, leaving about 1/2 tablespoon.
- Add diced onions to skillet and saute for about 5 minutes until translucent. Return sausage to skillet and stir into onions for a minute or two. Remove from heat.
- In a large bowl, combine eggs, milk, dijon, salt, garlic powder and pepper. Whisk until well combined. Stir in cheese to egg mixture.
- Add bread cubes to prepared pan. Evenly spread sausage mixture over bread crumbs. Pour egg mixture over the entire dish.
- Cover and place in fridge overnight or for a minimum of 8 hours.
- When ready to make, remove dish from fridge and let sit at room temperature for 20 minutes.
- Preheat oven to 350 degrees. Bake for 40-50 minutes, uncovered, until the eggs are set and a knife inserted in the center comes out clean. Let sit for 5-10 minutes before cutting.

- Preheat oven to 375 degrees. Butter or oil a 3-quart baking dish (9 by 13 by 2-inch rectangular or 9 1/2 by 3-inch round).
- In a large skillet or sauté pan, heat the oil over medium heat. Add the sausage and cook until no longer pink, stirring and breaking up into small pieces.
- Stir in the bell pepper, shallots and garlic and season with kosher salt. Continue cooking, stirring occasionally, until the peppers are soft, around another 5 minutes. Stir in parsley and remove from heat. Set aside.
- In a large mixing bowl, whisk eggs until yolks and whites are combined. Whisk in milk, sour cream and mustard (sour cream will be a bit lumpy but that's okay). Stir in shredded cheese; season with ground pepper.
- Place frozen potatoes in a large mixing bowl. Stir in sausage mixture. Spread evenly in prepared baking dish. Spoon egg-cheese mixture over the top. Let sit for 5 to 10 minutes to allow the egg mixture to soak in.
- Bake for around 45 minutes (5 to 10 minutes longer if in round pan) or until the top is golden brown and set (casserole doesn't jiggle when moved). Let sit for 5 to 10 minutes before serving.

- Butter a 9-by-13-inch baking dish.
- Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the bell peppers to the skillet with 1/4 teaspoon salt and cook, stirring occasionally, until tender, about 4 minutes. Set aside.
- Whisk together the half-and-half, Parmesan, parsley, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a medium bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the mozzarella, followed by the sausage and peppers. Cover with the remaining bread cubes and pour the custard evenly over the top. Cover with plastic wrap and let soak at room temperature 30 minutes to 1 hour. - Saute sausage with celery and carrots.
- In a separate pan, saute ground beef with mushrooms, onions, and garlic.
- The point it to impart different flavors in the ground beef and sausage.
- Once the vegetables are tender and the meats are cooked, combine with softened cream cheese.
- Meanwhile, slice the potatoes into slices and blanch for 4-5 minutes, until just slightly soft.
- Layer the bottom of a casserole dish with the potato slices.
- Top with cream cheese/meat mixture.
- Repeat layers until all ingredients have been used.
- Bake at 350°F for 30 minutes.
- Meanwhile, prepare the hash browns according to the bag on the skillet. You'll probably have to do two or more batches to do it all.
- Take the casserole out and top with hash browns and shredded cheeses.
- The hash browns will most likely be in a circle shape from your pan, so just break it up where need be to fit it on top of the casserole.
- Throw in the broiler for five minutes or until cheese has melted and hash browns have somewhat melded to the casserole.

This has been our Christmas breakfast since I was a child. I look forward to it every year. You can really change it up and add any type of meat, cheese, or veggies you like. This can easily be a vegetation dish also. This dish is wonderful for lunch if you add chicken, asparagus and Swiss cheese. But, the breakfast strata brings back so many great memories, you just can't beat it!!

- Spray baking dish with Pam.
- Brown sausage and let it cool. Cook bacon and let it cool. Set both aside.
- Mix eggs and milk in separate dish (make sure eggs are well beaten).
- Add cubed bread, shredded cheese and cooled sausage to the egg and milk mixture.
- Pour all ingredients (except bacon into the baking dish).
- Add crumbled bacon to the top of the dish.
- Bake on 350 degrees for 45 minutes. It will puff up pretty high, like a quiche. Let is set for about 25 minutes before serving. It will settle and fall a bit.
