Years ago, I found a version of this sausage and meatballs recipe in a cookbook. At first taste, my family judged it a keeper. The tangy, saucy meatballs are requested by our friends whenever I host card night. We also take the yummy dish on camping trips. -Marybell Lintott, Vernon, British Columbia

1 large egg, lightly beaten
1 small onion, finely chopped
3/4 cup dry bread crumbs
1 tablespoon dried parsley flakes
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1 pound bulk pork sausage
1 can (14 ounces) jellied cranberry sauce
3 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoon prepared mustard
1 package (1 pound) miniature smoked sausage links

Steps:

  • In a large bowl, combine the first six ingredients. Crumble bulk sausage over the mixture and mix well. Shape into 1 in. balls. In a large skillet, cook meatballs over medium heat until a thermometer reads 160°.; drain., In a large saucepan, combine the cranberry sauce, vinegar, brown sugar and mustard. Cook and stir over medium heat until cranberry sauce is melted. Add the meatballs and sausage links. Bring to a boil. Reduce heat; simmer, uncovered, until sausage links are no longer pink and sauce is slightly thickened, 10-15 minutes.

Yield 2 dozen (1-1/2 cups sauce).

3 cups cooked stuffing
1 pound ground turkey
1 pound bulk pork sausage
1 cup jellied cranberry sauce
1/2 cup chili sauce
1/4 cup orange juice
3 tablespoons brown sugar
1 teaspoon soy sauce
1/2 teaspoon grated orange zest

Steps:

  • Place stuffing in a large bowl. Crumble ground turkey and pork sausage over stuffing and mix well. Shape into 2-in. balls. Place on a greased rack in a shallow baking pan. Bake at 375° for 15-20 minutes or until a thermometer reads 160°. Drain on paper towels., Meanwhile, in a small saucepan, combine the remaining ingredients; heat through. Serve with meatballs. Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary. Meanwhile, combine and heat remaining sauce ingredients as directed. Serve over meatballs.

A crowd-pleaser for Holiday gatherings. This is my most requested recipe. These are best served with Versatile Mustard Dip (Recipe #150023).

1 lb bulk sausage
1 (10 ounce) package sharp cheddar cheese (grated)
2 cups Bisquick baking mix

Steps:

  • Allow cheese and sausage to reach room temperature.
  • Place in mixing bowl with Bisquick and blend until smooth. (I've had great success using my hand-held electric mixer to incorporate ingredients).
  • NOTE: Mixture will be quite dry.
  • Line a cookie sheet with aluminum foil.
  • Spray well with vegetable oil spray.
  • Press/roll mixture into 1 inch balls by hand; place on cookie sheet about 1 inch apart.
  • Bake in 400 degree Fahrenheit oven for 10 to 12 minutes, or until golden brown.
  • Drain on paper toweling.
  • Serve warm with Versatile Mustard Dip (Recipe #150023).

Add some sweet/spicy flair to your appetizer spread! These zippy sausage balls use bulk Italian pork or turkey sausage and dried cranberries to use on a party buffet spread, or for watching the game. I just love finger foods that are just a bite or two, and these fill the bill. Add some extra heat with optional red pepper flakes, or dial down the heat and use sweet Italian sausage instead of the hot, if you prefer. Either way, you will enjoy the tangy sweetness the cranberries bring!

8 ounces cream cheese, softened
4 ounces mild Cheddar cheese, grated
1 pound bulk hot Italian sausage
6 ounces dried cranberries, finely chopped
2 tablespoons chopped flat-leaf (Italian) parsley
½ teaspoon onion powder
½ teaspoon garlic powder
⅛ teaspoon crushed red pepper flakes
1 ½ cups buttermilk baking mix
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a sheet pan with parchment paper.
  • Combine cream cheese and Cheddar cheese in the bowl of an electric mixer. Mix on medium speed until blended, about 1 minute. Add sausage in golf ball-size pieces while mixer is running and continue to mix until combined with the cheeses, about 1 minute. Add cranberries, 2 tablespoons parsley, onion powder, garlic powder, and red pepper flakes; continue to mix until well blended, about 2 minutes.
  • Stop the mixer and stir in baking mix with a wooden spoon until it is distributed throughout.
  • Form 27 golf ball-size sausage balls with your hands or a meatball scoop. Place on the prepared baking sheet, spacing evenly.
  • Bake in the preheated oven until nicely browned and no longer pink in the centers, about 30 minutes. Drain on paper towels if necessary. Serve warm garnished with remaining parsley.

2 cups breadcrumbs
1/2 cup milk
1 teaspoon prepared mustard
2 teaspoons horseradish
2 eggs
1/2 cup sugar
2 tablespoons cornstarch
1/4 cup vinegar
1 (1 lb) can cranberry sauce
1 cup diced orange

Steps:

  • Ham Balls: Mix all ingredients for ham balls together and form into 1-inch balls.
  • Bake at 375°F for 15-20 minutes.
  • Sauce: Mix first four ingredients.
  • Stir in cranberry sauce and orange; heat until cranberry sauce melts.
  • Pour over ham balls.
  • Keep warm in chaffing dish or crock pot.
