ONE-POT QUINOA WITH SPICY SAUSAGE



One-Pot Quinoa with Spicy Sausage image

Try this protein-packed dinner made in one pot, with quinoa and all your favorite Mexican flavors.

1 lb lean spicy Italian turkey sausage, casings removed
2 teaspoons olive oil
1 small onion, coarsely chopped (about 1/2 cup)
1 medium red bell pepper, coarsely chopped (1 cup)
1 medium green bell pepper, coarsely chopped (1 cup)
2 cloves garlic, finely chopped
1 package (12 oz) uncooked quinoa, rinsed, drained (2 cups)
1 carton (32 oz) Progresso™ reduced sodium chicken broth
1 1/2 cups frozen whole kernel corn
2 teaspoons ground cumin
2 teaspoons chili powder
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground red pepper (cayenne)
1 cup shredded reduced-fat Mexican cheese blend (4 oz)
1 large tomato, seeded, chopped (1 cup)
1/2 cup chopped fresh cilantro

Steps:

  • In 5-quart nonstick Dutch oven, cook and coarsely crumble sausage over medium heat until no longer pink. Drain; transfer to large bowl. Cover with foil; set aside.
  • Wipe out Dutch oven with paper towel. Add oil; heat over medium heat until shimmering. Add onion; cook about 3 minutes, stirring frequently, until softened. Add bell peppers and garlic; cook 3 to 4 minutes longer, stirring occasionally, until softened. Using slotted spoon, transfer vegetables to bowl with sausage; replace foil, and set aside.
  • Wipe out Dutch oven. Add quinoa; cook over medium heat 1 to 2 minutes, stirring occasionally, until fragrant. Slowly stir in broth, corn, cumin, chili powder, salt and ground red pepper. Heat to simmering over high heat, stirring occasionally. Cover; reduce heat. Simmer 20 to 25 minutes or until liquid is absorbed and quinoa is thoroughly cooked. Stir in sausage and vegetable mixture; heat until hot.
  • Remove from heat; stir in cheese. Top with tomato and cilantro.

Steps:

  • In a large skillet, cook sausage and onion over medium heat 5-7 minutes or until sausage is no longer pink, breaking sausage into large crumbles; drain. , Transfer sausage and onion to a 4- or 5-qt. slow cooker. Stir in beans, corn, peppers, quinoa, zucchini, garlic, seasonings, tomatoes and broth. Cook, covered, on low until vegetables and quinoa are tender, 5-6 hours. Sprinkle with cilantro.

2 tablespoons extra-virgin olive oil
2 cloves garlic, thinly sliced
1 cup quinoa, rinsed
1 cup low-sodium chicken broth
1/2 cup grape tomatoes, halved
Kosher salt and freshly ground pepper
3/4 cup shredded extra-sharp cheddar cheese
(about 3 ounces), plus more for topping
1/4 cup chopped fresh parsley
1 small head broccoli, cut into florets
1 14-ounce package turkey kielbasa

Steps:

  • Preheat the oven to 400 degrees F. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the garlic and cook, stirring, until softened, about 1 minute. Add 1 cup water, the quinoa, chicken broth, tomatoes, 1/4 teaspoon salt and a few grinds of pepper; bring to a simmer, stirring. Reduce the heat to medium low, cover and cook until the quinoa is tender and the liquid is mostly absorbed, 12 to 15 minutes. Remove from the heat and stir in the cheese and parsley. Cover to keep warm.
  • Meanwhile, toss the broccoli with the remaining 1 tablespoon olive oil on a baking sheet; season with salt and pepper. Add the kielbasa to the baking sheet. Roast until the broccoli starts browning and the kielbasa is hot throughout, 15 to 18 minutes. Let cool slightly, then slice the kielbasa. Serve the quinoa topped with the kielbasa, broccoli and more cheese.

Quinoa (pronounced KEEN-wah) has a light, nutty flavor with a wonderful texture that makes it fun to eat. Quinoa is the only grain that is a complete protein. It was the staple food of the Incas in Peru, who called it "the Mother grain." Find it near the rice or in the bulk food section of a health food store or your grocer's natural foods aisle. Store it in an airtight jar. Use your family's favorite type of sausage to make this recipe a real winner. Our current favorite is an organic chicken-feta sausage that we find in our regular grocer's freezer. There is no need to thaw frozen sausages; just be sure to separate them before adding them to the Dutch oven. Try this recipe with toasted buckwheat groats, also called kasha, for a change in flavor.

Steps:

  • Preheat the oven to 450°F.
  • Spray the inside and lid of a cast-iron Dutch oven with olive oil.
  • Pour the quinoa into the pot, add the liquid, and stir to coat the grains and make an even layer.
  • Add the sausages to the pot in a single layer, if possible. Scatter the bell peppers on top and lightly season with salt. Top with the tomato wedges.
  • Cover and bake for about 45 minutes, or until 3 minutes after the aroma of a fully cooked meal escapes the oven. Fluff the quinoa with a fork when serving. Serve immediately.

2 cups quinoa
1 tablespoon olive oil
1/2 lb smoked kielbasa, sliced in 1/4-inch rounds (Use turkey kielbasa)
1 large onion, chopped

4 garlic cloves, peeled and chopped
1 cup vegetable juice, spicy
1 lb medium shrimp, peeled and deveined
1 cup frozen peas

I had been planning this recipe out in my head for a while and finally decided to prepare it. I had not used Quinoa before and it sure is a great little grain! My family loved the dish. The spicy sausage and the creole seasoning was a good match to the mild taste of the grain and the squash. My son even asked me to write down the recipe so he could share it with his girl friend.

3/4 cup central market organics quick cook grains quinoa
1 1/2 cups chicken broth
3 fresh calabaza squash
1/4 teaspoon sea salt
1 lb hot breakfast sausage
2 -3 roma tomatoes
2 -3 green onions
1 celery rib
1/2 teaspoon tony cachere's original creole seasoning
1/4 teaspoon black pepper
1/2 cup shredded colby-monterey jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • Prepare Quinoa: Combine Quinoa and broth in 2 quart pan. Bring to boil over high heat, reduce to low, cover and cook for 10 minutes. Remove from heat and let stand covered for 5 minutes. Fluff with fork. Make 2 cups cooked quinoa.
  • Brown sausage: Whle the Quinoa cooks you can brown the sausage in a frying pan until well done and crumbled. Drain off grease. Remove sausage temporarily to a different container. Save the pan to cook the veggies.
  • Prepare squash: For the squash, I chose Calabaza, abt 7" long. w/ a good width for scooping out. Slice each squash in half length-wise. Using a melon baller (or a spoon), scoop out the seeds and pulp from along the center and made a hole/channel to pile the stuffing into. Save about 1/2 cup of the scoops of squash pulp to go in the stuffing. Sprinkle the squash halves very lightly with the sea salt and set aside.
  • Prepare stuffing: Cut the tomato, onions and celery and the 1/2 cup of scooped squash into small pieces. Saute veggies over medium-low heat in the same pan that you browned the sausage with a tiny bit of the grease that you drained off. Season with the Tony Cachere's and black pepper. When veggies are tender, add in the cooked Quinoa and browned spicy sausage. Mix and warm it over low heat. Add the shredded cheese and fold in until melted. Remove from heat.
  • Stuff the squash: Fill the squash halves with spoonfuls of stuffing, trying to evenly divide amonst the squash. Press and shape to have a little dome of stuffing on each.
  • Bake: Arrange squash in a baking dish that can accomodate. Sprinkle a little Tony Cachere's across the squash. Fill bottom of dish with 1/4 inch water. Cover dish with foil. Bake covered for 30 minutes. Remove foil and fork test the squash, a fork should go into thick part of squash easily. Switch oven to broil setting and place uncovered under the broiler for about 5 minutes.
  • Serve.
