1 ⅓ cups white sugar
3 eggs
1 teaspoon vanilla extract
½ cup unsweetened cocoa powder
2 ¼ cups sifted all-purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
1 ¼ cups water
⅔ cup drained and chopped sauerkraut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch pans, round or square.
  • Thoroughly cream together butter and sugar. Beat in eggs and vanilla.
  • Sift together cocoa, flour, baking powder, soda, and salt, and add alternately with water to egg mixture. Stir in the sauerkraut. Pour batter into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes or until a wooden pick comes out clean. Frost with your favorite chocolate or white frosting.

FOR THE CAKE
2/3 cup butter; softened
1 1/2 cups white sugar
3 eggs
1 tsp vanilla extract
2 1/4 cups all purpose flour
1/2 cup cocoa
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup water
1 cup sauerkraut; drained and very finely chopped
FOR THE ERMINE FROSTING
5 tbsp flour
1 cup milk
1 cup white sugar
pinch of salt
1 tsp vanilla extract
1 cup butter; room temperature
1/2 cup cocoa
1/2 cup icing sugar (optional)
30 cocktail cherries
3/4 cup jelly (cherry, raspberry, etc)

Steps:

  • Pre-heat oven to 350 F. Prepare two 8 inch cake pans by greasing with butter and lightly dusting with flour. Line pan bottoms with parchment paper.
  • With a mixer, cream butter and sugar together until they become light and fluffy.
  • Add eggs one at a time and mix in completely between each addition. Add vanilla.
  • Sift dry ingredients over the wet ingredient bowl and mix to incorporate well, drizzling in the extra water.
  • When the batter is smooth and well mixed, add in chopped sauerkraut and mix in. Divide the batter evenly between the two pans and smooth the tops with a spatula, if needed.
  • Bake at 350 F for 25 minutes and test with a cake tester. If it comes out clean, then the cake is done. If not, bake for another 5 minutes.
  • Whisk flour, milk and granulated sugar in a small pot.
  • Heat and whisk over med-high heat until the mixture begins to bubble, then stir until it becomes thick and like a thick pudding.
  • Remove from heat and cover the surface of the mixture with plastic wrap. Let cool completely.
  • With a mixer, beat the butter until soft and whipped. Add salt and vanilla.
  • Gradually drop in the milk/flour mixture and incorporate into the butter well.
  • When all the milk/flour is incorporated, add the cocoa and combine.
  • Add 1/2 cup of icing sugar if you like the frosting a bit sweeter.

1 teaspoon vanilla extract
2 cups all-purpose flour
3/4 cup baking cocoa

1 cup sauerkraut, rinsed, drained, squeezed dry and finely chopped
2/3 cup sweetened shredded coconut
1/2 cup finely chopped pecans
FILLING/FROSTING:
2 cups semisweet chocolate chips, melted
2/3 cup mayonnaise
2/3 cup sweetened shredded coconut, divided
2/3 cup chopped pecans, divided

Steps:

  • In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine dry ingredients; add to the creamed mixture alternately with water. Fold in sauerkraut, coconut and pecans. Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 20-24 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks; cool completely. , In a bowl, combine melted chocolate and mayonnaise. Set aside 1-1/4 cups for frosting. To the remaining chocolate mixture, add half of the coconut and pecans; spread between cake layers. Spread reserved chocolate mixture over top and sides of cake. Combine remaining coconut and pecans; press onto sides of cake. Store in the refrigerator. Slice with a serrated knife.

3/4 pound (about 3 cups) fingerling potatoes, halved lengthwise
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 pound smoked kielbasa, cut on the bias into eight 2-inch long pieces
1 cup prepared sauerkraut
1/4 teaspoon caraway seeds

Steps:

  • Preheat the oven to 450 degrees F and line a rimmed baking sheet with parchment paper. Turn up four edges of a large piece of foil to make a rectangular tray (about 12 by 5 inches) for the sauerkraut; set aside
  • On one side of the baking sheet, toss the potatoes with 1 tablespoon of the olive oil, and sprinkle with some salt and pepper; spread the potatoes into an even layer. Place the kielbasa on the other side of the baking sheet, leaving an empty place in the center for the foil tray. Brush the kielbasa with the remaining olive oil. Roast until the kielbasa begins to brown in spots and the potatoes are almost completely tender, about 15 minutes.
  • Toss the sauerkraut with the caraway seeds and spread into an even layer in the prepared foil baking tray. Place the foil tray in the center of the baking sheet. Roast until the potatoes are completely tender and browned, the sauerkraut is warmed through and the kielbasa is browned in spots, 15 minutes more. Divide sausage and vegetables between two plates and enjoy.

1/2 cup chopped scallion greens

1/2 to 3/4 cup vegetable oil
1 pound smoked beef and pork kielbasa, cut crosswise into 1/2-inch slices

Steps:

  • Preheat oven to 250°F.
  • Pat sauerkraut dry between paper towels to remove as much moisture as possible, then transfer to a bowl and stir in eggs, flour, scallion greens, salt, and pepper until combined.
  • Heat 1/4 inch oil in a 12-inch heavy skillet over moderate heat until hot but not smoking. Fill a 1/4-cup measure three-fourths full with sauerkraut mixture, then turn out into oil, using a fork to release, and flatten to 3 1/2 inches in diameter with fork. 1/2 cup butter, softened
1-1/2 cups sugar
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
3/4 cup sauerkraut, drained, squeezed dry and chopped
SILK CHOCOLATE FROSTING:
1-1/3 cups butter, softened
4 ounces unsweetened chocolate, melted
1-1/2 teaspoons vanilla extract
4 cups confectioners' sugar
1/4 cup whole milk

Steps:

  • Preheat oven to 350°. In a bowl, cream the butter and sugar. Add 1 egg at a time, beating well after each. Add vanilla. Combine flour, cocoa, baking powder, baking soda and salt; add to the creamed mixture alternately with water. Stir in sauerkraut. Pour into 2 greased and floured 8-in. round baking pans. , Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely. , For frosting, beat butter, chocolate and vanilla in a bowl; add sugar and beat well. Add milk; beat until smooth and fluffy. Spread between layers and over top and sides of cake.

My mother-in-law had put this recipe in her 1950 Indiana Church Cookbook.I I have had the recipe since then, and have baked it many times. It is always liked by my family and friends. In 2007, The Spokane Review Newspaper was asking for unusual recipes to publish. I entered this recipe, and they published it Dec 23, 2007....

1/2 c butter...softened
1-1/2 c sugar
3 eggs
1 tsp vanilla
2 c flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 c cocoa
1 can(s) 8 oz, canned sauerkraut, drained & rinsed with water. drain again, and chop
1 c water

Steps:

  • 1. In a large bowl beat the sugar and eggs one at a time, beating together till light. Beat in the softened butter, and vanilla.
  • 2. In a second bowl add the flour, baking powder, baking soda, salt, and cocoa. Mix well. Add this to the above creamed mixture. Stir in cut up sauerkraut. Add the water and mix all together. Put in a 9x13 cake pan. Bake at 350 for 30-35 minutes. Let cool an a rack. I normally just sprinkle cooled cake with powdered sugar. I was so surprised to see that all of the sauerkraut cakes require at least 3 eggs. This cake does not require any eggs. I have been making this for many years and no one seems to get tired of it. I also serve with mocha whipped cream on special occasions. It is a heavy thick batter that needs to be spread in the pans. It has a wonderful taste and consistency.It was on a recipe card from the 60's and I have adapted over the years.Photo shown of cake with mocha cream cheese frosting. The cake is fat free without frosting. Do not overcook or the sides will be chewy.

1/2 cup butter or 1/2 cup margarine
1/2 cup Crisco shortening, butter flavored
1 1/2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cocoa powder
1 cup water
2/3 cup sauerkraut, drained, cut in small pieces
Pam cooking spray

Steps:

  • Cream sugar, butter,crisco and vanilla together in a large bowl.
  • Mix dry ingredients in a separate bowl.
  • Add dry ingredients and water alternately in small amounts and mix into the creamed mixture.
  • Add the cut sauerkraut and blend well.
  • Spray Pam in two round cake pans.
  • Preheat oven 350*.
  • Spread batter in the two pans.
  • Bake 30 minutes until edges come away from the sides of the pans and the top springs back when gently touched.
  • Cool in the pans on racks.
  • Frost the two layers with cream cheese frosting or whipped cream.
  • It is great with ice cream also.

  • Spoon half of the sauerkraut out of the can and into a sieve. Drain well, pat dry, and chop it up on a cutting board or better yet, in a mini chopper or food processor. Save the rest of the sauerkraut for something else.
