- Fry, boil or grill your sausage.
- Sauté onion and bell pepper with a dash of pepper flakes.
- ASSEMBLY----------.
- Place sausage on bun.
- Place sauté mixture on top.
- Place warm sauce on top. (warm for twenty seconds in microwave).

SAUCY ITALIAN SAUSAGES
Freezer friendly italian sausage recipe adapted from 30daygourmet. This sauce is so yummy with onions, green peppers and tomatos in it.

Steps:
- Saute onion and green pepper in olive oil and butter or both until tender.
- Add the rest of the ingredients except sausages and simmer on medium heat until thick.
- Cook sausages on grill or broil while sauce simmers.
- To freeze at this point: I have frozen sausages separate from sauce in separate freezer bags and I have mixed the sauce and sausages together and frozen as well. Personal perefence.
- If frozen, thaw and serve on buns.
- If eating now, you can cut sausages in thirds and mix with sauce if you like.
- You can place sauce and sausages in crockpot to keep warm until dinner.
- This is very good served with toasted buns with garlic salt on them.
- I hope you enjoy this as much as we do. The chili sauce is essential to the recipe and is found near the ketchup and cocktail sauce in the store.

GRILLED SAUSAGE WITH SPICY SAUCE
Steps:
- Soak 8 to 10 wooden skewers in water for about 20 minutes.
- Preheat a grill to medium and brush with the oil. Thread the sausage onto the skewers, leaving space between each piece. Grill until slightly crisp, 3 to 4 minutes per side.
- Mix the ketchup, mustard and hot sauce in a bowl. Serve with the sausage for dipping.
- Serve this dish with Tangy Corn Relish.
- Preheat a grill to medium-high. Brush the corn with 1 tablespoon olive oil and sprinkle with the cumin, and salt and pepper to taste. Grill until golden and toasted on all sides, 5 to 8 minutes, turning as needed.
- Combine the remaining 2 tablespoons oil, the sweet piquante peppers, onion, gherkins, parsley, jalapeno and sugar in a large bowl and season with salt and pepper. Slice the corn kernels off the cobs and toss with the relish. Cover and refrigerate for at least 30 minutes.

- Heat oven to 220C/200C fan/gas 7. Heat half the oil in a non-stick pan and soften the onion for 5 mins. Stir in the lentils, pour over the stock, then cover and simmer for 25 mins until the lentils are just cooked and most of the liquid has evaporated. If the lentils look dry before they've finished cooking, splash in a little water.
- Meanwhile, put the sausages in a small roasting tin, drizzle with the remaining oil and roast for 25 mins - adding the tomatoes with 8 mins to go and giving the tin a good shake. Season the lentils, then spoon onto plates and top with the sausages, tomatoes and any juices.

LASAGNA WITH SAUCY SAUSAGE, PEPPERS & ONIONS
DH loves his lasagna with meat and lots of sauce. So if you like it that way this ones for you! I've made this with uncooked noodles and cooked. You pick! I find the uncooked ones a bit starchy but it's quick and easy. If using cooked noodles you can cut back on the sauce. The uncooked noodles will absorb the sauce. But be sure to let it sit for 15 minutes before cutting into it. I use a deep pan so it doesn't flow over.

Steps:
- Cook sausage, onion, peppers, and garlic in a pan over medium heat till it is no longer pink and veggies are tender.
- Drain fat.
- Add sauce to sausage mixture.
- Mix ricotta cheese, 3 cups mozzarella cheese, 1/4 cup grated parmesan cheese, eggs and parsley.
- Spread 1 cup of sauce on bottom of a 13x9x3 pan.
- Top with 4 noodles.
- Spread 1/3 of cheese mixture on noodles follow with 1/3 sausage mixture repeat 2 more times.
- Mix remaining 1 cup mozzarella and Parmesan cheese.
- Sprinkle the cheese mixture on top.
- Place foil on a cookie sheet and place lasagna on foil loosely cover with additional foil and bake for 30-40 minutes at 350 degrees.
- Uncover and bake for 15 more minutes.
- Remove and let set for 15 minutes before slicing.

SAUSAGE PASTA
Tomato, onion and garlic pasta sauce with sausage chunks for a bit of substance - brilliant for students (and as a hangover cure)

Steps:
- Put a large pan of water on to boil.
- Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
- Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
- Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
- Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
- Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.
