Recipe video above. This is my copycat of McDonald's Sausage and Egg McMuffin. The sausage patties are made from scratch and it really does taste similar to the McDonald's Sausage patty - but it tastes pure, like real food should! Great make ahead breakfast - grab and run!

1 lb / 500g ground pork ((juicier) OR beef (mince) (Note 1))
1/2 tsp dried ground sage
1/2 tsp dried thyme
1 tsp onion powder ((or garlic powder))
3/4 tsp black pepper
3/4 tsp salt
1/2 tsp sugar ((any))
2 tbsp oil
4 eggs
4 English muffins (, cut in half)
4 slices cheese ((Note 3))

Steps:

  • Preheat oven to 130C/275F.
  • Place muffins on a baking tray, cut side up, and top with cheese. (Alternative - melt cheese on sausage patties, see video)

1 pound ground pork (not lean)
1 tablespoon packed brown sugar
4 teaspoons finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
1/2 teaspoon ground ginger
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil

Steps:

  • Mix the pork, brown sugar, sage, thyme, ginger, cayenne, 1 1/2 teaspoons salt, 1 teaspoon black pepper and 2 tablespoons water in a large bowl. Form into 2-inch patties; transfer to a baking sheet, cover and refrigerate at least 1 hour or overnight.
  • Preheat the oven to 300 degrees F. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat; add half the sausage patties and cook, flipping once, until browned, about 5 minutes. Transfer to a baking sheet. Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining patties. Transfer the patties to the oven and bake until cooked through, 3 to 5 minutes.

1 can (8 ounces) tomato sauce
1/4 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon garlic powder
1 pound bulk Italian sausage
1 medium onion, thinly sliced and separated into rings
8 slices part-skim mozzarella cheese
8 slices French bread (3/4 inch thick)
1/4 to 1/2 cup butter, softened

Steps:

  • In a saucepan, combine the tomato sauce, basil, pepper flakes and garlic powder. Bring to a boil over medium heat. Reduce heat; simmer for 15 minutes. , Meanwhile, shape sausage into four thin oval patties. In a skillet over medium heat, cook patties until no longer pink; remove and keep warm. , In the drippings, saute onion until tender. Place a slice of cheese on four slices of bread; layer each with a sausage patty, onion and remaining cheese. Top with remaining bread. Butter the outsides of sandwiches. , On a griddle or in a large skillet, toast over medium heat until both sides are golden brown and cheese is melted. Serve with herbed tomato sauce for dipping.

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

1 slice bacon, thinly sliced*
2 tablespoons vegetable oil
1/2 small onion, finely chopped
3 cloves garlic, minced
2 tablespoons plain dried bread crumbs
2 teaspoons brown sugar
3/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces 72% lean ground pork
1 egg yolk
1 tablespoon water

Steps:

  • In a small saute pan, cook the bacon over medium heat until rendered but not crispy, about 3 minutes. Add 1 tablespoon vegetable oil and onions, and cook until the onions are soft and begin to turn golden in color, about 3 more minutes. Add the minced garlic and cook an additional 1 minute, or until fragrant. Remove the pan from the heat, and set aside.
  • In a medium bowl, use a fork to mix together the bread crumbs, brown sugar, thyme, cayenne pepper, and salt, and pepper. Add the ground pork, egg yolk, and bacon and onion mixture to the bread crumbs, and gently mix with your hands until just combined. Do not over mix. Divide the mixture into 8 even portions and form into patties, pressing a small thumb indentation in the middle of each so they stay flat when they cook. In a large saute pan, heat 1 tablespoon vegetable oil over medium-high heat. Add the sausage patties and brown on both sides, about 2 minutes per side. Add a tablespoon of water and cover the pan for 3 minutes, or until the sausage is fully cooked. Serve hot.

I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

2 tablespoons extra-virgin olive oil, plus some for drizzling
1 red bell pepper, finely chopped
1 large onion, chopped and divided
2 ribs celery, chopped
1 cup shredded carrots
Salt and pepper, for seasoning, plus coarse black pepper for finishing sauce
1/2 pound ground beef
3/4 pound bulk hot sausage
3/4 pound ground sweet sausage
1 egg
3/4 cup bread crumbs, 3 generous handfuls, Italian or plain
1/2 cup grated Parmigiano or Romano, a couple of handfuls
1/8 pound pancetta, 4 slices, chopped
3 cloves garlic, chopped
Splash red wine
1/2 cup beef stock
1 can petite diced tomatoes or stewed tomatoes
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
Serving suggestion: green salad

Steps:

  • Preheat oven to 425 degrees F.
  • Heat a small skillet over medium heat with 2 tablespoons extra-virgin olive oil. When the oil is hot, saute the red pepper, half the onions, celery and carrots together, 5 minutes, season with salt and pepper then remove to a plate to cool.
  • Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
  • Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.
  • Serve meatloaves with Italian barbecue sauce on top and green salad alongside.
