- Place the potatoes in a large pot and add enough cold water to cover. Bring to a boil and add 2 teaspoons salt. Reduce heat and simmer until very tender, 20 to 25 minutes. Drain the potatoes and return them to the pot.
- Meanwhile, heat oven to 325°F. In a small bowl, combine the coconut, brown sugar, pecans, and ½ teaspoon salt.
- Add the granulated sugar, milk, butter, eggs, vanilla, and ½ teaspoon salt to the potatoes and mash until smooth.
- Transfer the mixture to an 8-inch square or another shallow 2-quart baking dish and sprinkle with the coconut mixture. Bake until heated through (tent loosely with foil if the top browns too quickly), 30 to 35 minutes.

- Preheat oven to 400 degrees.
- Prick the sweet potatoes with a fork and roast them on a foil lined pan for 1 hour and 15 minutes.
- Once they are cool enough to handle , peel.
- Puree the peeled potatoes in the large bowl of a food processor until very smooth.
- Add the rest of the ingredients and blend well.
- Pour into a buttered 2 quart casserole dish and bake in a 350 degree oven for 40 minutes.
- Prepare the topping while the casserole is baking.
- Peel the plantain and run them through the grater attachment on the food processor.
- Add plantain shreds into a bowl with the ginger, salt, pepper and sugar. Mix lightly with a spoon.
- Heat the canola oil in a skillet until it is hot but not smoking.
- Drop plantain mixture by tablespoons into hot oil.
- Fry about three minutes on each side. (reduce heat if they start to over brown).
- Remove to paper towel lined platter to cool.
- Once cool, crumble the plantain.
- Combine the coconut with the plantain.
- Once the sweet potato mixture has baked for 40 minutes, add the plantain mixture to the top and lightly pat. Bake another 10 minutes.

- Sift together flour, baking powder, and salt Combine milk and buttermilk With mixer running, add flour and liquid to the butter mixture alternately in thirds, scraping down the sides of the bowl after each addition Add the 1/2 cup coconut and sweet potato and mix well.

- Bake in a preheated 350-degree oven for 25 minutes or until springy to the touch Turn cakes out onto cooling rack and allow to cool at room temperature.
- Frosting.
- Whisk sugar and water together, dissolving sugar completely Place on high heat and allow to come to rapid boil.
- While water is boiling, whip egg whites on high speed When egg whites are stiff but not dry, add vanilla and sal. Remove boiling sugar water from heat and pour into egg whites in a slow, thin steam Continue whipping until mixture reaches room temperature This will take 8-10 minutes Add corn syrup and continue whiping on high speed until icing reaches spreading consistency.
- When cake layers reach room temperature, frost and assemble cake. Sprinkle ouside of frosted cake with coconut, covering it completely.

- Bring large pot of water to a boil over high heat. Add sweet potatoes. Return to boiling. Cook until soft, about 10 minutes. Drain and put in a large bowl.
