I made this baked shrimp recipe as a simple skillet dinner but if you'd prefer to serve it at the table, simply transfer it to a baking dish suitable to serve at the table rather than using the skillet.

1 pound large (, peeled and deveined shrimp (I like the Key West Pinks))
1/2 teaspoon red pepper flakes
1/4 teaspoon kosher salt
3 tablespoons olive oil
1 medium onion (, chopped)
3 garlic cloves (, pressed or minced)
1 15- ounce can crushed tomatoes
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 cup crumbled feta cheese
2 tablespoons chopped fresh dill

Steps:

  • Preheat the oven to 375°F.
  • Rinse and pat the shrimp dry and place in a bowl. Season with the red pepper flakes and kosher salt and set aside.
  • Drizzle the olive oil in a heavy skillet and heat over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the spices and cook for about 30 seconds. Add the tomatoes and simmer, uncovered, for about 20 minutes, stirring occasionally.
  • Remove from the heat and place the shrimp into the tomato sauce and crumble the feta cheese over the top. Bake for 15-18 minutes or until the shrimp are cooked through.
  • Sprinkle with the dill and serve with crusty bread for dipping up the awesomesauce.

1 medium onion, chopped
2 garlic cloves, finely chopped
3 tablespoon extra-virgin olive oil
1/2 teaspoon hot red-pepper flakes
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 (28-ounce) can whole tomatoes in juice, drained, reserving juice, and chopped
Pinch of sugar
1 1/4 pound large peeled and deveined shrimp
1/4 pound feta, crumbled (2/3 cup)
2 tablespoons chopped dill
Accompaniments: crusty bread or steamed white rice; a green salad

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Cook onion and garlic in oil with 1/4 teaspoon salt in a 4-quart heavy saucepan over medium heat until softened, about 5 minutes. Stir in spices and cook, stirring, 30 seconds. Add chopped tomatoes with juice and sugar and simmer, uncovered, stirring occasionally, until slightly thickened, about 20 minutes. Remove from heat.
  • Season shrimp with 1/8 teaspoon salt, then stir into tomato sauce. Transfer to a 2-quart shallow baking dish and top with feta. Bake until just cooked through, 18 to 20 minutes. Serve sprinkled with dill.

24 large shrimp, cleaned and deveined
1/2 cup olive oil
1 tablespoon chopped fresh oregano
1 tablespoon minced garlic
1 cup fish broth
1/2 cup finely chopped tomatoes
2 eggs
1/3 cup lemon juice
1 teaspoon crushed red pepper
Salt and freshly ground black pepper
2 tablespoons chopped fresh parsley
6 wooden skewers, soaked in hot water for 30 minutes

Steps:

  • Marinate the shrimp in the olive oil, oregano, and garlic 30 minutes
  • Preheat a grill. Preheat an oven to 450 degrees F.
  • Slide 4 shrimp onto each skewer. Place on a hot grill and mark on both sides quickly, not cooking them through. Put them in a baking dish and pour the fish broth over the shrimp with the tomatoes and place in the oven for about 4 minutes.
  • Remove from the oven, take the shrimp out of the baking dish, and place on a platter.
  • In a bowl whisk together the eggs and lemon juice. Slowly pour in the fish broth with the tomatoes and incorporate it until foamy. Season with salt and pepper. Pour it over the shrimp and sprinkle with parsley. Serve warm, as an appetizer.

My sister and I originally ate this dish at a restaurant in Santorini, Greece and went back 3 days in a row to order it again and analyze the ingredients so we could replicate it at home. It is easy to prepare ahead of time and stick in the oven so your cooking is complete before guests arrive! Serve over rice.

¼ cup butter
2 tablespoons garlic, minced
1 bunch flat-leaf parsley, chopped
2 pints grape tomatoes, halved
½ (750 milliliter) bottle dry white wine
2 pounds peeled and deveined medium shrimp
1 (4 ounce) container crumbled feta cheese
2 lemons, halved
2 sprigs fresh flat-leaf parsley

Steps:

  • Melt the butter in a saucepan over medium heat. Stir in the garlic, chopped parsley, tomatoes, and wine. Bring to a simmer, then reduce heat to medium-low, and cook for 1 hour, stirring occasionally, until the sauce has slightly thickened.
  • Preheat oven to 250 degrees F (120 degrees C).
  • Stir the shrimp into the tomato sauce, and cook for 2 minutes; remove from the heat. Pour the shrimp mixture into a shallow baking dish, and sprinkle with crumbled feta cheese. Bake in the preheated oven until the feta has softened and the shrimp are no longer translucent, 45 minutes to 1 hour. Squeeze the lemon halves over the shrimp and garnish with the parsley sprigs to serve.

2 lbs large shrimp, uncooked
1 medium sized onion, finely chopped
2 teaspoons extra virgin olive oil
1 cup chopped green onion
2 cloves garlic, crushed
2 cups diced peeled tomatoes
1/2 cup dry white wine or 1/2 cup non-alcoholic wine
1/4 cup chopped flat leaf parsley
1/2 teaspoon dried oregano
salt
pepper
4 ounces fat-free feta cheese

Steps:

  • Preheat oven to 450 degrees.
  • Remove shells from shrimp, leaving last segment and tail intact; remove vein.
  • Rinse and dry.
  • In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
  • To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
  • Reduce heat, cover and simmer for 30 minutes until thickened.
  • Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
  • Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.
  • Bake at 450 degrees for 10-12 minutes or until prawns are pink and feta is lightly browned.
  • Garnish with remaining parsley and serve.
