YAKINIKU SAUCE FOR GRILLED MEAT
Steps:
- Gather the ingredients.
- Peel and chop garlic clove.
- In a small saucepan, combine soy sauce, mirin, sugar, sesame oil, and garlic.
- Heat over medium to high heat until sugar dissolves-about 3 minutes. Stir constantly to help dissolve sugar and prevent burning. Allow sauce to cool for about 5 to 10 minutes.
- Using a strainer, pour sauce into a small bowl to separate garlic pieces. Discard garlic.
- Add ground roasted white sesame seeds and whole roasted sesame seeds to the strained sauce. Mix gently.
- The yakiniku sauce is now ready to use. Use to dip meats and vegetables, or as a sauce to pour over meat.

SAUCE ESSENTIALS: JAPANESE BBQ SAUCE
This is a variation on a Japanese style BBQ sauce. It is relatively simple to construct, and is excellent for a dish called Tonkatsu (Japanese breaded pork). If you are looking for something a bit different than a traditional "American" BBQ Sauce, I have discovered that it works well on conventional pork and/or beef dishes. So, you ready... - Gather your Ingredients (mise en place).
- Add all the ingredients to a saucepan over medium heat.
- Whisk until thoroughly combined, as it comes up to a simmer.
- Allow to lightly simmer for five minutes.
- Remove from heat and allow to completely cool.
- Place in a sealed container in the fridge, until ready for use.
- Chef's Note: This sauce will keep in the fridge for 4 - 6 weeks.
- PLATE/PRESENT
- Use as you would any BBQ sauce, when you want something a bit different. Enjoy.

SAUCE ESSENTIALS: ASIAN-STYLE BBQ SAUCE
Working on a sauce to serve with tonkatsu (Japanese breaded fried pork), and this is what I came up with. It has tart and sweet notes that go perfectly with pork; especially pork that had been breaded and fried. Still working on the tonkatsu, but this is the sauce I will be using. This recipe works with fried pork, but I think it would be great with chicken and/or beef. Truth be told, there actually is a tonkatsu sauce; however, since I took liberties with this recipe, I decided to just call it Asian. So, you ready... Let's get into the kitchen.
