YAKINIKU SAUCE FOR GRILLED MEAT



Yakiniku Sauce for Grilled Meat image

Yakiniku sauce is a Japanese sauce with a mixture of savory and sweet flavors that is used to season grilled or sautéed meats and vegetables.

Number Of Ingredients 7

1 clove garlic
1/4 cup soy sauce
2 tablespoons mirin
2 1/2 tablespoons granulated white sugar
2 teaspoons sesame oil
1 1/2 teaspoons white sesame seeds (ground roasted)
1/2 teaspoon white sesame seeds (whole roasted)

Steps:

  • Gather the ingredients.
  • Peel and chop garlic clove.
  • In a small saucepan, combine soy sauce, mirin, sugar, sesame oil, and garlic.
  • Heat over medium to high heat until sugar dissolves-about 3 minutes. Stir constantly to help dissolve sugar and prevent burning. Allow sauce to cool for about 5 to 10 minutes.
  • Using a strainer, pour sauce into a small bowl to separate garlic pieces. Discard garlic.
  • Add ground roasted white sesame seeds and whole roasted sesame seeds to the strained sauce. Mix gently.
  • The yakiniku sauce is now ready to use. Use to dip meats and vegetables, or as a sauce to pour over meat.

This is a variation on a Japanese style BBQ sauce. It is relatively simple to construct, and is excellent for a dish called Tonkatsu (Japanese breaded pork). If you are looking for something a bit different than a traditional "American" BBQ Sauce, I have discovered that it works well on conventional pork and/or beef dishes. So, you ready... Let's get into the kitchen

1/3 cup(s) ketchup, i prefer homemade
2 tablespoon(s) worcestershire sauce, i prefer homemade
1 tablespoon(s) sake, unflavored
1 tablespoon(s) coconut sugar, light variety
1 tablespoon(s) tamari sauce, or liquid aminos
1 teaspoon(s) dijon mustard, i prefer grey poupon
1 pinch(es) crushed red pepper flakes, or to taste

  • Gather your Ingredients (mise en place).
  • Add all the ingredients to a saucepan over medium heat.
  • Whisk until thoroughly combined, as it comes up to a simmer.
  • Allow to lightly simmer for five minutes.
  • Remove from heat and allow to completely cool.
  • Place in a sealed container in the fridge, until ready for use.
  • Chef's Note: This sauce will keep in the fridge for 4 - 6 weeks.
  • PLATE/PRESENT
  • Use as you would any BBQ sauce, when you want something a bit different. Enjoy.

Working on a sauce to serve with tonkatsu (Japanese breaded fried pork), and this is what I came up with. It has tart and sweet notes that go perfectly with pork; especially pork that had been breaded and fried. Still working on the tonkatsu, but this is the sauce I will be using. This recipe works with fried pork, but I think it would be great with chicken and/or beef. Truth be told, there actually is a tonkatsu sauce; however, since I took liberties with this recipe, I decided to just call it Asian. So, you ready... Let's get into the kitchen.
